Steps:
- Mix paprika, cumin, black pepper, cayenne pepper, sage, and garlic salt on a plate. Liberally coat each pork chop with the spice mixture.
- Heat olive oil and several pumps of non-stick, butter-flavored spray in a large skillet over high heat. Place pork chops in the skillet, reducing heat to medium. Cook until the pork is no longer pink in the center, 8 to 10 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

QUICK CHOPS
Went looking for something to marinate my pork chops in and came up short. Went back to Mom's old standby that we all love. Enjoy! My brother prefers pineapple/orange juice...go figure!

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish.
- In a bowl, mix the orange juice, Dijon mustard, and brown sugar. Place the pork chops in the prepared baking dish, and pour orange juice mixture over chops.
- Bake 20 minutes in the preheated oven, to a minimum internal temperature of 145 degrees F (63 degrees C).
- Pour the remaining marinade liquid into a skillet, and cook over medium-high heat until reduced by about 1/2. Pour over the cooked chops to serve.

JUICY PORK CHOPS
This is he most moist pork chops you will ever have! Even my three boys ages 7 and under eat them all up. It is so easy and actually so healthy. Great served with some rice, noodles or any vegetables.

- In a large resealable bag, mix together the soy sauce, minced garlic, and pepper. Place the pork chops into the bag, squeeze out most of the air, seal, and marinate for 12 hours in the refrigerator. Turn the bag over about halfway through.
- Preheat the oven's broiler. Place the pork chops onto a broiling pan. Broil for 5 minutes per side, or to your desired doneness. Time will be different depending on the thickness of your chops.

BRO'S "CAJUN" STUFFED PORK CHOPS

- On a flat surface, use a sharp knife to make a pocket inside each of the pork chops. In a mixing bowl, combine the ground pork, salt, cayenne, granulated garlic, black pepper, paprika, and green onions; mix well. Divide the pork mixture into 4 equal amounts and overstuff the mixture into the pocket of each pork chop. Mix all the rub ingredients together in a small bowl. Season each pork chop with the rub. Cover and refrigerate overnight to let the seasoning infuse into the chops. Preheat a grill or BBQ pit to 375 degrees F. Put the stuffed chops on the grill or BBQ pit. After 30 minutes, turn the pork chops over. After an additional 15 minutes, turn each pork chop over and begin basting each side with BBQ sauce. Grill until a pretty glaze forms and the internal temperature registers 170 degrees F on an instant-read thermometer. Serve the pork chops on top of dirty rice, with red beans and tasso, praline yams and cornbread, if desired.

- combine the onion, celery, bell pepper, tomatoes, pepper, basil, thyme, tarragon and cayenne in a large saucepan or dutch oven and cook, covered over low heat for 20 minutes, stirring occasionally.
- while the vegetable mixture is cooking, cook the pork chops in wine in a large, nonstick skillet over medium heat, browning on both sides. Cover and cook about 10 minutes.
- uncover and cook over high heat till most of the wine is absorbed, about 3 minutes.
- add the cream-style corn and the corn kernels to the vegetable mixture and mix well.
- bury the browned pork chops in the mixture and add any liquid still in the pork pan.
- simmer, covered, over low heat for 15 minutes to allow the flavors to blend.
- to serve, place 1 pork chop on each of four plates or shallow bowls and spoon 1 cup of the corn mixture over the top.

EASY BAKED CAJUN PORK CHOPS
Now to be honest, if you want to do these right you should check out the Paul Prudhomme recipe I've also posted. But... I make them this way when I'm low on time or energy and I think they are pretty good! They are baked instead of fried which is healthier but also means you aren't tied to the stove. Sometimes I leave out the tomatoes and serve with spanish rice instead. Cooking time is a guess. My oven cooks fast so I'm never sure what to tell people!
