POPEYE PIE
This pizza is one of my most popular dishes, a kind of warm spinach salad on a crust. I've been serving it since the earliest days at Sullivan Street (its origins-how I came to make it-are now lost in the mists of memory). But, even today, to the best of my knowledge, I'm the only one who offers it. Try it at home, and right after that first bite, you'll see why it's one of the most popular pies I've ever devised. When I make the Popeye in my home kitchen, I deviate from the usual system in this book and bake it (as called for here) rather than placing it under the broiler. The image of that mound of spinach directly under flame just seems wrong-I'm not even sure what would happen, but it wouldn't be good.

Yield Makes one 10- to 12-inch pizza

Steps:
- 1 Place the pizza stone in a gas oven on the middle rack. Preheat the oven on bake at 500°F for 30 minutes. Switch to broil for 10 minutes and then back to bake at 500°F. (For an electric variation, see Cooks' Note.)
- 2 With the dough on the peel, sprinkle the surface evenly with the garlic. Distribute the pecorino, Gruyère, and mozzarella evenly over the dough. Sprinkle evenly with pepper.
- 3 With quick, jerking motions, slide the pie onto the stone. Bake for 2 minutes.
- 4 Pull the rack partially out of the oven. Quickly add the spinach in what will look like a big mound (the spinach will reduce, the mound flattening, as spinach always does when it cooks). Sprinkle evenly with salt. Return the pie to the oven for 3 1/2 to 4 minutes in a gas oven (somewhat longer with an electric oven; see Cooks' Note), until the crust is charred in spots, but not as deeply as with the other pizzas in this book.
- 5 Using the peel, transfer the pizza to a tray or serving platter. Drizzle evenly with oil. Slice and serve immediately.

- Sautee ground pork in saucepan until cooked. Season with garlic salt to taste. Add jar of tomato sauce, basil and cook for at least 15 minutes.
- In bowl mix ground beef with 3 eggs and enough bread crumbs until meatloaf consistency. Spread mixture with a fork into bottom of 9x12 baking pan. Bake at 350 degrees until cooked through (10-15 minutes). Drain off any liquid.
- Cook spinach according to instructions. Drain well.
- Mix Ricotta Cheese with 2 eggs, parmesan cheese, parsley and oregano.
- Spread a layer of sauce over ground beef "pie shell". Spread half of ricotta mixture over sauce. Place spinach over entire surface. Spread remaining ricotta over spinach. Spread remaining sauce over ricotta mixture. Sprinkle top with mozzarella cheese.
- Bake at 350 degrees for 45 minutes or until bubbling and browned. Let stand for 10 minutes.

SEAFOOD POTPIE

- Melt the butter in a large saute pan over medium heat. Add the chopped onion and fennel and cook for 10 to 15 minutes, until the onions are translucent. Add the flour and cook over low heat for 1 more minute, stirring occasionally.
- Meanwhile, bring the stock to a simmer in a large saucepan. Add the shrimp and scallops and cook for 2 minutes, just until firm. Remove the seafood to a large bowl with a slotted spoon, reserving the stock.
- When the flour is cooked in the onion and fennel mixture, slowly add the stock, the Pernod, salt, and pepper and simmer for 3 minutes. Stir in the heavy cream.
- Cut the lobster meat into medium-size cubes and add it to the onion and fennel mixture with the shrimp and scallops. Add the frozen peas, frozen onions, and parsley and pour the mixture into a 9 by 13 by 2 baking dish.
- For the pastry, mix the flour, salt, and baking powder in a food processor fitted with a steel blade. Add the butter and pulse 10 times, until the butter is the size of peas. With the motor running, add the ice water; process only enough to moisten the dough and have it just come together. Dump the dough on a floured surface and knead quickly into a ball. Wrap the dough in plastic and allow it to rest for 30 minutes in the refrigerator.
- Meanwhile, preheat the oven to 375 degrees.
- Roll the dough out to fit the baking dish with about 1/4-inch overlap. Use the egg wash to paint the outside rim of the dish. Place the dough on the filled baking dish and press it lightly to adhere to egg wash. Brush the dough with egg wash. Make 3 slashes in the top to allow the steam to escape. Place the dish on a sheet pan lined with parchment paper and bake for 1 hour and 15 minutes, until the top is golden brown and the filling is bubbling hot.
CHICKEN POPEYE SOUP ( CHICKEN AND SPINACH POT PIE SOUP)
Well This is my creation in my first RSC contest. After thinking about it, I went into the kitchen and made it. When it came time for my DH to give it his review, HE really liked it! It is loaded with flavor. Rich and creamy. The crust served on top of the soup makes it extra good! Enjoy.

Steps:
- In a small fry pan add olive oil, onion, portabello and celery.
- Cook till soft, set aside in into another bowl.
- In the same pan, saute chicken pieces with a little olive oil till done. About 10 minutes.
- In stock pot add the chicken stock, 3 tablespoons of the chicken bouillon, and cubed chicken. Cook about 10 minutes.
- Heat to a soft boil, reduce heat and add the onion, mushroom and celery mixture, and the powdered milk.
- Add the spinach and basil.
- Simmer just till spinach and basil are limp, about 5 to 8 minutes.
- Add cheddar cheese, stir til melted.
- Bring back to a soft boil.
- Add corn starch in 1/3 cups cold water, slowly add into the chicken stock.
- Stir till all is thicken.
- Crust:.
- In bowl, add butter and flour till like small peas.
- Add enough water to make a nice pie dough.
- Roll out on floured board and cut into desired shapes, place onto cookie sheet, bake till light brown.
- Let cool about 15 minutes.
- To serve:.
- Ladle into bowl.
- Place pieces of the crust on top of the soup.
- Enjoy.
