GRILLED TUSCAN STEAK WITH LEMON, GARLIC, & ROSEMARY
A taste of Italy, right in your backyard! This Grilled Tuscan Steak recipe is a deliciously fun way to switch up your steak night at home. Inspired by Tuscany, a region in central Italy famous for its grill-loving & meat-loving food culture, this recipe soaks your tender steak of choice in a fragrant combination of lemon, garlic, & aromatic fresh herbs. It's not overly citrusy, but a little lemon brightens up the flavor of rich grilled steak - if you've never had a little lemon with a steak dinner, you're seriously in for such a treat! - Add the steaks to an airtight container resealable storage bag. Top with the olive oil, lemon zest, garlic, fresh rosemary sprigs, dried oregano, & crushed red pepper flakes. Season with 1/2 teaspoon kosher salt & ground black pepper as desired. Use your hands to really rub the herbs & spices into the surface of the steaks. Cover & marinate in the refrigerator for at least 12 hours or up to 2 days.
- About 30 minutes prior to grilling the steaks, pull them out of the refrigerator to let them come up to room temperature. I typically just pull them out of the fridge right before I preheat the grill (Step 3, below). Just before you're ready to toss them on the grill, use paper towel to pat the steak as dry as you possibly can, then season generously with kosher salt - a good rule of thumb is 1 teaspoon per pound of meat - & ground black pepper as desired.
- Preheat the grill for medium-high direct heat grilling, 450-500 degrees F. Once preheated, clean the cooking surface by firmly brushing a wire brush over the grates. (If you do not have access to an outdoor grill, you can also preheat a grill pan over medium-high heat.)
- Place the steaks on the grill grates, directly over the heat. Close the grill lid. Grill 3-5 minutes per side. For a nice medium rare, I grill 4 minutes per side, until an instant read thermometer inserted in the steak registers an internal temperature of 115-120 degrees F (refer to blog post above for more guidance on different steak temperatures & cook times), transfer the steaks to a plate & set aside to rest.
- Set the grilled Tuscan-style steaks aside to rest for 5-10 minutes, then carve & serve as desired. We think this grilled Tuscan steak is wonderful as-is, finishing with just a touch of smoky finishing salt, but you can serve it with a vibrant sauce like pesto or Italian-style salsa verde if desired. Pair with your favorite pasta salad & grilled veggies for the ultimate summer dinner! Enjoy!
TUSCAN RIB-EYE STEAK

- For the marinade: The day before you plan on cooking your steak, place the rib-eye in a resealable baggie along with the olive oil, rosemary, thyme and garlic. Move the herbs and garlic around in the bag to coat the steak with all the flavors. Refrigerate overnight.
- For the steak: Remove the steak from the refrigerator 30 minutes before cooking. Preheat the oven to 400 degrees F.
- Heat a grill pan over medium-high heat. Sprinkle the steak evenly with 1 teaspoon of the salt. Place the steak on the grill pan and sear for 5 minutes without moving the steak. Flip the steak and repeat on the other side. Remove the steak to a baking sheet and place in the oven for 10 minutes for medium doneness. Allow the steak to rest for 15 minutes.
- Meanwhile, in a small bowl mix together the lemon zest, lemon juice, 2 teaspoons olive oil, rosemary, thyme, 1/8 teaspoon of the salt and 1/8 teaspoon of the pepper. Set aside.
- Heat a small nonstick skillet over medium heat. Add 1 teaspoon olive oil and slide in the egg, being careful not to break the yolk. Sprinkle with the remaining 1/8 teaspoon salt and 1/8 teaspoon pepper. Reduce the heat to medium-low and gently cook the egg until the white is just set and the yolk is still soft, about 3 minutes.
- Transfer the rested steak to a serving plate. Scatter the arugula over the steak and drizzle 1 teaspoon of the herb oil. Lay the egg, sunny-side up, over the top. Drizzle with the remaining herb oil and season with a few grinds of black pepper.
GRILLED TUSCAN-STYLE PORTERHOUSE STEAKS
Steak, garlic, olive oil, on the barbecue. What else needs to be said? Be creative and warm your favorite bread to dip in the extra oil. Mangia, mangia!

- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Season steaks with salt and pepper.
- Cook steaks on the preheated grill until they are beginning to firm and are hot and slightly pink in the center, about 12 to 14 minutes, flipping halfway. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C) for medium.
- While the steaks are cooking, place garlic in a microwave-safe bowl. Sprinkle some salt over top and pour in 2 tablespoons of the olive oil. Mash garlic with the back of a sturdy knife into a fine paste. Stir in remaining oil and red pepper flakes. Heat in the microwave until hot, about 1 to 1 1/2 minutes, mixing every 30 seconds.
- Remove steaks from the oven and let sit covered for 4 to 5 minutes. Drizzle 2 tablespoons oil mixture over each steak and squeeze lemon wedges over top.

- For steak: Rub with olive oil and season with salt and pepper.
- For porterhouse steaks: Grill 6-7 minutes per side for medium rare; 7-9 minutes for medium. For rib eye or shell steaks: Cook 5-6 minutes per side for medium rare; 6-7 minutes for medium. Remove; squeeze a wedge of lemon on each steak.
- For foccacia salsa: Rip bread in to small pieces. Set aside.
- Heat olive oil in a large saute pan over medium heat. Add shallots and cook 3 minutes, or until golden. Add garlic, bread, rosemary and parsley, then stir with a wooden spoon until mixture is evenly coated with olive oil and bread is golden brown, 6-8 minutes. Remove from heat and season with salt and pepper.
- Presentation 1: Portable Porterhouse.
- Pass whole steaks around the table on a wooden cutting board with a bowl of salsa and remaining lemon wdges.
- Presentation 2: Sit-Down Dinner.
- Slice steaks against the grain into 1/4" pieces. Overlap slices on a plate; make an S pattern on meat with 1/2 cup of salsa. Garnish with lemon wedges and parsley.

- Place the garlic, oregano, basil, parsley, rosemary, and salt into a mortar or small bowl, and mash into a coarse paste. Stir in the olive oil, balsamic vinegar, and white pepper until evenly blended. Scrape half of the mixture into a separate small bowl; set aside. Spread the remaining half of the herb mixture evenly over the steaks. Set aside to marinate for 1 hour.
- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
