CURRIED SPLIT PEA SOUP

2 tablespoons unsalted butter
1 cup chopped onion
Kosher salt and freshly ground black pepper
1 tablespoon minced fresh garlic
12 ounces dried green or yellow split peas, picked over and rinsed
5 cups chicken broth
1 tablespoon curry powder

Steps:

  • Place the butter into a large (4 to 6-quart) saucepan over medium-low heat. Once melted, add the onion and a generous pinch of salt and sweat for 2 to 3 minutes. Add the garlic and continue to sweat for an additional 1 to 2 minutes, making certain not to allow onions or garlic to brown.
  • Add the peas, chicken broth and curry powder. Increase heat to high and bring to a boil. Reduce heat to low, cover and cook at a simmer until the peas are tender and not holding their shape any longer, approximately 45 to 50 minutes. Taste and adjust seasoning as needed. Using care and a stick blender, puree the soup until the desired consistency. Watch out for hot splatters.

1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons kosher salt

2 cups medium-diced carrots (3 to 4 carrots)
1 cup medium-diced red boiling potatoes, unpeeled (3 small)
1 pound dried split green peas
8 cups chicken stock or water

Steps:

  • In a 4-quart stockpot on medium heat, saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 pound of split peas, and chicken stock. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper. Serve hot.

One of my all-time favorite comfort foods is a bowl of split pea soup, dating back to the days when my mother served us canned pea soup with cut-up hot dogs (very '50s!). Now I prefer a big pot of homemade soup to serve with sautéed kielbasa on top. I love the way the earthy, creamy soup contrasts with the crispy, spicy sausage.

Good olive oil
2 cups chopped leeks, white and light green parts, spun-dried (2 leeks)
1 1/2 cups chopped yellow onion (1 large)
2 cups (1/2-inch) diced, scrubbed carrots (3 large)
1 tablespoon minced garlic (3 cloves)
1 pound dry green split peas
8 cups good chicken stock, preferably homemade
1 smoked ham hock
8 fresh thyme sprigs, tied with kitchen twine
2 large fresh bay leaves
Kosher salt and freshly ground black pepper
12 ounces smoked kielbasa, halved lengthwise and sliced diagonally in 1/4-inch-thick pieces
Minced fresh parsley, for serving

Steps:

  • Heat 1/4 cup olive oil in a large (11 to 12-inch) pot or Dutch oven, such as Le Creuset, over medium-high heat. Add the leeks, onion, and carrots and cook for 7 to 8 minutes, stirring occasionally, until tender and starting to brown. Stir in the garlic and cook for one minute. Stir in the peas to coat with oil and cook for one minute. Add 8 cups of the chicken stock, 2 cups water, the ham hock, thyme bundle, bay leaves, 2 teaspoons salt, and 1 teaspoon pepper. Bring to a boil, lower the heat, and simmer, partially covered, for 1 1/4 hours, stirring occasionally, until the peas are very tender and falling apart. After 45 minutes, stir more frequently, scraping the bottom of the pot to be sure the soup doesn't burn.
  • Discard the thyme bundle, bay leaves, and ham hock. Transfer 2 cups of the soup to the bowl of a food processor fitted with the steel blade and purée. Return the purée to the pot, adding more chicken stock or water if the soup is too thick.
  • To serve, heat 2 tablespoons olive oil in a medium (10 to 11-inch) sauté pan over medium heat. Add the kielbasa and sauté for 5 to 6 minutes, tossing occasionally, until the kielbasa is browned. Serve the soup hot with the kielbasa and parsley sprinkled on top.
  • Make ahead: Reheat the soup over low heat, adding chicken stock or water to thin.

  • Place all ingredients into a large stew pot.

1 (6 ounce) bag fresh spinach, finely chopped
1 tablespoon dried basil

Steps:

  • Heat the olive oil in a skillet over medium heat, and saute the onion and garlic until tender.
  • In a large pot, mix the onion mixture, potatoes, carrots, and split peas. Pour in the vegetable broth. Bring to a boil, reduce heat to low, and simmer 1 hour.
  • In a blender or food processor, blend the tofu and spinach until creamy, and mix into the pot. Season with basil, salt, and pepper. Continue cooking 1 hour. If the soup becomes too thick, add water. Serve hot and enjoy.

1 lb yellow split peas
3 quarts chicken broth (preferably homemade)
2 large celery ribs, thinly sliced
2 medium carrots, peeled and thinly sliced
1 large onion, chopped
1 large turnip, peeled and thinly sliced
1 large parsnip, peeled and thinly sliced
1 large scallion, white portion only,thinly sliced
2 large fresh thyme sprigs
1/4 teaspoon ground allspice, plus more to taste
2 teaspoons kosher salt
fresh ground pepper

Steps:

  • Bring the broth and split peas to a boil in a large pot over med-high heat.
  • Cover, reduce the heat to a simmer and cook until the peas are soft, about 45 minutes.
  • Add all remaining ingredients.
  • Cover and cook over medium-low heat until the vegetables are tender, about 45 minutes.
  • Pick out and discard the thyme.
  • Puree the soup in batches in a food mill, food processor or blender (I use my imersion blender and puree it right in the pot).
  • Taste and adjust the seasonings with additional allspice, salt and pepper if needed.
  • This soup can be refrigerated for up to 5 days or frozen for several weeks.
  • Stir well after reheating.

½ teaspoon hot pepper sauce
2 ham hocks
1 onion, chopped
2 potatoes, peeled and diced
2 bay leaves
4 teaspoons dried dill weed
½ teaspoon ground white pepper
2 tablespoons chicken bouillon powder
2 tablespoons soy sauce
½ teaspoon crushed red pepper flakes
2 cups whole milk

Steps:

  • In a large stock pot, add split green peas, chicken broth, water, hot pepper sauce, ham hocks, chopped onion, diced potatoes, bay leaves, dried dill weed, white pepper, chicken soup base, soy sauce and red pepper flakes and bring to boil. Reduce heat and simmer, covered for about 1 hour, stirring occasionally.
  • Remove ham hocks and trim off fat. Remove ham from bone and cut into small pieces and return to pot. Simmer soup, covered for 30 minutes.
  • Remove 6 cups of soup and puree in a food processor or blender and return to pot. Stir in milk and bring back to a boil and then serve.

2 quarts water
1 large onion, chopped
1 chopped garlic clove
2 -3 carrots, chopped
1 stalk celery & leaves, chopped

1 ham hocks, with meat or 1 meaty ham bone
1 teaspoon fresh ground pepper
1 bay leaf
2 cups light cream
1 cup milk (or 2 cups for thinner soup)
1/2 cup california dry sherry
salt and pepper

Steps:

  • Place first 10 ingredients in heavy pot. Cook over low heat, stirring occasionally for 3 hours until peas are soft. Remove from heat.
  • Remove ham from the bone, dice and set aside, discarding skin and bone.
  • Remove bay leaf.
  • Using immersion blender, puree soup to desired consistency. (Alternately, remove 2-3 cups of soup and place in a blender to puree.).
  • Return ham to kettle and add cream, milk and Sherry.
  • Add salt and pepper to taste.
  • Simmer for 15-20 minutes, stirring.
  • Serve, adding a splash more sherry on top of each portion, if desired.
