Steps:
- Place chicken breast on a large sheet of waxed or plastic; cover with another sheet; pound chicken breast to 1/4 inch thickness, remove the top sheet and season with salt and pepper.
- Combine the goat cheese, lemon rind, and apple; divide the apple mixture among the chicken breast and spread the mixture evenly over half the surface of each breast; fold each breast in half and press the edges together, forming a pocket.
- Sprinkle the flour onto a sheet of waxed paper.
- In a small bowl combine the egg and water; In a shallow bowl, combine the bread crumbs and Parmesan cheese.
- Dust each chicken breast lightly with flour and dip into egg mixture, moistening all surfaces.
- Coat with bread crumb mixture, patting the crumbs gently in place. (The chicken can be prepared to this point several hours ahead; cover and refrigerate, when ready to cook, bring the chicken to room temperature).
- In a large, heavy skillet, heat butter and oil over medium heat; Add chicken; cook until browned and cooked through, about 8 to 10 minutes per side, drain on paper towels and serve.

- Preheat the oven to 375 degrees.
- Place the chicken breasts on a baking sheet. Loosen the skin from the meat with your fingers, leaving one side attached.. Cut 12 thick slices of the Montrachet and place 2 slices plus a large basil leaf under the skin of each chicken breast. Rub each piece with olive oil and sprinkle generously with salt and pepper. Bake the breasts for 35 to 40 minutes, until just cooked through. Serve hot or at room temperature.

- Heat butter in a skillet over medium-high heat. Add chicken and brown each side for a few minutes. Add apple juice, chicken bouillon, and apples. Season to taste.Bring to boil and cook covered on low for about 5 minutes. Turn chicken and continue cooking for 10 minutes, or until the drippings are clear or until meat thermometer reaches inner temperature of 77° C (170° F).Remove chicken and set aside. Leave apple sauce in the hot skillet.Preheat oven to 180° C (350° F). Cut goat cheese into medallions, then coat in chopped fresh parsley.Slice chicken breasts and arrange on serving plates, alternating cheese medallions and chicken slices. Put the plates in the oven for a few minutes to heat the cheese.Drizzle with apple sauce and garnish with sprigs of tarragon, if desired.
CHICKEN WITH APPLES AND GOAT CHEESE

- Cut the prepared poblano chile into 1/4-inch-thick strips (rajas); set aside. Mash the garlic and about 1 teaspoon salt together with the side of knife to make a paste; set aside.
- Season the chicken breasts with a little salt. In a large, heavy skillet, heat the oil over medium-high heat. Brown the chicken pieces lightly on both sides, 2 1/2 to 3 minutes per side. Decrease the heat to medium; add the garlic paste and sauté 30 seconds (do not let it burn). Stir in the green chile powder, oregano, and apple cider. Cook, uncovered, until the liquid is reduced to a syrup and the chicken is cooked through, about 6 minutes. Remove from the heat. Slice the chicken breasts into 1/4-inch-thick strips and return the strips to the pan along with the apples and the rajas. Remove from the heat, sprinkle with cheese, and serve immediately or keep warm in the pan until ready to serve.

- Preheat the oven to 350°F.
- Cook the bacon until some of the fat is rendered and add the onions. Cook until the bacon is crispy and the onions are just caramelized. Add the garlic and cook for another 30 seconds to 1 minute.
- Remove the pan from the burner. Add the cans of tomatoes, the oregano, basil, parsley, balsamic vinegar, and sugar to the bacon, onions, and garlic. Mix to blend well. (Sauce can be prepared ahead of time and saved in the refrigerator).
- Put the chicken in a glass baking dish. Pour the sauce over the chicken.
- Bake for 30 minutes.

- Using a small, sharp knife, cut a slit down the side of each chicken breast to form the breast into a pocket. Tuck 2 slices of prosciutto inside each breast.
- Add half of the sliced garlic, the thyme and half the goat cheese, dividing these evenly between the two chicken pockets.
- Fasten the chicken pocket, using either cook's string or wooden skewers.
- In a large frying pan heat 2 tbsp of the olive oil until very hot. Add the chicken parcels, skin side-down, and fry for 5 minutes. Turn over and fry on the other side for a further 2 minutes.
- Add the remaining garlic and sliced red pepper. Add the broth and season with salt and freshly ground pepper. Bring to the boil, reduce heat, cover and simmer for 5 minutes until the chicken is cooked through.
- Remove the chicken parcels from the pan and set aside, keeping warm. Add the remaining goat cheese to the pepper mixture. In a food processor or blender blend the pepper mixture until smooth. Heat the sauce through.
- Divide the pepper sauce among two serving plates. Top with chicken parcels, sprinkle over torn basil and serve at once.

- For chicken: Preheat oven to 350°F.
- Pound chicken between sheets of waxed paper to thickness of 1/4 inch using meat mallet.
- Pat chicken dry.
- Combine cheese, green onions and basil in small bowl.
- Season with salt and pepper.
- Spread cheese mixture lengthwise over half of each chicken piece.
- Tuck short ends in.
- Roll chicken up, starting at one long side, into tight cylinders.
- Tie ends with string to secure or secure with a toothpick (my preference).
- Dip chicken in egg, allowing excess to drip into bowl.
- Roll in breadcrumbs, shaking off excess.
- (Can be prepared 4 hours ahead. Refrigerate.) Place chicken in 8-inch square baking dish.
- Pour 2 tablespoons melted butter over.

- For sauce: Meanwhile, melt butter in heavy large skillet over medium heat.
- Add mushrooms and sauté until tender, about 8 minutes.
- Add flour and stir until butter and flour are smooth.
- Add wine and simmer 3 minutes.
- Add stock and continue simmering about 3 more minutes, stirring occasionally.
- Season sauce with salt and freshly ground pepper.
- Remove string from chicken.
- Cut rolls crosswise into 1/2-inch-thick rounds.
- Top with sauce and serve immediately.

- Heat olive oil in a skillet over medium heat and cook chicken breast halves until browned on both sides, 5 to 8 minutes per side. Pour in chicken stock, artichoke hearts, pearl onions, thyme, salt, and black pepper and bring to a boil. Reduce heat to low and simmer until stock is reduced and onions and artichokes are tender, about 45 minutes; turn chicken breasts over in the skillet after 20 minutes.

- Place each chicken breast half between 2 sheets of heavy-duty plastic wrap; pound to 1/2-inch thickness using a meat mallet or rolling pin.

- Sprinkle chicken with pepper.
- In a large skillet, brown chicken in oil on both sides.
- In a small bowl combine the remaining ingredients; pour over chicken. Cover and cook 7-10 minutes longer or until a meat thermometer reads 170.
- Serve desired amount. Cool leftovers, transfer to a freezer container and freeze for up to 3 months.
