Categories     appetizer

Time 15m

Yield 24 balls, up to 4 servings, 6 balls each

Number Of Ingredients 14

4 scallions, green and white parts, coarsely chopped
2-inch piece fresh ginger, peeled
1 serrano or jalapeno chili pepper, seeded and finely chopped, divided
2 cloves garlic, crushed
1/2 cup tamari, plus 3 tablespoons, dark soy, found on the international aisle
1/4 cup fresh cilantro leaves, a big handful
2 limes, zest and juice
1/2 pound medium shrimp, shelled and deveined, tails removed
1 pound ground pork
4 tablespoons vegetable oil
1 teaspoon dark sesame oil
1 tablespoon honey
3 tablespoons water
Toothpicks

Steps:

  • In the bowl of a food processor combine the scallions, half of the ginger - grated or minced, half of the chopped chile pepper, garlic, 3 tablespoons tamari, cilantro and the lime zest. Pulse for 30 seconds, scrape down the bowl and then continue to process 1 minute or until finely ground. Add the shrimp and pork, process until the shrimp are ground into small pieces and the mixture is well combined but not so fine that it becomes a paste, about 1 minute. Roll the shrimp and pork mixture into to 24 balls, about the size of a large walnut. If you dip your hands in water before rolling the mixture the rolling goes a little easier.
  • Preheat a large nonstick skillet with 4 tablespoons of vegetable oil over medium heat. Add the balls and don't move them until they are brown on 1 side, about 2 minutes. Turn the balls and continue to cook, browning on all sides until cooked through, about 4 minutes.
  • While the balls are cooking make the spicy lime dipping sauce: in a bowl combine the remaining ginger, chili pepper, 1/2 cup tamari, lime juice, toasted sesame oil, honey and 3 tablespoons (a splash) of water. Taste and adjust the seasoning, if you find it to be too salty, add another drizzle of honey.
  • Platter the shrimp and pork balls with a bowl of the spicy lime dipping sauce and toothpicks.

Time 22m

Yield about 2 dozen

Number Of Ingredients 27

1/2 pound ground pork
4 tablespoons butter
3 tablespoons plus 3/4 cup flour
1/2 cup chopped onions
1/4 cup chopped bell peppers
2 tablespoons minced garlic
1 1/2 cups water
Salt and cayenne
1/2 cup chopped green onions
Hot pepper sauce, to taste
2 cups fine bread crumbs
Essence
1 egg, beaten
1/4 cup vegetable oil
1 cup Creole Mustard Aioli
1/4 cup grated Parmesan cheese
2 cups cooked medium-grain rice
2 tablespoons finely chopped parsley
1 tablespoon brunoise red pepper
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • In a saute pan, brown the pork for about 3 to 4 minutes. Remove from the pan and drain on a paper-lined plate. In a large saute pan, melt the butter. Add 3 tablespoons of flour, stirring constantly for a brown roux. Add the onions, peppers and garlic and continue to saute for 3 to 4 minutes, or until the vegetables wilt. Add the pork and saute for 3 minutes. Stir in the water. Season the mixture with salt and pepper. Bring the liquid up to a boil and reduce to a simmer. Cook the mixture for 45 minutes. Stir in the rice and green onions, hot pepper sauce, and 1/2 cup of the bread crumbs. Remove from the heat and cool for 20 minutes. Season the flour and remaining bread crumbs with Essence, separately. In a small mixing bowl, whisk the egg and milk together. Season the mixture with Essence. Shape the pork/rice mixture into balls the size of walnuts. Dredge the balls in the flour. Dip each ball in the egg wash, letting any excess drip off. Dredge the balls in the bread crumbs. Fry the roulettes a couple at a time until golden brown, about 2 to 3 minutes. Remove the boulettes from the fryer and drain on a paper-lined plate. Season with Essence. Spoon the Aioli in the center of the plate and around the rim. Mound the boulettes in the center of the sauce. Garnish with
  • Combine all ingredients thoroughly and store in an airtight jar or container.

DEEP-FRIED PORK CHOPS WITH SWEET AND SPICY RED PEPPER JELLY

Deep-Fried Pork Chops with Sweet and Spicy Red Pepper Jelly image

Provided by Food Network

Categories     main-dish

Time 1h25m

Yield 4 servings

Number Of Ingredients 14

1/4 cup diced bell pepper (red or yellow), frozen
1 1/2 cups sugar
3/4 cup pepper vinegar
1/2 cup pineapple juice
6 red bell peppers, roasted, peeled and chopped
1 jalapeno, chopped with seeds
2 tablespoons pectin
4 thick-cut rib pork chops
1 tablespoon blackening seasoning
1 tablespoon kosher salt
1/2 tablespoon freshly ground black pepper
2 cups all-purpose flour
2 cups buttermilk
Canola oil, for frying

Steps:

  • For the pepper jelly: Combine the sugar, vinegar, pineapple juice, roasted bell peppers and jalapeno. Blend using a food processor or immersion blender. Place the puree in a 2-quart saucepan and bring to a rolling boil. Add the pectin and continue to boil for 60 seconds, at which point add the frozen peppers to stop the cooking process. Pour the jelly into a metal container and chill in an ice bath for about 1 hour until it sets, or overnight in the refrigerator.
  • For the pork chops: Using the toothy side of a meat tenderizer, pound the pork chops to about 1/2-inch thickness. Add the blackening seasoning, salt and pepper to the flour and mix thoroughly. Dredge the chops in the seasoned flour, dip in the buttermilk and then back into the flour (using one hand to work in the flour, and the other for dipping in the buttermilk). Allow to rest for at least a minute or so to allow the breader to set up.
  • Pour the oil into a deep, heavy pot (cast iron is best), enough so that the pork chop has room to float, but there needs to be a few inches of clearance so that it doesn't overflow when you are frying. Heat the oil to 355 degrees F. Use a deep-fry thermometer to get the temperature right; too high and your food will burn on the outside before it is cooked on the inside, and too low your food will come out greasy and soggy.
  • Gently the drop pork chops, 1 or 2 at a time, into the oil; don't crowd the pot. Fry until golden brown on the outside, about 7 minutes. Serve with the pepper jelly.

Categories     Pork

Time 14m

Yield 4 serving(s)

Number Of Ingredients 6

1 cup pork, cubed
1 cup self raising flour
1 teaspoon baking powder
water
1 pinch salt
flour, for dusting

Steps:

  • Put the self raising flour into bowl. Add a tsp of baking powder. Add seasoning. Gradually add water until you have a smooth double cream consistency - not too runny.
  • Cut up pork into cubes around 1 inch or slightly smaller. Dip in flour and then dip in the batter.
  • Heat up some oil in a pan, wok or deep fat fryer. It requires a good amount if you are using a pan - you want the balls to be submerged in the oil. Remember to turn the heat down once it gets to the right temperature. And remember to never leave unattended.
  • Add the coated pork to the hot oil, a few at a time. You want them to go a nice golden brown colour - will take about 4-6 minutes.
  • Take out and blot on kitchen roll. You can serve these immediately or cool them down and freeze.
