CHOCOLATE-ORANGE MERINGUE CUPCAKES

- Make the cupcakes: Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with liners. Put the cocoa powder in a large bowl. Microwave the milk and water in a small microwave-safe bowl until steaming, 1 to 2 minutes; pour over the cocoa powder and whisk until smooth. Let cool slightly.
- Whisk the flour, baking soda and salt in a small bowl. Whisk the sugar, vegetable oil, egg, vanilla and orange zest into the cocoa mixture, then whisk in the flour mixture.
- Divide the batter among the prepared muffin cups, filling them three-quarters of the way. Bake until the tops of the cupcakes spring back when gently pressed, 20 to 25 minutes. Let cool 5 minutes in the pan, then remove to a rack to cool completely.
- Make the ganache: Microwave the chocolate and heavy cream in a microwave-safe bowl in 30-second intervals, stirring, until melted, about 1 minute. Let sit until thickened but still pourable, 5 minutes. Spoon over the cupcakes, gently spreading to cover. Let set 10 minutes.
- Meanwhile, make the meringue: Whisk the egg whites, sugar and cream of tartar in a large heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water). Cook, whisking, until the sugar dissolves, 2 to 3 minutes. Remove from the heat; beat with a mixer on medium-high speed until stiff glossy peaks form, 5 to 8 minutes. Tint with orange food coloring. Generously spread the meringue on the cupcakes and lightly brown with a kitchen torch.
ORANGE CREAM MERINGUES WITH CHOCOLATE SAUCE

- Make meringues:
- Preheat oven to 175°F and line a baking sheet with parchment paper.
- Beat whites with cream of tartar and salt using an electric mixer at high speed until they just hold stiff peaks. Gradually add sugar, beating at high speed until whites hold stiff, glossy peaks.
- Spoon meringue into pastry bag and pipe 6 mounds (2 inches in diameter and 2 inches high) on baking sheet.
- Bake meringues in middle of oven until crisp but still white, about 2 hours.
- Turn off oven and let meringues cool in oven 1 hour, then transfer to a rack to cool completely.
- Make sauce and filling:
- Melt chocolate in evaporated milk in a small heavy saucepan over very low heat, whisking until smooth, then cool. (If sauce seems too thick to pour, thin with water.)
- Stir together sour cream and zest in a small bowl.
- Just before serving, make a hole in base of each meringue with your finger and spoon in 1 tablespoon of orange cream. Put each meringue on a plate and spoon 1 tablespoon chocolate sauce over it.

Delicate and delicious. The long cooking time is for leaving the meringues in the turned-off oven overnight.

- Preheat oven to 475F degrees.
- Cover 2 baking sheets with foil.
- Beat egg whites until foamy.
- Add salt and cream of tartar.
- Mix the orange gelatin and sugar together, then add the mixture to the egg whites gradually, a tablespoon at a time, while beating.
- Beat to stiff peaks.
- Carefully fold in the chocolate chips and nuts, if desired.
- Drop batter by teaspoonfuls onto the prepared baking sheets.
- Place the baking sheets into the hot oven quickly, then close the oven door, and turn the oven off.
- Leave the cookies in the oven overnight (8 hours).
- Store in an airtight container.

- Meringues:.
- Beat egg whites until frothy. Add cream of tartar and salt; beat until soft peaks form. Gradually add sugar, beating until mixture is thick and glossy and stands in stiff peaks when beaters are raised.
- Pipe or spoon meringue into eight 3/4 inch rounds on a foil lined baking sheet, using the back of a spoon to form nests. Leave enough meringue to pipe into 8 small "kisses" to top the dessert.
- Bake at 250F for 1 1/2 hours, or until meringues are just slightly coloured. Do not open oven door. Turn heat off, allow meringues to dry out in the oven for at least 4 hours, or overnight.
- GINGER-RHUBARB SAUCE:.
- In a large saucepan, combine rhubarb, sugar, orange liqueur or orange juice, and ginger. Bring to a boil, stirring often; reduce heat and simmer, uncovered, for 15 minutes.
- To serve: Place a meringue nest on each dessert plate; fill with sauce, add a dollop of whipped cream, top with a meringue kiss and garnish with sprinkles of orange rind, or slivers of candied ginger.

Add vinegar and salt to egg whites; beat on medium speed until soft peaks form. - Make the sauce:
- In a small heavy saucepan combine the cream and the brown sugar, bring the mixture to a boil over moderately high heat, whisking occasionally, and boil it, whisking, until the brown sugar is dissolved. Remove the pan from the heat, add the chocolates, and whisk the mixture until they are melted. Whisk in the butter and the cinnamon, whisking until the sauce is smooth, and let the sauce cool slightly. The sauce may be made 1 week in advance and kept covered and chilled. Reheat the sauce over very low heat, stirring occasionally, until it is warm. Makes about 1 1/2 cups.
- Make the meringues:
- In a bowl with an electric mixer beat the egg whites until they are foamy, add the cream of tartar, and beat the whites until they hold soft peaks. Add the sugar, 1 tablespoon at a time, beating, and beat the meringue until it holds stiff peaks. Sift the cocoa powder and the cinnamon over the meringue and fold them in gently but thoroughly. Transfer the mixture to a pastry bag fitted with a 1/2-inch star tip and pipe it into 5-inch rounds on baking sheets lined with parchment paper. Bake the meringues in the middle of a preheated 250°F. oven for 1 1/2 hours and let them cool on the sheets. The meringues may be made 10 days in advance and kept, separated with sheets of wax paper, in an airtight container. Arrange 1 meringue on each of 2 plates and top each meringue with a scoop of the ice cream and some of the cinnamon chocolate sauce.
