2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla extract
3 eggs, slightly beaten
Juice of 1/2 orange (about 3 tablespoons)
1 cup sugar
1/2 cup unsalted butter (1 stick), plus extra for greasing the pan, at room temperature
3 ripe bananas, mashed
3 tablespoons mini chocolate chips
2 tablespoons confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F.
  • Sift together the flour, baking soda and salt in a medium bowl. Mix together the vanilla, eggs and orange juice in a measuring cup or small bowl. Cream the sugar and butter in a medium bowl until pale yellow and fluffy, about 5 minutes. Add in the egg mixture and beat until creamy. Mix in the bananas until smooth. Pour the flour in 2 batches into the batter and mix on low speed until incorporated. Stir in the chocolate chips with a wooden spoon. Pour into a greased loaf pan and bake 1 hour, covering lightly with foil if the top gets too brown. Cool, remove from the pan and slice. Serve dusted with the confectioners' sugar.

Letting mashed bananas sit overnight enhances the banana flavor in this easy to make cake. It has the flavor of banana bread, but a texture more like a carrot cake. We loved the cream cheese frosting on top. Tangy and sweet, it's perfect with the banana cake.

2 c all-purpose flour
1 1/2 c sugar
1/2 c butter or margarine
3 large bananas
2 eggs
1 tsp baking soda
CREAM CHEESE FROSTING
1 pkg cream cheese, softened, 3 oz
1 Tbsp milk
1 tsp vanilla extract
2 1/2 c confectioners' sugar
1 dash(es) salt

Steps:

  • 1. Pre-heat oven to 350 degrees. Puree the bananas and let sit overnight. You may use them immediately but the overnight sit ripens the bananas to perfection.
  • 2. Add baking soda to the pureed banana mixture. Set aside.
  • 3. Cream sugar and butter.
  • 4. Add eggs one at a time.
  • 5. Add flour slowly.
  • 6. Add banana mixture to the creamed mixture. Mix just until incorporated. DO NOT OVERMIX.
  • 7. Pour into a greased 13x9 pan.
  • 8. Bake for 30 min or just until golden brown. Be careful not to over bake.
  • 9. For the cream cheese frosting, blend cream cheese, milk, vanilla, and salt. Gradually add powdered sugar, beating until frosting is smooth and creamy. Check that it is of spreading consistency. If too thick add another 1 tsp of milk until it is the right consistency.
  • 10. Frost the cake. Sprinkle lightly with chopped pecans.

1 ¼ cup whole milk (room temperature)
¼ cup sour cream (room temperature)
2 cups all-purpose flour
1 ¼ tsp baking soda
½ tsp ground cinnamon
¼ tsp sea salt
4 oz cream cheese (room temperature)
½ cup butter (softened)
2 ¼ to 2 ½ cups powdered sugar
½ tsp pure vanilla extract

Steps:

  • Preheat oven to 350 degrees F
  • Grease a 9x13" pan, set aside.
  • In a medium bowl, mix together flour, baking soda, sea salt and cinnamon. Set aside.
  • In a large bowl, mash bananas.
  • Add melted butter and vanilla and stir until combined.
  • Add sugar and stir until dissolved.
  • Add eggs and sour cream and stir until combined.
  • Add milk and gently mix until combined.
  • Add dry ingredients and stir until the mixture is homogenous (uniform throughout) and there are no lumps.
  • Pour batter into prepared pan.
  • Bake in preheated oven for 35-45 minutes or until a toothpick comes out clean.
  • Let the cake cool to room temperature.
  • While the cake is baking, make the cream cheese frosting.
  • Beat together butter and cream cheese until smooth.
  • Add vanilla and 2 cups of powdered sugar and beat (starting on low speed and increasing to medium-high) until smooth.
  • Add up to ½ cup more powdered sugar until you reach a spreadable, but thick consistency.
  • When the cake is cooled, spread frosting evenly over the top.
  • Chill for at least 3 hours, or overnight. Then serve cold or at room temperature.

1 cup of whole-berry cranberry sauce
1/2 cup brown sugar (packed)

2 tablespoons all-purpose white flour (I use bread flour)
2 tablespoons butter, melted

Steps:

  • Preheat the oven to 350 degrees. Prepare a 9 x 13 inches baking pan with nonstick cooking spray. Whisk together the dry ingredients: flour, baking powder, ground cinnamon, salt, and ground allspice. In a large mixing bowl, cream the butter and sugar until light and fluffy, for 5 to 7 minutes. Beat in eggs and vanilla. Then, add the bananas and mix until combined. Add the dry ingredients to the cream mixture and beat just until combined. Spread evenly into the prepared baking pan and top with dollops of cranberry sauce. In a small bowl, combine the brown sugar, chopped pecans, and flour. Stir in the butter. Sprinkle over the top of the cranberry sauce. Bake for 45 to 50 minutes. Cool in the pan on a wire rack. Slice into squares and serve warm.

Steps:

  • 1. Preheat the oven to 375F/190C degrees. 2. The first thing is to wash and scrub the squash and look for any bad spots to cut off. 3. Now, cut the ends off, and slice the banana squash into 3-inch sections. It's much easier to cut it this way because you are not having to handle such a large squash. 4. I used a really good knife and it was easier than I had expected to cut through the skin and flesh. 5. Now you cut the pieces in half. 6. Now scrape the seeds out with a tablespoon or similar tool. Remove the excess stringy meat.7. Now, cut the pieces again, remove the skin on the pieces and cook another day. We left the skin on the ones we are baking today. 8. Remove the skin on the squash you will not bake the day you cut the banana squash. 9. Place the peeled pieces in a bag or container to place in the refrigerator for up to five days. 10. Use a fork, to lightly "scratch" the banana squash meat so you can add butter, cinnamon, and brown sugar (or sweetener of choice). 11. Place a dab of butter, with the desired amount of cinnamon you want on each piece of squash. 12. Add the brown sugar now or after you bake it. You may want to salt and pepper it as well. 13. Now, wrap the separate pieces of banana squash in aluminum foil tightly. 14. Place a piece of aluminum foil on your cookie sheet and spray with vegetable oil. Place the squash on the cookie sheet. 15. Bake for one hour and 15 minutes or until baked through.
