This Slow Cooker Tuscan Sausage & Kale Soup is a hearty veggie-filled dish for cold days. Dump it in the crockpot then set it and forget it!

Steps:
- If using storebought sausages, remove casings and break up meat. If making your own, mix together sausage ingredients and break up. Add to slow cooker, along with rest of ingredients except for red pepper and kale.
- Cook on high for 6 hours or low for 8 hours. When ready to serve, stir in red pepper and kale, then let sit for 3-4 minutes. Serve and enjoy!

Steps:
- In 4-quart or larger slow cooker, mix sausage, potatoes, onion, tomatoes with liquid, tomato paste, garlic, 1/2 teaspoon salt and 1/2 teaspoon pepper. Add water. Top mixture with chopped kale.
- Cover; cook on High heat setting 4 hours 30 minutes to 5 hours.
- If needed, season with additional salt and pepper. Transfer potatoes to medium bowl. To potatoes, add milk and butter; mash until smooth. Add salt and pepper to taste, and more milk if needed.
- Serve stew with mashed potatoes on top.

- In a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain. - Cook Bacon in skillet till crisp.
- Drain, Crumble, set aside.
- Add onions to pan.
- Cook till softened.

- In a Dutch oven over medium-low heat, cook the sausage, potatoes and onions in oil for 5 minutes or until sausage is heated through, stirring occasionally. - Turn a slow cooker to Low and add chicken broth.
- Heat olive oil in a pan over medium-high heat. Saute onion and garlic in the hot oil until light brown, 5 to 7 minutes. Transfer to the slow cooker.
