BASIC BEAN SOUP



Basic Bean Soup image

This is a simple, basic bean soup. It's very easy to assemble, and it tastes great, too! Try adding other vegetables, if desired.

1 pound dry great Northern beans
8 cups water
12 baby carrots
1 cup chopped onion
½ pound chopped ham
¼ cup ketchup
salt and pepper to taste

Steps:

  • In a large bowl, combine the beans with the water, cover and let soak overnight.
  • In a large pot over medium high heat, combine the soaked beans with water, carrots, onion and ham. Add more water to cover all, if necessary. Bring to a boil, then reduce heat to low and let simmer for 4 to 6 hours. Add ketchup just to get desired color. Season with salt and pepper to taste.

2 scallions, thinly sliced
1 garlic clove, minced
1/2 teaspoon dried oregano
1 can (14 1/2 ounces) vegetable broth
1 can (19 ounces) white beans, rinsed and drained
1 1/2 teaspoons fresh lemon juice
Coarse salt and ground pepper
2 tablespoons freshly grated Parmesan, for serving

Steps:

  • In a medium saucepan, heat oil over medium. Add scallions, garlic, and oregano; cook, stirring frequently, until scallions begin to soften, about 3 minutes.
  • Stir in broth and beans; cook until heated through, about 4 minutes. Using a wooden spoon or potato masher, lightly mash some of the beans to thicken the soup. Stir in lemon juice; season with salt and pepper. Before serving, sprinkle with Parmesan.

1 cup packaged baby carrots, coarsely chopped
1 small onion, chopped
3 tablespoons olive oil
2 (15 ounce) cans cannellini beans, rinsed and drained
32 ounces reduced-sodium chicken broth
2 -3 teaspoons dried Italian seasoning, crushed
1 (5 ounce) package Baby Spinach
freshly cracked black pepper

Steps:

  • In a Dutch oven, cook and stir carrots and onion in 1 tablespoon olive oil over medium-high heat 3 minutes. Add beans, broth and seasoning. Bring to boiling; slightly mash beans. Reduce heat; simmer, uncovered, 8 minutes, stirring occasionally.
  • Meanwhile, in large skillet, heat remaining oil over medium-high heat. Add spinach and toss 1-2 minutes, just until wilted. Remove from heat. Ladle soup, top with the spinach and sprinkle with the pepper.

3 tablespoons olive oil
2 medium carrots, thickly sliced
1 large onion, coarsely chopped
1 stalk celery, coarsely chopped
1 clove garlic, finely chopped
3 sprigs fresh oregano
1/4 teaspoon salt
Black pepper, to taste
2 (15 -ounce) cans cannellini beans or other small white beans, drained and rinsed
5 cups chicken stock or vegetable stock
4 cups baby kale or baby spinach, stems removed if tough
1 tablespoon chopped fresh oregano, for garnish
Olive oil, to serve
Extra grated Parmesan, to serve
For the parmesan toasts:
1/2 baguette, thinly sliced

Steps:

  • Simmer the soup: Add the remaining beans to the pot and stir well. Stir in the chicken stock and bring to a boil. Lower the heat, partially cover with the lid placed askew, and simmer for 20 minutes, or until the carrots are tender and the liquid is flavorful. Discard the oregano sprigs; the leaves will have fallen into the soup. Add additional salt and pepper to taste.
  • While the soup simmers, make the Parmesan toasts: Toast the bread until lightly golden on both sides. While the toast is still hot from the toaster, sprinkle with olive oil and cheese. If you have a toaster oven, return them to the toaster for 1 minute to melt the cheese; otherwise, arrange the toasts in a skillet over medium heat, cover, and warm for about 1 minute or until the cheese has melted.
  • Add the greens to the soup: Add the kale or spinach to the pot and simmering for another 2 minutes, or just until the greens wilt.
  • Serve the soup: Ladle the soup into bowls, sprinkle with oregano and more olive oil, if you like. Serve with Parmesan toasts and extra Parmesan for sprinkling.

