PASTA SALAD WITH PESTO



Pasta Salad with Pesto image

Zesty pesto, green peas, pine nuts, and mozzarella pearls make a flavorful and pretty pasta salad.

1 pound fusilli pasta
3 tablespoons extra-virgin olive oil
1 cup homemade or store-bought pesto
2 tablespoons freshly squeezed lemon juice, from 1 lemon
1½ cups frozen peas, defrosted, divided
¾ cup mayonnaise, best quality such as Hellmann's or Duke's
⅓ cup freshly grated Parmigiano-Reggiano
⅓ cup pine nuts, toasted (see note)
One 8-oz package mozzarella pearls
½ teaspoon salt
½ teaspoon freshly ground black pepper
2 tablespoons fresh chopped basil, for serving

Steps:

  • Cook the fusilli in a large pot of boiling salted water until fully cooked, 10 to 12 minutes (you don't want al dente pasta here). Drain and toss into a bowl with the olive oil. Cool to room temperature.
  • In the bowl of a food processor fitted with a steel blade, purée the pesto, lemon juice, and ½ cup of the peas. Add the mayonnaise and purée until smooth.
  • Add the pesto-pea mixture to the cooled pasta, along with the Parmesan, ¾ cup of the peas, 3 tablespoons of the pine nuts, the mozzarella, the salt, and the pepper. Mix well, then taste and adjust seasoning, if necessary. (I usually add ¼ teaspoon each more salt and pepper, but it will depend on the saltiness of the pesto you're using and how heavily the pasta water was salted.) Transfer to a serving bowl and sprinkle the remaining peas, pine nuts, and basil over top. Serve at room temperature.
  • Note: To toast the pine nuts, place them in a small dry skillet over medium heat. Cook, stirring frequently, until golden. Watch the nuts carefully, as they can burn quickly, and transfer them to small bowl immediately after cooking (they will continue to brown in the hot pan).
  • Make-Ahead Instructions: The components of this pasta salad can be made ahead a day ahead of time; just keep everything separate and toss together right before serving.

1 teaspoon salt, or to taste

1 ½ teaspoons Dijon mustard
2 cloves garlic, chopped

½ cup chopped fresh oregano
¼ cup chopped fresh cilantro
2 teaspoons hot pepper sauce (e.g. Tabasco™)
⅓ cup red wine vinegar
½ cup olive oil
1 teaspoon lemon juice
1 (4 ounce) package grated Parmesan cheese
4 roma (plum) tomatoes, chopped
6 green onions, chopped
1 (4 ounce) can minced black olives
1 (16 ounce) package farfalle (bow tie) pasta
½ cup pine nuts
1 cup shredded mozzarella cheese

Steps:

  • In a large bowl, whisk together the sugar, salt, pepper, onion powder, mustard, garlic, basil, oregano, cilantro, hot pepper sauce, red wine vinegar, olive oil, lemon juice, and Parmesan cheese. Add the tomatoes, green onions and olives to the bowl, and stir to coat. Refrigerate.
  • Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 7 minutes, or until tender. Drain, and rinse with cold water to cool. Add pasta to the bowl of dressing, and mix well. Top with mozzarella cheese and pine nuts. Refrigerate for at least 1 hour before serving.

My 10-year-old daughter Maya and I created this easy but delicious pasta salad, featuring her favorite pesto flavors. This salad is great as the center of a light dinner, or as a side dish.

1 (16 ounce) package corkscrew-shaped pasta (fusilli)
¾ cup chopped fresh basil
¾ cup shredded Parmesan cheese
⅓ cup pine nuts
⅓ cup extra-virgin olive oil
1 clove garlic, diced
½ cup finely diced red onion
½ cup finely diced radicchio
1 tablespoon mayonnaise, or to taste
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  • Combine basil, Parmesan cheese, pine nuts, oil, and garlic in a food processor; blend to make pesto.
  • Toss pasta with pesto and mix in red onion, radicchio, and mayonnaise. Season with salt and pepper. Refrigerate for at least 30 minutes before serving.

I LOVE pesto pasta, but it seems whenever I get it from the deli, it's either too salty or too oily or both. Also, homemade pesto pasta salads tend to rely on jarred pesto sauce, all of which I find are also too oily and/or salty. Well, you know what they say about what to do if you want something done right, and this recipe is the result. I hope you enjoy it as much as I do!

