These Pork Medallions are pan seared and deglazed in a delectable sweet and savory apple cider glaze. Perfect for fall and beyond, this seasonally inspired pork medallion recipe is packed with protein and ready in under 15 minutes!

¼ cup apple cider vinegar
¼ cup apple cider
2 tablespoons olive oil
3 tablespoons honey
4 garlic cloves (chopped)
1 tablespoon fresh rosemary (chopped)
1 tablespoon dijon mustard
1 tablespoon oil (olive or canola)
2 pounds pork tenderloin (cut to 1")

Steps:

  • In a small bowl, combine vinegar, cider, oil, honey, garlic, rosemary and mustard. Set aside.
  • Preheat oven to 350° F. Season pork with salt and pepper on both sides.
  • Add a thin layer of oil to grease the bottom of a skillet (cast iron preferred) and warm to medium-high heat.
  • Add pork to skillet and sear each side 1 minute or until lightly browned.
  • Transfer to a shallow baking dish. Pour glaze over medallions and lift medallions to coat bottom.
  • Roast 8 minutes in the oven until a thermometer inserted into the center of a medallion reaches 145 degrees.
  • Remove from oven and spoon apple cider glaze over them to serve.

2 teaspoons cornstarch
2/3 cup reduced-sodium chicken broth
1/4 cup apple juice
1 tablespoon butter
2 medium apples, thinly sliced
2 green onions, sliced
1 garlic clove, minced
3/4 teaspoon dried thyme
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound pork tenderloin, cut into 1-inch slices

Steps:

  • Preheat broiler. In a small bowl, mix cornstarch, broth and apple juice. In a nonstick skillet, heat butter over medium-high heat. Add apples, green onions and garlic; cook and stir 2-3 minutes or until apples are crisp-tender. Stir cornstarch mixture and add to pan. Bring to a boil; cook and stir 1-2 minutes or until thickened. Keep warm., Mix thyme, paprika, salt and pepper. Pound pork slices with a meat mallet to 1/2-in. thickness; sprinkle both sides with seasonings., Place pork on a broiler pan. 4 (6-ounce) boneless center-cut pork medallions
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
1 tablespoon unsalted butter
2 tablespoons apple cider vinegar
1 large onion, sliced
1 cooking apple, like Rome, Gravenstein, or Golden Delicious, peeled, halved, cored, and sliced
2 tablespoons thinly sliced fresh sage leaves
1/2 cup chicken broth, homemade or low-sodium canned
1 tablespoon whole-grain mustard

Steps:

  • Heat a large heavy bottomed skillet over medium-high heat. Dry the pork medallions well and season with salt and pepper. Add the oil to the skillet and heat until shimmering. Lay the pork in the pan and cook until browned on the first side, about 4 minutes. Turn and cook until the second side is browned, about 3 minutes more. Transfer the pork to a plate, and cover loosely with foil.
  • Add the onions to the skillet, stir and season with salt and pepper. Cover, and reduce heat to medium and cook until soft, about 8 minutes. Add the cider vinegar and stir, scraping up the browned bits that cling to the skillet. Add the onions to the pork.
  • Add butter to skillet, raise heat to medium-high. Add the apples and sage; cook, stirring occasionally, until golden, about 3 minutes. Stir in the broth and mustard, and simmer until the apples soften, about 2 minutes. Return the onions and any accumulated juices from the pork to the skillet. Simmer to thicken slightly, about 2 minutes. Nestle the pork in the onions and heat until the meat is warmed through.
  • Divide the pork medallions among 4 plates and smother them with apples and onions. Serve.

Pork tenderloin paired with perfect golden apple-cider sauce. Ideal for fall! From some Noble Pig. Note: Do not overcook the pork- the first time I made this it turned out tough and dry because I overcooked it. But the sauce was nice so I thought I'd keep the recipe here! I might try making extra sauce next time so I can put it all in the slow cooker.

1 tablespoon vegetable oil
1 1/2 lbs pork tenderloin, trimmed
1 cup apple cider
1/2 cup dry white wine
1 tablespoon apple cider vinegar
salt & pepper

Steps:

  • Cut the pork tenderloin into 2" - thick medallions and season with salt.
  • Heat vegetable oil in a large sauté pan over medium-high heat. Sear the pork for 5 minutes on each side or until brown. (The trick to well-seared meat is resisting the urge to move the meat too soon. The meat will "unstick" when a perfect crust is formed.).
  • Add apple cider, wine and apple cider vinegar. (This will deglaze the pan and release the brown bits stuck at the bottom.).
  • Bring to a boil, cover and cook 5 minutes.
  • Remove lid, reduce heat to medium and simmer 5 minutes more. Turn pork occasionally.
  • Transfer the pork to a plate and season with pepper. Cover with foil to keep warm.
  • This part is important: Simmer the liquids until reduced to 1/2 cup. The sauce should be thick and syrupy and should coat the back of a spoon. This could take 10 to 20 minutes (depending on your stove and the size of the pan you are using). DO NOT over-reduce, it will scorch.
  • Spoon the cider sauce over the medallions and serve.

