EASY CRANBERRY APPLESAUCE

This bright pink applesauce is simple enough for a weeknight supper and festive enough for special occasions. It's a favorite with my family and friends and looks fabulous at a Christmas dinner! You can substitute Splenda® for the sugar.

2 pounds apples - peeled, cored, and cut into 1-inch chunks
1 cup fresh cranberries
¼ cup white sugar
3 tablespoons water
½ teaspoon ground cinnamon
1 pinch salt
1 ½ teaspoons lemon juice

Steps:

  • Stir apples, cranberries, sugar, water, cinnamon, and salt together in a saucepan. Bring to a boil, reduce heat to low, and cook until apples and cranberries are tender, about 20 minutes. Remove from heat.
  • Stir lemon juice into cranberry mixture.
  • Mash cranberry mixture with a wooden spoon or fork to make a chunky sauce.

Golden delicious apples are transformed in just 45 minutes into sweet and cinnamony homemade applesauce. Serve it chilled on its own or as a warm side dish.

7 Golden Delicious apples, peeled, chopped
1 tablespoon fresh lemon juice
1/2 cup granulated sugar
1/3 cup packed dark brown sugar
1 cup water
3 slices lemon peel (cut with a vegetable peeler or paring knife)
2 cinnamon sticks (3 inch)

Steps:

  • In 6-quart stockpot or Dutch oven, place all ingredients. Heat to boiling, stirring occasionally. Reduce heat to low; cook uncovered 30 to 40 minutes, stirring occasionally, until apples are tender.
  • Remove from heat; discard lemon peel and cinnamon sticks. Let apple mixture cool slightly, about 10 minutes; puree in a food processor, blender, or mash with a potato masher. Serve warm or cover and refrigerate until ready to serve.

  • In a 3 1/2-quart electric slow cooker, toss together the apples, brown sugar, and lemon juice.
  • Cover and cook on the high heat setting 3 hours or until the apples are very tender.
  • Mash up the apples with a potato masher.

5 pounds tart apples (about 16 medium), peeled and sliced
1 cup apple juice
1 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/2 teaspoon ground cloves

Steps:

  • In a Dutch oven, combine all ingredients; bring to a boil. Reduce heat; simmer, covered, 25-35 minutes or until apples are tender, stirring occasionally. Remove from heat; mash apples to desired consistency. Serve warm or cold. Freeze option: Freeze cooled applesauce in freezer containers. To use, thaw in refrigerator overnight. Serve cold or heat through in a saucepan, stirring occasionally.

1/2 cup plus 2 tablespoons water
1/2 cup plus 2 tablespoons sugar
5 medium Golden Delicious apples (about 2-1/2 pounds), peeled and chopped
1-1/4 cups fresh or frozen cranberries
1/2 teaspoon grated lemon zest
1 teaspoon minced fresh gingerroot
1/4 teaspoon ground cinnamon

Steps:

  • In a large saucepan over medium heat, cook and stir water and sugar until sugar is dissolved. Add apples; cover and cook for 5 minutes, stirring often. Add cranberries; cover and cook until apples are tender and berries pop, about 15 minutes. , Mash until sauce reaches desired consistency. Stir in zest, ginger and cinnamon.   • In a medium saucepan, combine apples, lemon juice, cinnamon, and salt. Bring to a boil over medium heat. Cover, and cook, stirring occasionally, until the apples have cooked down into a sauce, 20 to 25 minutes.
  • Using a fork, remove pieces of apple peel from sauce, and discard. Use immediately, or store, refrigerated, in an airtight container for up to 1 week.

Steps:

  • Put water and red hots in a small saucepan and heat until melted, stirring constantly over medium heat.
  • Once water mixture is boiling add cranberries and cook for 5 minutes over medium heat, stirring occasionally.
  • Add Jello and mix well until Jello has dissolved.

CINNAMON-MAPLE APPLESAUCE

Applesauce isn't just for babies. Sure, this very basic version is perfect for tender palates, but it also works as the base for many a sweet treat. In the fall you might try swapping in 1 1/2 pounds of pears for half of the apples and a bit of caramel in place of the maple. (Omit the maple syrup if serving with savory foods.) In the summer, swap out some of the apples for red plums for a tangy and a beautifully pink variation that's lovely served over vanilla ice cream. Add a bit of grated ginger and a few plump medjool dates to make a sophisticated purée that would be nice with some whipped cream or even a pork chop. Make extra, as it doubles easily and freezes well, too.

  • For a chunky sauce, use a potato masher to carefully mash the apples. For a smooth sauce, transfer the mixture to a food processor and pulse to your desired consistency. If you like a thinner sauce, add up to 1/2 cup of water.
  • Taste and add a bit more maple syrup as necessary. (It will depend on the combination of apples.) Stir in a pinch of kosher salt.
