1/2 cup butter flavor shortening
1 cup packed light brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
3 cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350~.
  • In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs, and vanilla until smooth.
  • Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture.
  • Stir in the oats and raisins.
  • Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake 10 - 12 minutes until light and golden. Do not overbake, you want them to be a little chewy.

Steps:

  • In a small bowl, combine the first five ingredients. In a 1-qt. glass jar, layer flour mixture, brown sugar, sugar, oats, chips and coconut, packing well between each layer. 1 1/2 cups unsalted butter, softened ((3 sticks))
1 cup granulated sugar
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
3 cups old fashioned oats
1 1/2 cups raisins

Steps:

  • Preheat the oven to 375 degrees F. Line several baking sheets with parchment paper. In a medium bowl, combine the flour, baking powder, salt, and apple pie spice.
  • In another bowl, with an electric mixer, cream the butter and both sugars on high until light and fluffy, about 3-4 minutes. Scrape the bowl with a spatula, then beat in the vanilla and eggs. Turn the mixer on low and slowly add in the flour mixture. Scrape the bowl again then turn the mixer on low and mix in the oats and raisins.
  • Using a 1 1/2 tablespoon cookie scoop, scoop the dough into equal portions and spread the balls out two inches apart on the prepared cookie sheets.

1/2 cup soft margarine or 1/2 cup butter
1/2 cup brown sugar
1/3 cup white sugar
1 egg
1/2 teaspoon vanilla
3/4 cup all-purpose flour
1/4 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon allspice
1/4 teaspoon ginger
1 1/2 cups rolled oats
3/4 cup raisins

Steps:

  • Brush a 13 x 9 inch baking dish with oil, then line with parchment paper or foil, pressing paper down firmly so it stays. Leave a slight overhang of paper.
  • In mixing bowl cream the margarine or butter until light. Add the sugars and beat until smooth. Add the egg and vanilla and mix in well.
  • In a separate bowl mix the flour, baking powder, cinnamon, allspice and ginger. Mix into the batter, then stir in the oatmeal and raisins.
  • Press dough evenly into the lined baking pan. (This is the messy part.) The dough will be a bit sticky and there will seem to be almost not enough to fill the pan.
  • Bake in a pre-heated 350 degree oven for 15 to 18 minutes, until golden. Bake a bit less for chewier bars, a bit more for crispy bars.
  • Let cool for 3 or 4 minutes, then lift gently out of the pan. Cool a couple more minutes, cut into squares, then cool fully.

1 (18 1/4 ounce) box duncan hines spice cake mix
2 cups uncooked rolled oats
2 eggs
3/4 cup vegetable oil
1/2 cup milk, do not use skim
2 cups raisins
1 cup chopped walnuts
1/4 cup dark brown sugar, packed

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • In a large bowl combine all ingredients and mix well.
  • Drop cookies from a teaspoon onto a ungreased cookie sheet, (I still spray the cookie sheets with cooking spray) Bake for 12 minutes until cooky tests well when checked with a toothpick.

100g raisin
150ml vegetable oil
200g golden caster sugar
1 large egg, beaten
1 tsp ground cinnamon
1 tsp vanilla extract
140g plain flour
¼ tsp bicarbonate of soda
300g oats

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line 2 baking trays with baking parchment. Pour 50ml/2fl oz boiling water over the raisins and leave to soak for 20 mins until plump. Drain, reserving the liquid.
  • Meanwhile, in a large bowl, mix together the oil and sugar. Gradually beat in the egg, along with the reserved water from the raisins, the cinnamon and vanilla extract. Sift the flour, bicarbonate of soda and a pinch of salt into the bowl, then add the oats. Finally, mix in the raisins.
  • Drop heaped tbsps of the cookie dough onto the baking trays, well spaced apart as they will spread when cooking. Bake for 12-15 mins until golden. Leave to cool on the trays for 10 mins before tucking in, or transfer to a cooling rack to cool completely. Will keep in an airtight container for up to 3 days.
