1 tablespoon brown sugar
1 tablespoon melted butter
¼ teaspoon ground cinnamon
1 ½ cups quick-cooking oats
1 ¼ cups all-purpose flour
2 tablespoons all-purpose flour
½ cup brown sugar
1 ½ teaspoons ground cinnamon
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup unsweetened applesauce
½ cup milk
¼ cup vegetable oil
1 egg, lightly beaten
1 teaspoon vanilla extract
1 apple - peeled, cored, and chopped

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 12-cup muffin pan or line with paper liners.
  • Stir 1/4 cup oats, 1 tablespoon brown sugar, melted butter, and 1/4 teaspoon cinnamon together in a small bowl; set aside.
  • Whisk together 1 1/2 cups oats, flour, 1/2 cup brown sugar, 1 1/2 teaspoons cinnamon, baking powder, baking soda, and salt together in a large bowl.
  • Stir applesauce, milk, oil, egg, and vanilla extract together in a bowl. Stir applesauce mixture into flour mixture just until all ingredients are moistened; stir in apple. Spoon apple mixture into prepared muffin cups about 2/3 full; sprinkle oat topping mixture evenly over each muffin.
  • Bake in the preheated oven until a toothpick inserted near the center comes out clean, about 15 minutes.

⅓ cup tightly packed brown sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
1 ½ tablespoons butter, cut into small pieces
2 cups peeled and finely chopped apples
1 teaspoon fresh lemon juice
¾ cup white sugar
½ cup honey
½ cup buttermilk
½ cup oil
2 large eggs
2 teaspoons vanilla extract
1 cup quick-cooking oats
2 cups whole wheat flour
2 ½ teaspoons baking powder
2 teaspoons ground cinnamon
½ teaspoon baking soda
½ teaspoon nutmeg
½ teaspoon salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 18 muffin tin cups with cupcake papers.
  • Mix brown sugar, all-purpose flour, and cinnamon together in a small bowl for crumb topping. Add butter and press with the back of a spoon or your fingers to incorporate it into the sugar mixture. Mix until crumbly and set aside.
  • Toss apples with lemon juice in a large bowl. Mix in sugar, honey, buttermilk, oil, eggs, and vanilla until combined. Stir in oats.
  • Combine whole wheat flour, baking powder, cinnamon, baking soda, nutmeg, and salt in a smaller bowl. Gently fold flour mixture into the wet ingredients with a large spoon, until flour is just mixed in. Spoon batter into the prepared cupcake papers and sprinkle about 1 teaspoon crumb topping on top of each one.

Steps:

  • Preheat oven to 400 degrees F.

2 cups Robin Hood oats or 2 cups Old mill oats
1/3 cup Robin Hood Nutri Flour Blend
1/2 cup brown sugar, packed
2 teaspoons baking powder
1 1/2 teaspoons cinnamon
1/2 teaspoon baking soda
1 cup nonfat vanilla yogurt or 1 cup plain yogurt
2 egg whites or 1 whole egg
1/4 cup canola oil
1 large apple, peeled and grated

Steps:

  • Preheat oven to 400°F Line a 12 cup muffin pan with paper liners.
  • Place oats in a food processor or blender. Process until oats are finely ground.
  • Combine fine ground oats, fliour, brown sugar, baking powder, cinnamon and baking soda in a large bowl. In a separate bowl, whisk yogurt, egg whites and canola oil,. Stir liquid ingredients into dry ingredients, until almost blended. Gently stir grated apple into batter until evenly mixed.
  • Spoon batter into prepared muffin pan.
  • Bake in a preheated oven for 18-20 minutes or until a toothpick inserted in center of muffin comes out clean,.
  • TIPS: For a time saver, process extra oats, and store in an airtight container in the freezer so you can have them on hand.

1 tablespoon cinnamon

3/4 nutmeg

2 1/2 apples, peeled and diced

Steps:

  • Sift dry ingredients together. Combine wet ingredients and stir into dry ingredients. Mix well. Stir in apples. Fill muffin tins full. Bake for 15-20 minutes @ 350. Makes 15.
  • I like to add 1/8 Celsius flak seed and 1/8 Celsius millet for extra fiber.
  • Also, you can use buttermilk or 2 % milk. Or plain yogurt if you must.

2 bananas, mashed
1 egg
1/4 cup oil
1/3 cup low-fat milk
1/2 teaspoon vanilla
3/4 cup sugar
2 medium apples, chopped into small pieces
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 3/4 cups oats
3 teaspoons baking powder
1 pinch cinnamon
1/4 cup raisins or 1/4 cup dried cranberries
1/4 cup walnuts (optional)

Steps:

  • Preheat oven to 350F degrees. Grease a 1/3-cup muffin pan or line with paper cups .
  • In a bowl combine bananas, milk, oil, sugar, vanilla and egg. In another bowl whisk together dry ingredients - flours, oats, cinnamon and baking powder. Add dry mixture to wet mixture, mix well. Dust apples, raisins, and walnuts (if using) lightly to cover with flour, then fold inches.
  • Spoon the mixture evenly into muffin cups. Bake for 20-25 minutes or until tester comes out clean.
  • Make sure you remove muffins immediately after they are done. Let them cool on a wire rack.
