TURKEY TOURTIERE (TURKEY MEAT PIE)
This Turkey Tourtiere (meat pie) recipe is a spin on a French Canadian classic. I'm using turkey instead of pork to make this dish lighter. Perfect for Thanksgiving, it's my favorite winter comfort food!

- Preheat oven to 350ºF.
- Bring water to a boil. Add potatoes and boil for about 8 minutes, until they are tender. Strain and set aside.
- Using a deep pan or a large pot over high heat, add oil, garlic, onions and celery. Cook for 5 minutes, until onions and celery are tender.
- Add ground turkey and water. Break apart the meat and cook until cooked through (about 7 minutes).
- Add potatoes to the pan and mash as you are mixing them in.
- Add cloves, cinnamon and all spice and mix well.
- Add about 2 tsp kosher salt and mix well.
- Lower heat to low, cover and cook for 30 minutes. Check on the mixture, stirring every 10 minutes.
- Make your pie dough following the instructions on the package.
- Add ground turkey mix to the the pan with the dough, filling it to the top.
- Cover the pie with remaining dough and close by pressing edges together.
- Put on a sheet tray and bake for 50 minutes. Take the pie out halfway through the cooking process and brush egg on top. This will give the pie a nice golden brown color.
- Serve hot with gravy and freshly ground black pepper.

PICKLED TURKEY IN SWEET SAUCE
I always make this dish for holidays. If it was up to my kids they'd have this dish every week and once any guest tastes this they always want the recipe. Pickled turkeys are widely available in butcher shops in the Northeast U.S. The cooking of the turkey can be made the day before and the sauce made just before serving.

- Leaving the strings on, place the pickled turkey roast in clean water and bring to a boil. Lower the flame to low and cook for one hour.
- Pour off all the water and rinse the roast well.
- Refill the pot with clean water and cook again, this time for several hours until the roast is very tender (the roast should be nearly falling apart when you poke at it with a fork).
- Pour off all the water and rinse again.
- Now combine remaining ingredients in a pot and slowly heat up. When sauch is smooth add turkey roast, coating well on all sides.
- Serve hot and enjoy!

- In a very large bowl, whisk together the soy sauce, honey, sesame oil and half of the ginger. Put the turkey in the bowl, breast side down, and marinate at room temperature for 45 minutes. Turn the turkey and marinate breast side up for 15 minutes.
- Preheat the oven to 350°. Set a rack in a large roasting pan. In a small bowl, combine the salt, pepper and five-spice powder. Remove the turkey from the marinade; reserve the marinade. Set the turkey on the rack, breast side up, and season it inside and out with the salt mixture. Stuff the cavity with the scallions and the remaining ginger. Turn the turkey breast side down on the rack. Add 2 cups of water to the roasting pan. Loosely cover the turkey with a foil tent.
- Roast the turkey for 4 hours, basting with some of the reserved marinade every hour and adding a total of 3 cups of water to the pan during roasting. Turn the turkey breast side up and baste well with the reserved marinade. Roast uncovered for 30 minutes, basting once halfway through cooking. The turkey is done when an instant-read thermometer inserted in the thigh registers 165°.
- Carefully pour the juices from the turkey cavity into the roasting pan and transfer the turkey to a carving board. Let rest in a warm place for 30 minutes.