1 (16 ounce) box rotini pasta
2 packages knorr pesto sauce mix, unprepared
1/3 cup olive oil
1 cup water
5 -6 garlic cloves
1 cup grape tomatoes
1 cup black olives
1/2 cup fresh basil, coarsely chopped
3 tablespoons grated parmesan cheese

Steps:

  • Cook pasta as indicated on package. Rinse with cold water, drain, and set aside in large bowl.
  • Combine water, olive oil, and dry Knorr pesto mix together in a small saucepan. Bring to boil over medium-high heat, stirring often.
  • Lower heat to medium-low and simmer for 5 or more minutes, stirring occasionally.
  • Peel and wash garlic. Chop finely and add to bowl with pasta.
  • Wash tomatoes and slice lengthwise. Add to pasta.
  • Dice black olives and add to pasta.
  • Add basil to pasta and stir until all ingredients are well mingled.
  • Pour sauce over pasta mixture and stir.
  • Sprinkle Parmesan over pasta and stir well.
  • Chill overnight for best results.

1/3 cup prepared basil pesto (I use Classico)
1/2 cup mayonnaise
2 teaspoons fresh lemon juice

1 cup frozen baby peas

Steps:

  • Bring large pot of water to boil, add pasta, and cook over high heat for 9 minutes. Then add frozen peas to the water in which the pasta's cooking, and cook an additional 4 minutes.
  • Remove from heat immediately, and rinse with plenty of cold water. Drain well. Place in large mixing bowl, and toss with remaining ingredients. Spoon into serving dish and chill.

I came up with this one day when trying to use up ingredients I already had. The pine nuts give the salad a great, nutty flavour and add a bit of crunch to the texture. Serves 4 as a side dish. Update: I have added some olive oil to the pasta salad to moisten it up a bit, based on a review.

2 cups dry pasta (penne, fusilli or bow-tie work best)
5 ounces fresh mozzarella cheese
10 cherry tomatoes
4 tablespoons pesto sauce
1 tablespoon olive oil
2 tablespoons very finely grated parmesan cheese
1/4 cup pine nuts

Steps:

  • Cook the pasta according to the directions on the package.
  • Meanwhile, cut the mozzarella into small cubes and quarter the cherry tomatoes.
  • When the pasta is cooked, drain it and rinse it in cold water until the pasta is cold. Drain it again.
  • Mix the pesto sauce, olive oil and parmesan in with the pasta.
  • In a large serving bowl, mix the pasta with the mozzarella and tomatoes.
  • Sprinkle the pine nuts over the top and serve.

1 (14 oz.) can(s) artichocke hearts, drained and quartered
1 (10 oz.) - container grape tomatoes, halved lengthwise
1 (6 oz.) can(s) medium black olives, drained and halved lengthwise
1 - green bell pepper, diced
1 (20 oz.) package(s) cheese-filled tortellini, cooked al dente, drained (fresh or frozen)
1/3 cup(s) evoo, more if needed (extra virgin olive oil)
1/4 cup(s) parmesan cheese, i use the kind in the "green can" (kraft), but you could definately use fresh finely grated
1 (8 oz.) jar(s) basil pesto
1/2 teaspoon(s) salt, more if needed
2 teaspoon(s) minced garlic (i cheat and use the kind in the little jar as i hate chopping and grating garlic))
12 oz. - good mozzarella cheese (fresh if you like), cubed
8 oz. - (or half of a 1 lb. box) rotini noodles, cooked al dente and drained

Steps:

  • Cook pastas, set aside to cool a bit.
  • In large bowl or punch bowl, add rest of ingredients folding gently til well mixed.
  • Gently fold in pastas well.
  • Adjust seasonings to taste, meaning, add more salt, parmesan, etc., til it's to your own liking.
  • Serve immediately, or refrigerate.
  • *If serving this much later or the next day, you'll need to "refresh" this. Just add a bit more olive oil, salt and parmesan cheese before serving as the noodles suck up the oil and seasonings a bit.
  • *This salad is best room temp or even slightly warm.
