EPCOT'S CANADIAN CHEDDAR CHEESE SOUP

- In a large stock pot, add the bacon pieces and cook for about 5 minutes.
- Add the onion, celery, and butter. Cook for another 5 minutes, stirring frequently.
- Sprinkle the flour over the mixture and continue stirring over medium heat for another 3 or 4 minutes.
- Slowly whisk in the chicken broth and bring the soup to a boil. Lower the heat and allow it to simmer for about 15 minutes.
- Add the milk and continue to simmer, without letting it come to a boil for another 10-15 minutes.
- Remove the soup from heat and add the Tobasco, Worcestershire, and Sharp White Cheddar. Stir until the cheese is melted. (If you want a smoother soup, use an immersion blender at this point)
- Mix in your desired amount of salt and pepper and serve the soup hot, garnished with chopped green onions.

- In large deep pot, cook bacon over medium heat for 5 minutes, stirring, until lightly browned. Add onion, celery and butter; saute until onion has softened, about 5 minutes.
- Add flour and cook, stirring constantly, for about 4 minutes over medium heat. Whisk in chicken broth and bring to a boil for 1 minute. Reduce heat to a simmer; cook 15 minutes, stirring occasionally.
- Add milk; continue to simmer 15 minutes. Do not bring to a boil.
- Remove from heat; stir in cheese, hot pepper sauce, Worcestershire sauce, salt and pepper until cheese is melted and the soup is smooth. Stir in warm beer; if soup is too thick, add some warm milk.
- Serve soup hot, garnished with scallions.
CANADIAN CHEDDAR SOUP
I got this delicious recipe from my friend, Lydia, that owns a rubber stamping store in our town. I design stamps for her. Her husband is the one that makes this yummy soup. I first had it at her home and had seconds, but didn't want to act "piggy" and ask for thirds, so I made it myself and guess what--I had it for breakfast, lunch and snacks during the day. I did this till it was gone and over the course of a couple of days, I ate the whole thing. Don't let the parsnips scare you, but please do add them. They give flavor but you do not taste them.

Steps:
- Place the 3 tablespoons butter in a large pot on the stove.
- Add the carrots, celery, onion, and parsnips.
- Simmer, covered, for about 10-12 minutes (you want to make sure they are steamed till quite done, adding a fews drops of water if necessary).
- Mix the next 2 tablespoons butter and flour into the veggies to make a slight roux.
- Gradually stir in the three cans of beef broth, stirring till smooth (6-8 minutes).
- Add the Cheddar cheese and stir till melted.
- Slowly add the half-and-half.
- Heat but DO NOT boil, stirring constantly about 3 minute.
- Ladle into bowls and enjoy!

- Place bacon in Dutch over over medium heat. Cook for 5 minutes, or until lightly browned, stirring.
- Add onion, celery and butter. Sauté 5 minutes.
- Add flour and stir 4 minutes on medium.
- Whisk in stock. Bring to a boil and boil 1 minute.
- Reduce heat to simmer. Cook 15 minutes, stirring.
- Add milk and simmer 15 minutes more. Do not boil after adding milk.
- Remove from heat and stir in cheese, Tabasco, Worcestershire sauce, salt and pepper, to taste, until soup is smooth.
- Stir in beer. If soup is too thick, thin with warm milk.
- Serve garnished with scallions or chives.

- 1. Cut bacon into 1/4 inch pieces. This is much easier if the bacon is very cold or even a bit frozen. 2. Cook bacon is a pot or Dutch oven over medium heat until lightly browned, about 5 minutes. 3. Add onion, celery, and butter and saute for 4-5 minutes or until onion is softened. 4. Add flour and saute for a few minutes over medium heat. Whisk in chicken stock and milk. Stir consistently until you see the first bubbles forming. Turn down to low heat and simmer uncovered for about 25 minutes. 5. Remove from heat and stir in cheese, Tabasco, Worcestershire sauce, and beer. If you want a smoother texture you can use an immersion blender (I like the texture the way it is). 6. Add salt and pepper to taste and serve with chopped scallions or chives.
