ITALIAN-RUBBED CHICKEN

A zesty way to prepare chicken on the stove. I came up with it when my oven stopped working and had to prepare everything on the stove top. I typically use the Kraft Zesty Italian dressing and have only used chicken legs and thighs. You can use other parts of the chicken, but cooking times may vary.

Number Of Ingredients 3

3 -4 chicken legs
3 -4 chicken thighs
1/2 cup Italian dressing

Steps:

  • Place the chicken in a bowl and add the dressing.
  • Let marinate for at least 30 minutes (1-2 hours is best) in the fridge. Shake it or mix it occasionally.
  • Turn the stove on to medium heat and place the chicken in to a frying pan and cover for 10 minutes and save the leftover dressing.
  • Turn over after 10 minutes and cover and cook for another 10 minutes. (if it seems to be burning turn down the heat).
  • Uncover and add the leftover dressing, turning each piece to coat it.
  • Continue to cook for about another 10-15 minutes turning occasionally. The dressing will become dark golden color.
  • Enjoy!

1 Tbsp. oil
4 chicken drumsticks (1 lb.), skin removed
1 can (14-1/2 oz.) fire-roasted diced tomatoes, undrained
1/3 cup canned tomato paste
1 large onion, chopped
1/4 cup KRAFT Grated Parmesan Cheese
1/2 cup KRAFT Shredded Italian* Five Cheese Blend

Steps:

  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 5 min. or until evenly browned, turning occasionally.
  • Combine tomatoes and tomato paste; pour over chicken. Add onions; cover. Simmer on medium-low heat 20 min. or until chicken is done (165°F), stirring occasionally.
  • Remove from heat. Stir in Parmesan. Top with shredded cheese; let stand, covered, until melted.

  • To make the marinade, combine all marinade ingredients in a small mixing bowl or a container that has a tight lid. Mix or shake well to combine all the ingredients.
  • Add chicken drumsticks to a large gallon-sized Ziploc. To the chicken, pour in the marinade. Seal the Ziploc and shake. I often “massage’ the marinade into the chicken pieces.
  • Refrigerate the chicken and let marinate for 4 hours. Remember to shake or massage the marinade into the chicken pieces about every hour or so until you are ready to get cooking. It can marinate overnight as well.
  • Preheat your grill (or oven if using an oven - see instructions above). While waiting for it to preheat, remove chicken from the refrigerator and let come to room temperature on the counter for about 15 minutes.
