I have amp'd up the flavor from the classic tomato and onion recipe we are all used to.

Number Of Ingredients 12

6 - cube steaks
1 large onion
1 cup(s) flour
3 cup(s) beef broth
1 can(s) tomato paste
1 can(s) diced tomatoes 28 oz can
3 - cloves of garlic minced
2 teaspoon(s) salt
2 teaspoon(s) pepper
2 teaspoon(s) garlic powder
1 package(s) onion soup mix
1/2 cup(s) olive oil

Steps:

  • mix salt, pepper and garlic powder together and season the cube steaks. Dredge in flour and place in heated skillet with oil. brown on both side and remove.
  • add onion and garlic to skillet and cook briefly then add tomatoes, beef broth, onion soup mix and tomato paste. bring to a simmer and add cube steaks back to the sauce. reduce heat, cover and simmer for 1 to 1 1/2 hours. stir occasionally
  • Serve with mashed potatoes or rice.

I don't remember where this recipe originally came from, but it's been a keeper. It's easy to do and is delicious! Hope y'all enjoy it!

1/2 c all purpose flour
1 Tbsp dry mustard
1 1/2 lb round steak, cut 1-inch thick
2 Tbsp vegetable oil or bacon drippings
1 can(s) diced tomatoes (14.5 ounce)
1 medium onion, peeled and quartered
1/2 c celery, diced
2 or 3 medium carrots, peeled and diced
2 Tbsp worcestershire sauce
1 Tbsp brown sugar, firmly packed
salt and pepper to taste

Steps:

  • 1. Mix flour and mustard. Dredge steak in flour mixture and pound in with a cleated meat mallet. Cut pounded steak into serving size pieces.
  • 2. Heat oil in heavy frying pan over medium-high heat. Add meat and brown on both sides. Transfer to crock pot.
  • 3. Add tomatoes with liquid, onions, celery, carrots, Worcestershire and sugar to meat. Season to taste with salt and pepper. Cover and cook on high for about 3 to 4 hours or until meat is tender. Serve with rice or potatoes and your favorite veggies.
  • 4. NOTE: You may also do this in the oven. Once meat has been browned, place in a shallow baking dish, add tomatoes and remaining ingredients, salt & pepper to taste. Cover and bake at 350 degrees for about 1 1/2 to 2 hours or until meat is tender when pierced.

Hardy and delicious, this is a fantastic weeknight meal. The cube steak is tender from frying and simmering in the rich and savory gravy. The mushrooms and onions take on the flavor of the brown tomato gravy. Served over a bed of rice, everything comes together perfectly.

1 lb cube steak
1 medium onion, sliced
4 to 6 mushrooms, fresh
1/2 c all-purpose flour
1/2 c Panko bread crumbs
1/2 tsp salt
1/2 tsp ground pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp Season-All (optional)
1/2 tsp taco seasoning mix (optional)
2 Tbsp cooking oil
1 Tbsp butter
1 tsp garlic, minced
2 Tbsp all-purpose flour
1 pkg dry onion soup mix
1 Tbsp Worcestershire sauce
2 Tbsp tomato paste
2 c water or beef broth
1/4 c dry red wine
salt and pepper, to taste (for beef)

Steps:

  • 1. Pre-heat oil and butter in heavy skillet on medium to med-high heat. While heating, slice an onion and cut mushrooms into quarters.
  • 2. Slightly pound the cube steaks. One pound of cube steak should equal 4 portions of the beef. If not, cut the steaks to make 4 servings. Salt and pepper to taste.
  • 3. Mix together the flour, Panko, and seasonings (NOTE: instead of Season All seasoning, we use Bucks Multi-Purpose Seasoning, which is a great seasoning for many foods).
  • 4. Dredge the cube steaks in the flour mixture and place in the heated skillet. Cook approximately 3 minutes on each side then remove from the skillet.
  • 5. Add onions and mushrooms to the skillet. Saute for approximately 4 to 5 minutes until onions are translucent.
  • 6. Add 2 tbsp of flour to the pan and stir until incorporated into the onions and mushrooms. Add the wine and stir to incorporate pan drippings. Then add the water, package of dry onion soup mix, Worcestershire sauce, and 2 tbsp tomato paste.
  • 7. Return the cooked cube steaks to the gravy mixture. Place lid on pan and cook on low heat for 10 to 15 minutes until desired doneness. Serve over rice or with mashed potatoes and a vegetable of choice.

Have you ever had cube steak (or round steak) sitting in your freezer and had absolutely no idea how you were going to prepare it differently than usual? This was my dilemma until I came across this recipe by Marilyn Moll of Urban Homemaker in a cookbook my friend Shannon kindly printed off for me. Marilyn describes it best: "Vegetables thicken the sauce-like gravy which smothers fork-tender steak." It is important to peel and grate your carrots and finely chop your onion and celery for the gravy to form properly. I also tend to double the amount of flour/mustard mixture that I dredge my round or cube steaks in to be sure that they are well coated. I serve this with cheddar and roasted garlic mashed potatoes.

1 1/2 lbs round steaks, approx. 1-inch thick (or cube steak as I use)
2 carrots, peeled and grated
2 celery ribs, finely chopped
1 onion, finely chopped
1/4 cup flour
2 teaspoons dry mustard
16 ounces canned diced tomatoes
salt and pepper, to taste
2 tablespoons Worcestershire sauce
2 tablespoons butter
2 tablespoons oil
2 teaspoons brown sugar (or sucanat)

Steps:

  • Cut round steak or cube steak into 6 or more serving size pieces.
  • Salt and pepper steak pieces.
  • Combine flour and dried mustard; then coat steak pieces with flour mixture.
  • Using a large frying pan, brown the meat in 1 tablespoon of oil and 1 tablespoon of butter.
  • Transfer to a crock pot.
  • Heat remaining oil and butter in the same frying pan.
  • Add onion, carrots, and celery. Saute until vegetables are glazed.
  • Add tomatoes, Worcestershire, and sugar. Heat, scraping up drippings from bottom of pan.
  • Pour vegetable mixture over the meat in the crock pot.
  • Cover and cook on low for 6-8 hours, or until tender.
  • Serve meat with vegetable sauce over top. Sprinkle with chopped parsley as garnish, if desired.
  • Note: I won't claim that this is the most beautiful looking dish in the world but even the kids loved it once they got past their initial wrinkled nose inspections. It sure does smell good while cooking though.

  • brown both sides,about 3min on each side.
  • add to sauce,simmer for 45min to 1hour.
  • until steak is tender.
  • use any rice you like,minute rice is easy and fast.

  • Prep Beef: Trim any excess fat from beef, and cut into round slices about 1/2 inch thick. Pat dry with paper towels. Stir together all dry seasonings in small bowl until well-mixed. Add sliced beef and dry seasonings to resealable bag, and toss until beef is well-coated.
  • Brown Beef: Heat olive oil in dutch oven or pot (Note 2) over medium to medium-high heat for a few minutes until hot. Working in two batches, add beef slices in single layer and brown for about a minute, flip and brown other side, then transfer to large bowl.
  • Add Vegetables: Add onions, carrots, celery, and garlic to now-empty pot. Cook for a few minutes until aromatic, stirring frequently. Add diced tomatoes (including liquid in can), Worcestershire sauce, and 2/3 cup water. Stir together until well-mixed. Return beef slices and any bowl drippings to pot, snugly arranging beef on top of vegetables. Evenly distribute mushrooms on top.
  • Slow Cook: Cover with tightly fitting lid. Cook over medium-low heat for 2 hours, or until beef is very tender and nearly falling apart.