1 (1-pound) bag of regular 15 Bean Soup mix or Cajun 15 Bean Soup mix
2 tablespoons olive oil
2 to 3 ham hocks or 1 ham bone (meat included)
1 large onion, chopped
3 stalks celery (leaves included), chopped
4 garlic cloves, minced
1 (15 to 30-ounce) can whole tomatoes, crushed
1 tablespoon dried parsley
1 teaspoon dried rosemary
1 teaspoon salt
1 teaspoon ground black pepper
2 chicken bouillon cubes

Steps:

  • Rinse the beans. Place them in a large pot and cover with water over medium-high heat. Bring the beans to a boil, stirring occasionally.
  • Remove the pot from the heat and cover with a lid. Let the beans sit for an hour, then drain and set aside.
  • Pour the olive oil into the pot over medium heat. Saute the ham hocks, onion, and celery until tender. Add the garlic and saute for 2 more minutes.
  • Add the beans. Pour water until it's 2 inches above the beans.
  • Stir in the tomatoes (juice included), parsley, rosemary, salt, pepper, and bouillon cubes.
  • Bring the mixture to a boil, stirring occasionally. Reduce the heat to medium-low and cover the pot. Let it simmer, stirring occasionally, for 2 to 2 ½ hours or until the beans are tender. Add more water if the mixture is getting too thick.
  • At the last 15 minutes of cooking, mix in the flavor packet that comes with the beans.
  • Taste the soup and season with more salt and pepper if needed.
  • Serve on its own or on top of rice. Enjoy!

½ (8 ounce) pre-cooked ham steak, diced

1 Tbsp olive oil
1 onion (chopped)
1 carrot (diced)
3 cloves garlic cloves (crushed)
2 potatoes (diced)
6 cups vegetable stock
2 bay leaves
0.5 tsp dried thyme
1.333 cups tomatoes (skinned and diced)
1 Tbsp balsamic vinegar
salt

fresh cilantro (torn)

Steps:

  • Heat the oil in the pressure cooker pan and cook the onion and carrot gently for 2 minutes. Add the garlic and cook for 1 minute.
  • Add the potatoes, stock, bay leaves, beans and thyme. Lock on the lid.
  • Turn the heat to high and bring to high pressure. Set the timer for 7 minutes. Turn the heat to low to maintain high pressure.
  • When the timer sounds, turn off the heat and move the pan to a cool surface. Allow the pressure to come down naturally for 10 minutes, then release any remaining pressure.
  • Carefully remove the lid, tilting it away from you. Remove the bay leaves.
  • Using a stick blender, carefully mix the hot soup until it is mostly creamy, with some whole beans left in for texture.
  • Place the pan over a medium heat and add the tomatoes. Cook uncovered for 5 minutes, stirring occasionally until the tomatoes begin to soften.
  • Remove from the heat and stir in the vinegar. Season to taste with salt and pepper.
  • Put into warm soup bowls and sprinkle with coriander.

Steps:

  • Place the beans in a large saucepan and cover with cold water by about 2 inches. Bring to a boil and lower the heat to a simmer. Cook for 5 minutes; remove from the heat, cover, and let sit for one hour. Drain and reserve. Tie the parsley, thyme, and bay leaf together with kitchen twine.
  • In a large soup pot or Dutch oven combine the beans, herb bundle, hocks, onions, and garlic with the water. Bring to a boil, cover, and adjust the heat so the soup cooks at a gentle simmer. Cook, stirring in the carrots after 1 hour, until the beans and hock are completely tender, about 1 1/2 hours total.
  • Turn off the heat and remove the hocks. Cool slightly. Remove the meat from the hocks, discarding the bones, fat, and skin. Cut the meat into small cubes. Remove the herb bundle and discard.
  • Puree about 3 cups of the beans with a some of the liquid in a blender. (For a smoother soup, puree all the beans.) Stir the puree and diced meat into the soup. Heat the soup and adjust the seasoning as needed with salt and pepper.
  • Pour into heated bowls, place a small pat of butter on top of each soup, and serve.
