Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 10

1 blood orange
1 tangerine
1 cup diced avocado
1/3 cup finely diced red onion
2 tablespoons chopped fresh cilantro
1/2 teaspoon finely grated lime zest
2 tablespoons fresh lime juice
Kosher salt and cracked black pepper
1 to 2 tablespoons olive oil
Four 6-ounce halibut fillets

Steps:

  • Using a paring knife, remove the peel and white pith from the orange and tangerine. Working over a large bowl, carefully cut between the membranes to release the citrus segments, allowing them to fall into the bowl along with any juices. Add the avocado, onions, cilantro and lime zest and juice to the bowl with the citrus. Gently toss to mix. Season the salsa with salt and pepper.
  • In a large nonstick skillet, heat the oil over medium-high heat. Sprinkle the halibut liberally with salt and pepper. Add the halibut to the skillet and cook until golden brown and cooked through, 3 to 5 minutes per side. Transfer the halibut to serving plates, top with salsa and serve.

Yield Serves 2

1 lemon
2 teaspoons drained capers
1/4 teaspoon minced garlic
1/4 cup plus 1 tablespoon extra-virgin olive oil
2 tablespoons chopped fresh cilantro sprigs
2 tablespoons chopped fresh parsley leaves
1/2-inch-thick halibut steaks with skin (about 1 pound total)
Garnish: lemon wedges

Steps:

  • Grate enough zest from lemon to measure 1/2 teaspoon and squeeze 2 tablespoons juice. Chop capers and in a small bowl whisk together with zest, lemon juice, garlic, and salt and pepper to taste. Add 1/4 cup oil in a slow stream, whisking constantly until blended. Whisk in herbs.
  • Pat halibut dry and season with salt and pepper. In a nonstick skillet heat remaining tablespoon oil over moderate heat until hot but not smoking and cook halibut, turning once, until golden brown on both sides and just cooked through, about 7 minutes total. Serve halibut topped with salsa verde and garnished with lemon wedges.

  • Make the salsa verde: In a food processor or blender, combine parsley, olive oil, anchovies, capers, red wine vinegar, lemon zest, lemon juice, garlic, and red pepper flakes. Pulse until parsley is well chopped but not pureed, scraping down sides as needed. Set aside.
  • Make the fish: place asparagus on a large sheet pan. Drizzle with 1 tablespoon olive oil and season with 1/2 teaspoon salt and 1/4 teaspoon of pepper. Toss to coat the asparagus and spread over sheet pan in a single even layer. Bake for 7 minutes to partially cook the asparagus. Remove the baking sheet from oven and push asparagus to sides of pan to make room for fish in the center.
  • Place the halibut fillets on empty side of baking sheet. Drizzle fillets with the remaining 1/2 teaspoon salt and 1/4 teaspoon pepper. Return pan to oven and bake until halibut flakes easily with fork and asparagus is tender, 12 - 14 minutes. Serve hot with Italian salsa verde and lemon wedges.

  • Bring the salt and water to a simmer and crumble in the saffron. Stir, turn off the heat and cover the pot. Let this come to room temperature, which can take a couple hours, or speed the process by putting the pot in a large pot that has ice in it. Once the saffron brine is at least at room temperature, if not cooler, submerge the halibut in it and brine in the refrigerator for at least 2 hours, and up to five hours.
  • Meanwhile, make the salsa verde. Put the anchovies, mustard and lemon juice in a bowl and mash it all together until the anchovies are basically a slurry or paste. Add the parsley, garlic, chives, capers and red pepper flakes and mix well. Mixing all the while, slowly pour in the olive oil until the sauce comes together. It should look like a very loose pesto or a thick chimichurri. Add salt and black pepper to taste, cover and leave at room temperature.
  • When the halibut is ready, remove it from the brine and pat it dry with paper towels. Set the halibut out on a cutting board for 15 to 20 minutes to warm up a bit.
  • Heat the olive oil in a sauté pan large enough to fit all the pieces of halibut in one layer. When the oil is hot, pat the halibut dry one more time and lay the pieces in the hot oil. Cook at a medium sizzle (think about how bacon sizzles and you have the right idea) until a nice crust forms on the bottom, about 8 to 10 minutes. Baste the halibut with the hot oil as it cooks for at least 30 seconds, and longer if you want the interior of the fish to be fully cooked through. After about 8 minutes, a crust should form on the bottom of the halibut. Carefully lift the halibut up (assume it will have stuck, although it usually sticks in one one small place, if at all) and place it, crust side up, in the middle of some salsa verde on each person's plate.
