- Heat a pan to medium heat and add olive oil.
- Add onion and chili peppers and cook about 5 minutes to soften.
- Add garlic and cook another minute, stirring.
- Add papaya, tomatoes and cilantro. Stir and cook about 5 minutes to soften everything.
- Add vinegar and salt. Reduce heat and simmer about 15 minutes.
- Transfer the batch to a food processor and process to form your salsa. It can be as thick or thin as you'd like.
- Adjust for salt and cool.
- Serve!

PAPAYA SALAD

- Heat a pot over medium-low heat. Add the palm sugar and fish sauce and cook for 2 to 4 minutes. Transfer to a bowl and refrigerate until cool.
- Add the green beans, chiles and garlic to a mortar and pestle; crush to the texture of a fine mince. Add to a serving bowl along with the shredded papaya, cherry tomatoes, chilled palm sugar sauce and lime juice; mix well. Garnish with peanuts and serve.

CHUNKY AVOCADO-PAPAYA SALSA
This is based on a recipe in Kim Sunée's wonderful new book, "A Mouthful of Stars" (Andrews McMeel). Her recipe is more of a salad, a fusion of Thai and Mexican flavors. I loved the idea of combining avocado and papaya, two subtle, creamy fruits, with crunchy, bright-tasting Asian pears and spicy chiles. The first time I saw the recipe I wanted to test it right away, but I didn't have Asian pears. So I used an apple, and loved it. It's the sweet, crunchy fruit that does the trick, and apples and Asian pears both work. There are onions in the original recipe but I've made them optional.

- Gently combine all the ingredients in a bowl. Refrigerate, covered, until ready to use, up to 4 hours.
GRILLED JERK CHICKEN WITH PAPAYA SALSA
Steps:
- MAKE MARINADE
- Blend all marinade ingredients in a blender until smooth.
- MARINATE AND GRILL CHICKEN
- Divide the chicken pieces and marinade in 2 sealable plastic bags. Seal the bags, pressing out excess air, then turn bags over several times to distribute marinade. Put bags of chicken in a shallow pan and marinate, chilled, turning once or twice, for 1 day.
- Let chicken stand at room temperature 1 hour before cooking.
- COOK CHICKEN USING CHARCOAL GRILL
- Open the vents on the bottom of the grill and on the lid. Light a large chimney of charcoal briquettes (about 100) and pour them evenly over one side of a bottom rack (you will have a double or triple layer of charcoal).
- When the charcoal turns grayish white and you can hold your hand 5 inches above the rack for 3 to 4 seconds, sear the chicken in batches on a lightly oiled rack over the coals until well browned on all sides, about 3 minutes per batch. Move the chicken as seared to the side of the grill with no coals underneath, then cook, covered with the lid, until cooked through, 25 to 30 minutes more.
- Serve the chicken with the papaya salsa.
- COOK CHICKEN USING GAS GRILL
- Preheat the burners on high, then adjust heat to moderate. Cook chicken until well browned on all sides, 15 to 20 minutes. Adjust the heat to low and cook chicken, covered with lid, until cooked through, about 25 minutes more.
- Serve the chicken with papaya salsa.
- COOK CHICKEN USING AN OVEN
- If you can't grill, you can roast the chicken in two large shallow (1-inch-deep) baking pans in the upper and lower thirds of a 400°F oven, switching the position of the pans halfway through the roasting, 40 to 45 minutes total.
PINEAPPLE, PAPAYA & MANGO SALSA
Obviously sweet because of the fruit but a slight hint of heat because of the pepper. We love this on grilled ahi, steamed uhu or aweoweo. I worked out this recipe after several failed attempts. We are blessed to live in Hawaii where fresh-off-the-tree fruit and great pineapples are easy to find, but try it anyway. As a variation, skip the pineapple and use chopped, seeded cucumber. Enjoy!

- Preheat grill (allow 10 minutes for gas grill).
- While grill is heating, prepare fish and make salsa.
- Prepare fish fillets: brush with oil, sprinkle with salt, pepper and seasoning mix.
- Prepare salsa: mix together all ingredients, taking care to keep everything very small. If desired, you can add diced cucumber or red onion, according to your taste preferences. Set salsa aside.
- Prepare heated grill for fish (we use a non-stick spray made for grills to prevent sticking).
- Grill fish 4-5 minutes on each side. When cooking swordfish, don't overcook or it will be dry. Don't wait until it "flakes apart" like other fish - when swordfish is perfectly cooked, there will still be some resistance when you try to cut it apart.
- Serve swordfish with salsa and a wedge of lime.

- To make the salsa, combine the papaya, onion, green and red peppers, chilli, coriander and lime juice in a bowl. Season and set aside.
- Prepare the noodles following pack instructions. Meanwhile, brush both sides of the salmon fillets with oil, then season. Heat a griddle or frying pan to medium-hot and cook the salmon for 3-4 mins on each side, then remove from the pan. (Alternatively, cook the fillets on a barbecue, and pop the lime wedges next to them, flesh-side down, for 2-3 mins.) Drain the noodles and toss with the teriyaki sauce.
- Pile the salad leaves and noodles onto plates. Top with the salmon, spoon over the salsa and serve with a lime wedge.
