Tenderize your beef shish kabobs with this fragrant red wine marinade with a hint of rosemary. Add your favorite vegetables and you're in for an easy and memorable meal!

1 cup Red wine (we used Merlot)
3/4 cup olive oil
1 Tablespoon lemon juice
1 teaspoon salt
1 teaspoon pepper
3-5 garlic cloves (pressed or minced)
1 Tablespoon fresh rosemary (chopped; 1 teaspoon dried)
2 pounds sirloin steak fillets (cut into 1 1/2 inch cubes)
2 green peppers (cut into 8 pieces)
1 white onion (quartered)
24 cherry tomatoes
8-10 skewers (soak wooden skewers in water for 30 minutes before using)

Steps:

  • Mix marinade ingredients together and pour into a large bag that seals or a flat container.
  • Add beef to bag and marinate for at least 2 hours and up to 24 hours.
  • Remove beef from marinade, discarding excess marinade.
  • Assemble shish kabobs by alternating meat cubes and vegetables on a skewer. 3 pieces of meat fit nicely on a 12 inch skewer.
  • Grill over medium heat for about 3 minutes on each side. Use an oven mitt to turn the skewers.

1½ lb sirloin steak, trimmed and cut into 1" cubes
½ cup red wine
2 tbs soy sauce or tamari
2 tbs olive oil
½ tsp thyme leaves, dried or fresh
1 lb white mushrooms
salt and pepper

Steps:

  • Mix together the red wine, soy sauce, thyme and olive oil. Add the beef and leave to marinate for at least 3 hours.
  • Soak wooden skewers in water for at least 30 minutes.
  • Thread the beef and mushrooms onto the skewers, and discard any remaining marinade.
  • Cook on a grill or broiler until steak is cooked to your preference, and season with salt and pepper before serving.

1/2 cup soy sauce
1/4 cup vegetable oil
3 tablespoons prepared horseradish
2 tablespoons rice wine vinegar
1 tablespoon grated fresh ginger
1 tablespoon honey
1 pound sirloin, cut into 1-inch cubes
6 scallions
Nonstick cooking spray, for the grill
1/2 cup mayonnaise
2 tablespoons prepared horseradish
1/2 teaspoon hot sauce
1/2 teaspoon Worcestershire sauce
1/4 teaspoon kosher salt
1/4 teaspoon ground ginger

Steps:

  • For the steak skewers: Assemble the marinade by combining the soy sauce, vegetable oil, horseradish, rice wine vinegar, ginger and honey in a bowl. Put the sirloin in a large ziptop bag and pour the marinade over the meat. Gently massage the meat and place in the refrigerator for a minimum of 1 hour.
  • In the meantime, prepare for the skewer assembly. Put the wooden skewers in a shallow bowl of water and soak for 1 hour. This will prevent burning on the grill. Discard the water after soaking.
  • Prep the scallions by slicing the white and light green parts into 1-inch pieces. Set aside for the skewers. Then, slice the dark green tops and set aside for the sauce.
  • For the horseradish sauce. In a mixing bowl, combine the mayonnaise, horseradish, hot sauce and Worcestershire. Stir in the salt, ginger and reserved scallion tops. This can be stored in an airtight container in the refrigerator. When ready to serve, pour the horseradish sauce in a small bowl and garnish with a few more pieces of scallions on top.
  • Preheat a grill or grill pan over medium-high heat. Spray with nonstick cooking spray.
  • Slide 4 to 5 cubes of beef onto each skewer, alternating with pieces of scallion (discard the marinade). Grill until browned and crispy, 3 to 4 minutes on each side. Serve warm alongside the horseradish sauce for dipping.

2 cups red wine
½ cup steak sauce (e.g. A-1)
3 oranges, sliced into rounds
1 bunch green onions, sliced
4 small red chile peppers, seeded and finely chopped
4 large cloves garlic, minced
1 ½ teaspoons ground ginger
salt and pepper, to taste
3 pounds beef sirloin steak, boneless, cut across the grain into 1/4 inch strips

Steps:

  • Combine the red wine and steak sauce in a large bowl. Stir in the orange slices, green onions, chile peppers, garlic, and ginger. Season with salt and pepper to taste.
  • Place steak strips in a shallow dish and pour marinade over meat. Cover, and refrigerate 8 hours.
  • Preheat an outdoor grill for high heat and lightly oil grate. Set grate 4 inches from heat. Soak wooden or bamboo skewers in water for 30 minutes to prevent them from burning.
  • Remove steak from marinade, and discard; thread meat onto skewers. Arrange skewers on prepared grill, and cook until meat is no longer pink and juices run clear, 7 to 10 minutes.

Steps:

  • In zip-top plastic bag, combine first 6 ingredients; mix well.
