BEEF QUESADILLAS
Quick-cooking ground beef is the perfect ingredient for on-the-run cooks. Try serving these quesadillas with your favorite taco toppings, such as sour cream, salsa, guacamole, chopped tomatoes, shredded lettuce and sliced olives.

- In a large skillet, cook the beef over medium heat until no longer pink; drain. Stir in the beans, chilies, oregano, cumin and salt. Cook over medium-low heat for 3-4 minutes or until heated through. , Brush one side of each tortilla with butter. Spoon 1/2 cup of the meat mixture over half of unbuttered side. Sprinkle with 1/3 cup cheese; fold in half. , Place on a lightly greased baking sheet. Sprinkle with paprika. Bake at 475° for 10 minutes or until crisp and golden brown. Cut into wedges.

Either leftover roast beef or deli beef works well in this recipe from Marian Platt of Sequim, Washington. To complement the hearty quesadillas, she dresses up purchased salsa.

- In a small bowl, combine the salsa, cilantro and lime juice. In another bowl, combine the beans, corn and 1/2 cup salsa mixture. Set remaining salsa mixture aside., Place beef, cheese and bean mixture on half of each tortilla; fold over. In a large skillet over medium heat, cook quesadillas in 1 tablespoon oil for 1-2 minutes on each side or until cheese is melted, using additional oil as needed. Cut into wedges. Serve with reserved salsa mixture.

- Heat the olive oil in a large skillet. Add the onions and peppers and saute until starting to soften, about 4-5 minutes. Add the ground beef and cook until browned. Drain any excess oil off the pan.
- Transfer the beef to a plate or bowl, and wipe out the skillet. Line up your tortillas on a large work surface, or, if you're short on space, just do them one at a time. Spread about 1/2 cup of cheese on each tortilla, covering the entire surface. Divide the ground beef evenly between the tortillas, spreading it on one half of each tortilla.
- Melt a pat of butter in the skillet and place the tortilla face up in the center. Cook on medium heat until well browned, then use a spatula to fold the cheese-only side over the beef side. Press down slightly to get the cheeses to melt together. Remove from the skillet and place on a wire rack in a 200 degree oven to keep warm. Repeat with remaining quesadillas.

- Heat olive oil in a large non-stick frying pan (about a 10-inch or 12-inch pan) over medium heat. Once oil is hot, add ground beef, chili powder, chipotle pepper, oregano, cumin, garlic powder, onion powder, salt, black pepper and cayenne pepper (if using). Cook, stirring occasionally and breaking the ground beef into crumbles (smaller pieces), until the ground beef is fully cooked through, about 8 to 10 minutes or so. Stir in tomato paste and stock/broth and cook 1 to 2 minutes more. Remove beef from the pan and place into a bowl. If there is any excess grease, drain/remove.
- Distribute about 8 ounces (or 2 cups) of cheese among all tortillas (on one side of them). Note: Reserve the remaining 4 ounces (or 1 cup of cheese).Also, if your tortillas are smaller or larger than the size I used, the quantity you yield may vary.
- Distribute ground beef on top of cheese. Then, sprinkle remaining 1 cup (or 4 ounces) of cheese on top of ground beef. Fold over each tortilla so it's a half-moon shape.
