PECAN PRALINES
I grew up in Mississippi, and these Louisianna Pralines have been passed down from my grandmother to my mom, and now to me, hopefully my daughter will make them as well. I make loads of them for gifting, and take batches into work for treat days. I never come home with leftovers. They literally melt in your mouth.

Steps:
- 1. Spread sheets of waxed paper or aluminum foil on cool counter top.
- 2. Combine all ingredients except the nuts in heavy saucepan. Stirring constantly to prevent sticking/scorching on medium high heat until it boils. Continue stirring while it boils for approx. 15 minutes or until it reaches medium soft-ball stage. You can test this without a candy thermometer by dribbling some of the liquid into a cup of cool water, if it balls/sets up, its cooked long enough. If it just mixes w/water, then cook longer until tests as above.
- 3. Remove from heat, add chopped nuts and stir until the sheen/shine starts to disappear, and begins to thicken. This step is important....if you spoon them out to soon, you just have sticky globs of caramel stuff....they won't set up properly.
- 4. Working quickly, drop by spoonfuls onto waxed paper. Let cool. Remove from paper & store in airtight container.
PECAN PRALINE MORSELS (PAULA DEEN)

- Preheat oven to 350°.
- In a medium bowl, combine all ingredients.
- Spread out onto a baking sheet, sprayed with cooking spray.
- Bake in the preheated oven for about 20 minutes, or until coating is dry, and slightly crystallized, stirring once.
- Remove from oven and remove from baking sheet.
- If not serving immediately, store in an airtight container.
DAD'S PECAN PRALINES
This is my husband's family recipe for making pecan pralines. He is asked every Christmas to make these delicious pralines.

Steps:
- In a large 3 1/2 quart-size saucepan, combine sugar, baking soda, buttermilk, and salt. Cook over high heat for about 5 minutes or until the mixture reaches 210 degrees on a candy thermometer. Stir often scraping the bottom and sides. The mixture will foam up.
- Add butter, pecans, and vanilla.
- Over medium heat, continue cooking.
- Stir constantly scraping bottom and sides until the mixture reaches softball stage (235 degrees on a candy thermometer or spinning a thread).
- Remove mixture from heat.
- Cool slightly (about 2 minutes). Beat with spoon until thick and creamy.
- Drop from a tablespoon onto sheet of alumium foil or wax paper. Let cool. Store in an airtight container.
PECAN PRALINES SOUTHERN STYLE
Southern decadence at it finest! These are enough to make a New Orleans native like me homesick. Cook time includes cooling time. Recipe from Foodtv.com (but its almost as good as MawMaw's recipe)

- Preheat oven to 325 degrees.
- Spread the pecans on a cookie sheet and place in the oven for 3 minutes.
- Stir and bake for 3 more minutes (Watch them closely so the don't get over toasted).

- Preheat oven to 325 degrees F.
- Spread the pecans on a cookie sheet, and place in the oven for 3 minutes. For even toasting, turn the tray, front to back. Toss the nuts with a metal spatula and bake for another 3 minutes. You'll know they're done when they give off their fragrant aroma, and be sure to check them so they don't become overbaked or charred.

EASY PECAN PRALINE SAUCE
This easy pecan praline sauce made with brown sugar is perfect on cakes, ice cream, bread pudding, pancakes, and any and all other desserts! It's only six ingredients, tastes like a nutty homemade caramel sauce, and definitely can be eaten by the spoonful with no judgement.

- In a medium sized pot, bring butter, brown sugar, and half & half together to a boil over med-low heat, whisking constantly. Allow the mixture to boil for 3-4 minutes, or until the sauce has thickened and coats the back of a spoon (can be anywhere as long as 5-7 minutes).
- Drop the mixture to low and add in the salt, vanilla extract, and chopped pecans and cook another minute or so.
- Turn the heat off and allow the caramel praline sauce to cool completely before storing in a glass jar.
- Store in the fridge.
- Enjoy!

CREAMY PECAN PRALINES
Steps:
- Mix light brown sugar, granulated sugar, heavy cream, butter, water and salt in a heavy-bottomed saucepan. Cook over low heat, stirring constantly with a wooden spoon, until sugar dissolves. Stir in pecans and cook over medium heat until mixture reaches the soft ball stage, 238 to 240 degrees F on a candy thermometer. If you spoon a drop of boiling syrup into a cup of ice water, it will form a soft ball that flattens easily between your fingers.
- Remove pan from heat and stir rapidly until mixture thickens. Drop pralines by the spoonfuls, 1-inch apart onto parchment paper-lined baking sheets. Let cool completely until firm. Store in an airtight container.
BOURBON PECAN PRALINES
These southern bourbon pecan pralines transport you to New Orleans! They are sugary, sweet, and have the perfect amount of bourbon flavor. They are the perfect candy to enjoy any time of the year as as special treat!

- Preheat oven to 300 degrees F. Spread pecan halves onto a baking sheet and toast for 6 minutes (mixing halfway through). Remove from oven and cool.
- Take two baking sheets and line with parchment paper or silicone baking mats. Spray lightly with cooking spray to prevent sticking.
- To a large pot add the brown and white sugars, butter, and milk and melt together over medium heat.
- Stir in pecans and heat to 238 degrees F (check that candy thermometer!), stirring frequently.

- In a large heavy saucepan combine the brown sugar, sugar, milk, butter, and vanilla and stir until blended. Bring the mixture to a boil over medium heat.

When the temperature reaches 228 degrees on candy thermometer, stir in the butter and pecans and continue to cook, stirring constantly, until the mixture reaches 236 degrees. Remove the pan from the heat and allow the mixture to cool for 5 minutes. Beat the mixture with a wooden spoon until the candy coats the pecans but does not lose its gloss. Drop the pralines 1 tablespoon at a time onto a well-greased piece of aluminum foil or a slab of confectioner's marble. Allow the pralines to cool. EASY CREAMY PECAN PRALINES
Steps:
- Gather the ingredients.
- Lay an 18-inch sheet of waxed paper or parchment paper on the countertop.
- Cut the butter into small pieces. Place the pieces of butter on a plate and put the plate in the freezer while you heat the ingredients.
- In a heavy medium saucepan, add the granulated sugar, brown sugar, and evaporated milk.
- Place the pan over medium heat, whisk to blend, and cook until the mixture reaches the soft-ball stage or 235 F when measured with a candy thermometer.
- Immediately remove the pan from the burner and stir in the frozen butter with a wooden spoon.
- Add the pecans and vanilla and continue stirring with a wooden spoon until the mixture is no longer shiny and thickens but is not too stiff. The candy should spread slightly when you spoon it onto the paper.
