PAN-SEARED TUNA WITH AVOCADO, SOY, GINGER, AND LIME



Pan-Seared Tuna with Avocado, Soy, Ginger, and Lime image

2 big handfuls fresh cilantro leaves, finely chopped
1/2 jalapeno, sliced
1 teaspoon grated fresh ginger
1 garlic clove, grated
2 limes, juiced
2 tablespoons soy sauce
Pinch sugar
Sea salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 (6-ounce) block sushi-quality tuna
1 ripe avocado, halved, peeled, pitted, and sliced

Steps:

  • In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.
  • Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish. Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.

¼ teaspoon cayenne pepper
½ tablespoon butter
2 tablespoons olive oil
1 teaspoon whole peppercorns

Steps:

  • Season the tuna steaks with salt and cayenne pepper.
  • Melt the butter with the olive oil in a skillet over medium-high heat. Cook the peppercorns in the mixture until they soften and pop, about 5 minutes. Gently place the seasoned tuna in the skillet and cook to desired doneness, 1 1/2 minutes per side for rare.

2 pieces Ahi Tuna Steaks
2 teaspoons Mustard Paste
½ cup Sesame Seeds
½ teaspoon Chili Powder
3 tablespoons Coconut Oil
½ cup Tamari Sauce
½ teaspoon Ginger (grated)
2 teaspoons Lemon Juice
1 teaspoon Maple Syrup
1 teaspoon Sesame Oil (raw)

Steps:

  • Start by patting the ahi tuna dry with a paper towel. Then, place them in a mixing bowl and add the mustard paste to it. Mix them so that they get covered with it.
  • Then, put the sesame seeds on a plate and roll the tuna pieces in it until they get completely covered in it. Put them back in the mixing bowl and let them rest for 5 minutes.
  • After that, pour the coconut oil into a frying pan and heat it on medium heat. Then, add some chili powder to the pan and add the marinated fish into it.
  • Cook one side of the fish for 2-3 minutes and then flip it. Cook the other side for the same amount of time. When the fish is cooked, take it out of the pan.
  • For the dipping sauce, put the tamari sauce in a small bowl. Then, add the grated ginger, lemon juice, and maple syrup to it. Lastly, add some sesame oil and whisk everything together.
  • Serve the seared peppered ahi with that delicious spicy dipping sauce.

1 ahi tuna steak, 6 ounces
2 teaspoons five-spice powder, available on spice aisle
1 teaspoon grill seasoning, such as Montreal Steak Seasoning, or salt and coarse pepper
Cooking spray or vegetable oil, for brushing the grill pan
5 ounces, half a sack, mixed prewashed baby salad greens
2 radishes, sliced
1/4 European cucumber, thinly sliced
1/2 teaspoon wasabi paste
1 tablespoon rice vinegar or rice vinegar
1 tablespoon soy sauce
3 tablespoons -virgin olive oil
Salt and freshly ground black pepper

Steps:

  • Coat your steak with a combination of five-spice powder and grill seasoning or salt and pepper. Heat a grill pan or griddle over high heat. Spray grill surface or wipe with a thin layer of oil. Add tuna steak to the hot cooking surface and sear tuna 2 minutes on each side. Remove tuna from heat.
  • Combine greens, radishes and cucumber in a bowl. In a smaller bowl, whisk wasabi, vinegar and soy sauce. Whisk in oil to combine dressing. Drizzle dressing over your salad and toss to coat evenly. Slice tuna on an angle and arrange on the salad.

2 fresh ahi tuna, steaks (yellowfin tuna, about 4 oz. each, at least 1.5-inch thick)
2 tablespoons soy sauce
1 tablespoon toasted sesame oil, see notes
1 tablespoon honey, see notes
1/2 teaspoon kosher salt
1/4 teaspoon black pepper, to taste
1/4 teaspoon cayenne pepper (optional)
1 tablespoon canola oil or 1 tablespoon olive oil
green onion, toasted sesame seeds, and lime wedges for serving (optional)

Steps:

  • Pat the ahi tuna steaks dry with a paper towel. Place on a plate or inside a plastic bag.
  • Mix the soy sauce (2 tablespoons), toasted sesame oil (1 tablespoon), honey (1 tablespoon) kosher salt (1/2 teaspoon- OMIT if marinating for more than a couple hours, see notes), pepper (1/4 teaspoon), and cayenne pepper (1/4 teaspoon) until honey is fully dissolved. Pour over the ahi tuna steaks and turn over to coat completely. Optional: allow to marinate for at least 10 minutes, or up to overnight in the refrigerator. Also optional: Reserve a spoonful or two of the marinade before coating the fish for drizzling on top after you've cooked it.
  • Heat a medium skillet (preferably non-stick or a well-seasoned cast iron skillet) on medium-high to high until very hot ( or medium medium-high for nonstick). I recommend giving cast iron 3-5 minutes to get hot and nonstick about 1 minute, depending on how thick it is.
  • Add the canola oil (1 tablespoon) to the hot pan. Sear the tuna for 2 minutes on each side for medium rare (1.5 minutes on each side for rare; 3 on each side for medium). (Note: different burners get hotter depending on your stove. Use your best judgement whether you use medium, medium-high, or high heat, as the marinade may burn if too high heat is used).
  • Remove to a cutting board and allow to rest for at least 3 minutes. Slice into 1/2 inch slices and serve garnished with green onions, toasted sesame seeds, and a squeeze of fresh lime juice, if desired.
