I created this recipe after tasting quinoa at a local restaurant. I really enjoy rice pilaf, but I don't usually have time to make it. This quick-cooking side is a tasty alternative. -Sonya Fox of Peyton, Colorado

1 medium onion, chopped
1 medium carrot, finely chopped
1 teaspoon olive oil
1 garlic clove, minced
1 can (14-1/2 ounces) reduced-sodium chicken broth or vegetable broth
1/4 cup water
1/4 teaspoon salt
1 cup quinoa, rinsed

Steps:

  • In a small nonstick saucepan coated with cooking spray, cook onion and carrot in oil for 2-3 minutes or until crisp-tender. Add garlic; cook 1 minute longer. Stir in the broth, water and salt; bring to a boil., Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until liquid is absorbed. Remove from the heat. Fluff with a fork.

3 tablespoons extra-virgin olive oil
2 large or 4 small shallots, chopped
1 small red pepper, stemmed, seeded, deveined and chopped into 1/2-inch pieces
1 teaspoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning
1 1/2 cups quinoa
1/4 cup white wine, such as pinot grigio
1 1/2 cups low-sodium chicken broth
1 packed cup arugula, chopped
1/2 cup slivered almonds, toasted and coarsely chopped
1/2 cup chopped fresh mint
1 medium cucumber, peeled, seeded and diced into 1/2-inch pieces
Zest of 1 lemon

Steps:

  • Cook's Note: To toast the almonds, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven until lightly toasted, 6 to 8 minutes. Cool completely before using.
  • Heat 2 tablespoons of the oil in a large saucepan or a high-sided skillet over medium-high heat. Add the shallots and cook until soft, about 2 minutes. Add the bell pepper, salt and pepper. Cook until the vegetables are tender, 5 minutes. Make a space in the center of the vegetables and add the remaining 1 tablespoon of oil. Add the quinoa and cook, stirring constantly, until coated with oil, about 2 minutes. Add the wine and cook until all of the liquid has evaporated, about 2 minutes. Add the broth and bring to a boil. Cover the pan and simmer until all of the broth has been absorbed and the quinoa is tender, about 15 minutes. Keep covered and let sit for 10 minutes. Add the arugula, almonds, mint, cucumber and lemon zest and toss well. Season with salt and pepper.

1 cup quinoa, rinsed and drained
2 cups water
½ cup chopped toasted pecans
½ cup dried cranberries
1 tablespoon olive oil
2 tablespoons lemon juice
salt and pepper to taste

Steps:

  • Bring the quinoa and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, and the water has been absorbed, about 15 to 20 minutes. Scrape into a mixing bowl, and cool to warm, about 20 minutes.
  • Once the quinoa has cooled, stir in the pecans, cranberries, olive oil, and lemon juice; season to taste with salt and pepper to taste. Let stand at room temperature for 1 hour before serving.

This is one of my favorite ways to serve quinoa as a warm side dish with chicken or pork - it is also delicious on its own or on top of a salad.

2 cups cooked quinoa (cooked in chicken or veggie broth)
1/4 cup almonds (toasted and chopped)
1/2 cup low sugar dried cranberries
1 tsp fresh thyme (or 1/3 to 1/2 as much dried)
1/2 cup boiling water
1 tsp orange zest
salt to taste

Steps:

  • In a small bowl, combine the dried cranberries and thyme (if using dried) and let sit for 15 min or until the cranberries are soft and hydrated.
  • Drain off any remaining water and add the cranberries, thyme, orange zest and almonds to the quinoa. Add salt to taste.

2 cups low-sodium chicken broth
1 cup quinoa, rinsed
1/4 cup pine nuts
1 tablespoon olive oil
1/2 large onion, chopped
1/3 cup chopped fresh parsley leaves
Salt and pepper

Steps:

  • Put the broth and quinoa in a medium sized saucepan and bring to a boil. Reduce heat to a simmer, cover and cook for 15 to 20 minutes, until liquid is absorbed and grain is tender.
  • Meanwhile, toast the nuts in a large dry skillet over medium-high heat until golden brown and fragrant, about 2 minutes, stirring frequently. Remove nuts from pan and set aside. Heat the oil in the same skillet over a medium-high heat. Add the onions and cook stirring occasionally, until the onions soften and begin to brown, about 6 minutes.
  • When the quinoa is done, fluff with a fork and transfer to a large serving bowl. Stir in the pine nuts, onions, and parsley. Season with salt and pepper and serve.

Steps:

  • Over med heat stir and toast almond slivers until golden. Add the quinoa and toast until quinoa begins to darken.
  • Transfer the quinoa and almonds to a 2 quart sauce pan. Add the remaining ingredients. Bring to boil covered. Reduce the heat and simmer for 20 minutes. Then let stand for another 5 minutes.
  • To serve fluff gently. There is approximately 5 ounces in a portion.

I got the idea for this from the Whole Foods recipe website, and, of course, added some extra spices to make it a bit more interesting. This was a great recipe to clean out the leftover quinoa, dried cranberries and almonds I had in my cubard! Quinoa is naturally wheat and gluten free and is a good source of complete protein for vegans and vegetarians. Be sure to rinse your quinoa really well under cold running water to remove any of the bitter coating from the outside! If you do not have garam masala, your favorite curry poweder will work too.

1 tablespoon extra virgin olive oil
1 small red onion, chopped
1 cup quinoa, rinsed well and drained
2 cups vegetable broth
1/2 teaspoon salt
1/2 teaspoon coriander
1 teaspoon garam masala
2/3 cup dried cranberries
2/3 cup sliced almonds, toasted

Steps:

  • Heat oil in a medium pot over medium high heat.
  • Add onions and cook, stirring often, until just softened, 2 to 3 minutes.
  • Add quinoa, corriander and garam masala and toast, stirring constantly, for 1 minute.
  • Stir in broth and salt and bring to a boil then reduce heat to medium low, cover and simmer for 10 minutes.
  • Stir in cranberries, cover again and continue to cook until liquid is completely absorbed and quinoa is tender, 8 to 10 minutes more.
  • Toss with almonds and serve.

  • Add quinoa and sprouted lentils, stir. Usually the water doesn't need to be boiling, check your instructions. Follow package directions about rinsing, some brands require rinsing to remove bitterness or dirt or pesticides. I often forget, hoping a reminder here helps you remember. Here are the brands I used - both were available at Costco, other brands will work, check that the cooking time on the lentils is similar to the quinoa - about 15 minutes. It seems that sprouted lentils usually cook faster than non-sprouted lentils. My sprouted lentils say simmer for 8 minutes then let sit for 4 minutes. My quinoa says simmer for 15 minutes. I like lentils soft rather than chewy so I am happy to cook the lentils a little longer.
  • Once boiling, stir, reduce heat to low, cover and simmer for 15 minutes or according to package directions. If your lentils are going to take longer, then start them first and add the quinoa when there is 15 minutes cooking time left.
  • Meanwhile, steam brussels sprouts in a steamer pot on the stove (makes them so juicy and tender, mmmm my favourite way) or in a microwave steamer like this large Epicure silicone steamer. You could also boil them in water, which is what I did this time. Any of these methods takes about 15 minutes.
