CROCK POT CHOCOLATE PECAN CANDY
Steps:
- Pour pecans in bottom of crock pot. Add salt
- Layer chocolate chips, german chocolate bar and white almond bark over nuts
- Cover and cook on LOW for 1 hour.
- Remove lid, stir candy. Cook for ONE additional hour, stirring every 15 minutes.
- Line countertop with waxed paper. Using a small scoop or spoon, place candy clusters on waxed paper.
- Let cool then remove to an airtight container for storage.
- TOPPINGS: holiday sprinkles, sea salt, crushed peppermint, chopped nuts or whatever you can dream up!
TEEDEE'S PECAN CANDY
This is a Louisiana favorite. I have to make it every Christmas for my family.

Steps:
- Grease a 9x13-inch pan with 2 teaspoons butter.
- Combine evaporated milk with sugar in a heavy, large stockpot and place over medium heat. Stir constantly and bring to a boil. Cook the syrup, stirring often, until a candy thermometer reads 235 degrees F (110 degrees C) or a small spoonful of syrup dropped into a glass of cold water forms a soft ball, 5 to 8 minutes.
- Stir pecans and butter into the syrup and continue to cook until solid crystals of candy begin to form on the side of the pot, about 30 minutes. Remove from heat and stir vanilla and almond extracts into candy.
- Pour candy into prepared dish and let cool for 10 minutes before cutting into squares.

- On waxed paper, place pecan halves in pairs 2 in. apart. In a heavy saucepan over medium-low heat, cook and stir the caramels and milk until melted. Pour about 2 teaspoons of caramel mixture over each pair of pecans. Let stand until set., With buttered fingers, shape pecan clusters into balls. Dip in candy coating. Place on waxed paper-lined baking sheets. Refrigerate until set. Store in an airtight container.

BONNIE'S PECAN CRUNCH CROCKPOT CANDY
Inspired by Donna Brown's wonderful peanut candy posted on this site. This recipe is a variation using pecans, coconut and chocolate and made into small bars. Tastes similar to a Nestle's Crunch Bar only richer. They say a picture is worth a thousand words, so I took a picture of the whole process from pan to cutting to the finished product. - Use a 4 or 5 quart crockpot. Put the ingredients in the exact order as follows: 1. Put the pecans in the bottom of the crockpot first. 2. Add the semi sweet chocolate chips. 3. Add the German chocolate broken into pieces. 4. Add the almond bark broken into pieces. Put the lid on and cook on low 3 hours, do not remove the lid. Turn off and allow to cool slightly. Mixture will not be melted but will be soft. Mix thoroughly, add the coconut, mix until thoroughly combined. Pour out onto wax paper covered pizza pans or any pan with a lip. With the back of the wooden spoon, flatten the candy as flat as possible. Let it cool, then transfer it to the fridge. When it is hard, you can cut it. It will slip right out of the pan, peel the wax paper off it and cut into bars as shown in my picture.
- Cook's tip: You are going to have crumbs, don't throw them away. I had almost a full cup of wonderful crumbs left. I put them in a small zip lock bag and set them in the freezer next to the ice cream. They are going to make a wonderful topping for ice cream! Enjoy!
PRALINE PECAN CRUNCH SNACK MIX
In our family, we call this "Crunchy-Crunchy." My mother-in-law makes a big batch of this every Christmas. We receive it in the big box of gifts and my youngest is very excited to see "Grandma's Crunchy-Crunchy" snack mix. I sometimes make it myself, but it's more special to receive it from Grandma, you know? It is great for gift giving in a nice air-tight plastic container. Great to put out for a sweet snack, any time of the year! Note: I have added a little salt to the recipe as a personal preference. If you want to leave it out as the original recipe calls for, you can do so. Enjoy!

- Heat oven to 250ºF. Spray 13 x 9-inch baking pan with cooking spray. Combine cereal and pecans in pan; mix well.
- In large microwaveable bowl, combine sugar, corn syrup and margarine.
- Microwave on HIGH 1 minute 30 seconds; stir. Microwave an additional 30 seconds to 1 minute 30 seconds or until boiling.
- Stir vanilla and baking soda and optional salt into sugar mixture. Pour over cereal mixture; stir to coat evenly.
- Bake 1 hour, stirring every 15 minutes. Transfer to baking sheet, spreading mixture in even layer. Cool completely; break into pieces. Store tightly covered at room temperature.
RENEE'S PECAN CRUNCH COOKIES
My grandmother baked the most wonderful cookies, cakes and breads. These she sold during the Depression to make money to help her family. This recipe is among one of my favorites, because I loved crunchy cookies and pecans. This recipe went into my hope chest in 1963.

- Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets.
- In a bowl, sift the flour, baking soda, and salt together. In a separate large bowl, cream the butter, 1 cup of white sugar, and brown sugar until smooth, and beat in the eggs and vanilla extract until well combined. Stir in the flour mixture, and mix the pecans into the dough.
- Drop the dough by tablespoons onto the prepared baking sheets, about 2 inches apart. Place 1/2 cup of white sugar into a shallow bowl. Moisten the bottom of a drinking glass with a wet cloth, and dip the glass bottom into the sugar. Flatten cookies with the sugared glass, dipping into sugar for each cookie.
- Bake in the preheated oven until lightly browned, 9 to 12 minutes. Allow to cool on sheets for a minute or two before removing to finish cooling on racks.
