SESAME NOODLES WITH HONEY GINGER SAUCE
Lightly sautéed sesame noodles tossed in a honey ginger sauce that makes a quick and easy take-out style dinner in 20 minutes.

Steps:
- Whisk all the ingredients together for the sauce. Set aside.
- Allow a pot of seasoned water with about 2 quarts water to come to a boil. Add the noodles and cook for about 8 minutes as you would pasta, stirring every now and then. Ensure to follow your package's directions as to how to cook the noodles.
- Drain the water and allow the noodles to dry a bit in a mesh strainer.
- Heat the sesame oil in a large pan over medium high heat. Add the noodles and stir until they begin to simmer, about 2 minutes.
- Add the honey ginger sauce and stir, coating the noodles in it. Allow the sauce to cook with the noodles for 5 more minutes on medium low heat.
- Remove from heat and add chopped scallions. Serve immediately.

- 1. To make the sauce. Combine 1/2 cup soy sauce, honey, balsamic vinegar, rice vinegar, peanut butter/tahini, molasses, 1 tablespoon ginger, 1 clove garlic, and 1/3 cup water in a bowl. 2. Cook the noodles according to package directions. Drain. To the pot used to cook the noodles, add the broth and 1/2 of the soy sauce mixture. Bring to a simmer over medium heat, stir in the spinach. Keep warm.3. Heat the sesame oil in a large skillet over medium-high heat. When the oil shimmers, add the mushrooms. Cook undisturbed for 5 minutes or until golden. Add the shallots, 1 tablespoon ginger, and 2 cloves garlic. Cook 4-5 minutes, until fragrant. Add 2 tablespoons soy sauce and a large pinch of pepper. Cook another 2-3 minutes, until the mushrooms are caramelized. Add the sesame seeds, cook 2 minutes. Spoon the mushrooms out of the skillet and onto a plate. 4. To the skillet, add the remaining soy sauce mixture and bring to a simmer over medium heat. Add the noodles, toss to combine, and cook until the sauce just coats the noodles, 2-3 minutes. Remove from the heat. 5. Ladle the broth into bowls. Add the noodles and toss combine. Spoon the mushrooms over the noodles. Top with green onions and chili oil. Enjoy!

- Combine 2 tablespoons smooth peanut butter, 2 tablespoons, dark soy, 2 tablespoons chili oil, 2 tablespoons sesame oil, 2 tablespoons rice vinegar, MSG, and 2 teaspoons sugar in a bowl.
- Boil 12 ounces oriental noodles. Drain. Add 2 tablespoons sesame oil, 2 tablespoons toasted sesame seeds, and the prepared sauce. Garnish with fresh coriander leaves.

- Whisk together the ingredients for Sweet Ginger Scallion sauce in the bowl. Set aside for 10 -15 minutes for the flavors to develop.
- To the cooked noodles, add the sweet scallion sauce, sesame seeds and toss the noodles to coat, checking the seasoning. Sprinkle lime juice, if desired, and topping with julienned cucumber, giving one final toss.
SESAME NOODLES
This is one of the most popular recipes I've ever made! From kid's to old folks everyone loves these noodles. Add some spicy "Rooster sauce" and more ginger to give it even more flavor. I have now adjusted my original recipe post (9/07). Apparently an employee had written the recipe down incorrectly cause I never measured. It's a really easy dish to make for pot luck's etc. Toast your sesame seeds if they haven't already been toasted for better flavor. Almost all of the ingredients are available at any Oriental Market and most regular grocery stores. You can add other ingredients to make it a whole meal. --Please note-- the soy sauce amount was incorrect in this recipe! I have now changed it! Add more if you like.

- Cook linguine noodles per directions on package. Drain well.
- Combine next 5 ingredients and mix well with noodles. (I use gloved hands to do this).
- Mix in sesame seeds and most of green onions.
- Let stand for at least 30 minutes before serving and stir occasionally during this time.
- Sprinkle with reserved green onion for decorative purposes.
