- Heat oven to 200C/180C fan/gas 6. Tip the orzo into a medium casserole dish, then stir in the oil, red peppers, olives, chilli flakes and dried oregano. Tip in the chopped tomatoes, then refill the can halfway with water and pour that in too. Give everything a good mix, season, then cover and bake for 20 mins until the pasta is almost cooked. Take it out of the oven and give the orzo a stir. Remove the foil and return to the oven for a further 5 mins.
- Heat the grill to high. Take the orzo out of the oven and tear the mozzarella over the top, then grill until melted and bubbling. Serve with salad on the side, if you like.

- Bring a large pot of salted water to a boil, add the orzo and cook according to the package directions - usually 8 to 10 minutes. Before draining the cooked orzo, reserve 1/3 cup of the pasta water (we use this to make the sauce).
- Add olive oil, garlic, and red pepper flakes to a large, deep skillet. Turn to medium heat. When the oil bubbles around the garlic, add the cooked orzo pasta, tomatoes, basil, and parmesan cheese.
- Pour in two tablespoons of the reserved pasta water and cook, stirring often, for one minute. Over the minute, the sauce should begin to coat the pasta. If it seems dry, add a splash more of the reserved pasta water and cook a few more seconds. Taste for seasoning and adjust with a bit of salt if needed.
- Serve with extra basil, parmesan, and fresh ground black pepper on top.

- Heat 1 1/2 tablespoons of olive oil in a saucepan over medium heat. Stir in the orzo pasta; cook and stir until the orzo has lightly browned, 3 to 4 minutes. - Place a heavy-bottomed pot on your stovetop and turn the heat to medium-high.
- Add the olive oil and the diced onions. Stir to combine and cook the onions until they are soft and tender. You do not want to brown the onions, so 2-3 minutes is perfect.
- Next, add the garlic and stir into the onions. Cook for 2 minutes more.
- Now, pour in the canned diced tomatoes, along with the juice. Add the tomato paste. Add the dried oregano, dried basil, salt, and ground black pepper. Stir to combine.
- Finally, pour in the vegetable stock. Stir to combine and allow the mixture to come to a boil.
- Once bubbling, add the uncooked orzo. Stir well and continue to cook for 5-7 minutes, or until the orzo is cooked through.
- Do not overcook the orzo! If you find that the soup is getting too thick, add more stock or water to the pot, but do so in 1/4 cup measurements. Stir well after each addition. Whether you add more stock or not, once the orzo is cooked, taste the soup and season once more with more salt if needed. Once you are happy with the seasoning, turn off the heat and stir through the chopped parsley.
- Ladle the soup into bowls and serve immediately. You may top the soup with a tablespoon or two of heavy cream to add more creaminess to the soup. You may also add some grated parmesan. Serve with crusty bread.

- ON THE DAY Preheat the oven to 150°C/300°F/gas 2. In a large roasting tray, mix the harissa with 1 tablespoon each of red wine vinegar and olive oil and a pinch of sea salt and black pepper. Add the tomatoes on the vines, trim and add the whole spring onions, then break up the garlic, squash the unpeeled cloves and add to the tray. Gently toss together, roast for 1 hour, then remove.
- Squeeze the soft garlic flesh out of the skins on to a board, finely chop with the spring onions and most of the herb leaves, then scrape into a large pan. Pour the tomatoes and all the juices from the tray through a coarse sieve into the pan, pushing it all through with the back of a spoon. Keep aside.
- TO SERVE Heat up the sauce while you cook the broad beans in a large pan of boiling salted water for 2 minutes. Remove with a slotted spoon, pinching the skin off any larger beans, if you like, while you cook the orzo in the large pan of boiling salted water according to the packet instructions. Drain, pour into the sauce with the beans and turn the heat off, letting the orzo suck up all that flavour. Transfer to a large serving bowl, pick over the remaining herbs and finish with a drizzle of extra virgin olive oil. Serve hot or at room temperature.