1 lb pork tenderloin, cut crosswise into 1/2-inch slices
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 cup butter or margarine
1 medium onion, chopped (1/2 cup)
1 clove garlic, finely chopped
1 tablespoon Gold Medal™ all-purpose flour
1/2 cup apple cider
1/4 cup chicken broth
1 tablespoon chopped fresh rosemary leaves
Fresh rosemary sprigs, if desired

Steps:

  • Sprinkle pork slices evenly with 1/4 teaspoon each of the salt and pepper. In 12-inch nonstick skillet, melt 2 tablespoons of the butter over medium-high heat. Add pork; cook 2 to 3 minutes, turning once, until no longer pink in center. Remove pork to plate; cover to keep warm.
  • In same skillet, melt remaining 2 tablespoons butter over medium-high heat. Cook onion and garlic in butter 3 minutes, stirring frequently, until tender. Stir in flour until blended. Gradually add cider and broth; cook 1 minute or until thickened. Stir in chopped rosemary and remaining 1/4 teaspoon each salt and pepper.
  • Serve pork with cider gravy. Garnish with rosemary sprigs.

2 pork tenderloin (around 2 to 2&1/2 pounds total)
3 tablespoons butter, divided
4 ounces canadian oka cheese or 4 ounces brie cheese, cut into 12 slices
1 shallot, finely chopped
2 tart apples, cored and cut into 18 slices
1 teaspoon packed brown sugar
1/2 cup apple cider
1/2 teaspoon poultry seasoning
1/3 cup whipping cream

Steps:

  • Cut tenderloins into 12 equal pieces and pound between plastic or waxed paper until 1/4 inch thick.
  • Melt 1&1/2 T.
  • butter in a large skillet over medium high heat.
  • Cook pork for 2 minutes per side.
  • Remove from pan.
  • Reserve juices.
  • Top each piece of pork with a slice of cheese and place in a warm oven to JUST melt the cheese.
  • Melt the remaining butter and add the apple slices and sugar to the pan.
  • Cook and stir for 3 minutes.
  • Remove from pan.
  • Add cider, poultry seasoning and any juices from the pork to the skillet.
  • Cook and stir over high heat until the liquid is reduced to half.
  • Pour in cream.
  • Stir to thicken slightly.
  • Add salt and pepper to taste.
  • Place apples on a serving plate-top with cheese covered pork and pour the cream mixture on top.
  • Serve.

1 1/2 lbs pork tenderloin, cut into 2 inch medallions (should make about 8)
1 tablespoon oil
1 cup apple cider
1 tablespoon apple cider vinegar
1/2 cup dry white wine
salt and pepper, to season

Steps:

  • Heat large skillet over med-high heat and add oil.
  • Season pork with salt and pepper lightly on each side.
  • Sear pork about 5 minutes on each side or until brown.
  • Add cider, vinegar and wine and bring to a boil.
  • Cover and cook 5 more minutes.
  • Remove lid and reduce heat to med., simmer 5 more minutes.
  • Remove pork to a plate and keep warm.

1 pork tenderloin (about 1/2 pound)
1 tablespoon olive oil
1-1/2 teaspoons butter
1 small onion, sliced
1/4 cup sliced fresh mushrooms
1 garlic clove, minced
2 teaspoons all-purpose flour
1/2 cup chicken broth
1/4 teaspoon dried rosemary, crushed
1/4 teaspoon dried savory
1/4 teaspoon salt
1/8 teaspoon pepper
Minced fresh parsley, optional

Steps:

  • Slice tenderloin into 1/2-in.-thick medallions. In a skillet, brown pork in oil for about 2 minutes on each side. Remove from skillet and set aside. , In same skillet melt butter. Add the onion, mushrooms and garlic; saute for 1 minute. Stir in flour until blended. Gradually stir in the broth, rosemary, savory, salt and pepper. Bring to a boil; cook and stir for 1 minute or until thickened., Lay pork medallions over mixture. Reduce heat; cover and simmer for 15 minutes or until meat juices run clear. Note: To clarify butter, put a pound of butter in a saucepan over medium-low heat. Gently simmer 5 minutes, remove from the heat and cool 5 minutes. Skim off the top layer of foam. Pour the clarified butter gently into a bowl. Stop when you reach the milky white solids on the bottom of the pan. Don't throw out the milky solids. They're delicious on cooked vegetables. clarified butter keeps several weeks in the refrigerator.
