Southern green beans are easy to make, tender beans that are flavored with bacon or ham hocks. These green beans are a must-have side dish on every Southern table.

Number Of Ingredients 7

2 lbs. green beans (use frozen or fresh)
6-7 slices bacon, chopped into one inch pieces
6 cups chicken stock (you may not need all of this--just cover the beans in the pot)
2 tbsp. garlic powder
1/2 tbsp. salt
1 tsp black pepper
4 tbsp. unsalted butter

Steps:

  • If using fresh green beans, snap off the ends then snap the beans into 2-inch pieces. Wash thoroughly.
  • Cook bacon until crispy, then remove from pot.
  • Add green beans to bacon grease and stir to coat well.
  • Add bacon back to pot. Add broth, garlic powder, salt, and pepper.
  • Bring to a boil then turn down to a simmer and cook until tender, 30-45 minutes. Taste periodically and add seasonings as necessary.
  • Add butter to pot when beans are almost done. Season with additional salt and pepper as needed.

These are FANTASTIC! This recipe was revised from an old family favorite! My southern roots come through on this one! Either way the beans end up melting in your mouth and the cooked bacon adds more flavor! REALLY tasty! Good for cookouts or to compliment any meal!

1 (16 ounce) bag frozen green beans or 2 (14 ounce) cans green beans, do not drain
4 -6 slices bacon
1 large onion, sliced large chunks
1 dash red pepper flakes (optional)
salt and pepper

Steps:

  • Put green beans in pot- if canned add juices, if frozen add water enough to see but not cover beans- cook on medium heat.
  • Fry bacon until cooked but not too crisp- drain on paper towel.
  • Cut onion in large (thick) slices and break rings apart in to beans.
  • Crumble or rip bacon apart add to beans.
  • Add spices to taste.
  • Let cook for a few hours on low heat.
  • If want to serve sooner- turn heat up and cook until water boils down.
  • OR can put in crockpot on low all day long and let simmer.

1 tablespoon vegetable oil
8 ounces country ham, ripped into small shards
1 1/2 pounds green beans, trimmed and halved
2 1/2 cups low-sodium chicken stock
1/2 teaspoon freshly cracked black pepper
1/2 teaspoon kosher salt

Steps:

  • Place a large nonstick skillet over medium heat. Pour in the vegetable oil. Spread the ham in the skillet in a thin layer. Cook, stirring occasionally, until it turns brown and crispy. Remove half of the ham shards from the skillet and place on a paper-towel lined plate. Leave the remaining ham and any fat that has rendered in the skillet.
  • Add the green beans, chicken stock, pepper and salt to the skillet. Reduce the heat to medium-low and simmer, stirring occasionally, until the stock reduces and darkens in color and the beans are soft but hold their shape, about 30 minutes. Pour into a serving platter and sprinkle with the reserved crispy ham.

1 quart of Green Beans
2 ounces of Pork side meat, or similar
1 teaspoon of Sugar
½ teaspoon of Black Pepper
Salt to taste

Steps:

  • Pour green beans into a colander to remove any liquid from jar or can.
  • Rinse lightly with cool running water, let drain.
  • Slice the pork side meat into ½ thick slices.
  • Place pork in a sauce pot over medium heat.
  • Cook meat until the fat sections appear translucent in color. Remove the meat if desired but leave the rendered fat in the pot to season the beans as they cook.
  • Add 2 cups of warm water.
  • Add the drained green beans. Add more water if needed to reach about 1 inch over top of beans.
  • Add Sugar
  • Add Black Pepper
  • Add Salt
  • Stir well and bring to a low boil. Cover pot, REDUCE heat to medium-low, simmer 30-45 minutes or until done.
  • Taste a bean or two to see if they are cooked to your desired tenderness. Add more salt if needed, or more water if needed to finish cooking the beans to your taste preference.
  • Remove from heat when done, cover until ready to serve.
  • Serve warm and Enjoy.

1 small onion, minced
2 tablespoons red wine vinegar

Steps:

  • Cook green beans in 1-inch simmering water, covered, for 6 minutes. Drain and set aside. Return skillet to stove and set burner to medium high. Add bacon and brown. When fat begins to render, add chopped onions to the pan and cook until tender with the bacon. Add cooked green beans to the pan and turn to coat in bacon drippings and onions. When the beans are hot and bacon crisp at edges and onions translucent add vinegar to the pan and season with beans with sugar. 1 cup chicken broth, plus more if needed

1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape.
