- Microwave on full power 1 1/2 to 2 minutes, stirring every 30 seconds until oatmeal is thickened. Top with yogurt and brown sugar, if desired.

- Preheat oven to 375°F. Butter 9 x 13 1/2-inch glass baking dish.
- For Topping:
- Mix old-fashioned oats, brown sugar, all purpose flour, ground cinnamon and salt in large bowl. Add unsalted butter and rub into mixture until coarse crumbs form. Mix in chopped walnuts.
- For Filling:
- Combine sliced apples, raisins, sugar, fresh lemon juice, flour and ground cinnamon in large bowl. Mix well to blend. Transfer apple-raisin filling to prepared dish. Spread topping over. Bake until topping is golden brown, about 55 minutes. Serve crisp warm with scoops of vanilla ice cream.
OLD-FASHIONED OATMEAL WITH APPLES, RAISINS AND HONEY-TOASTED WALNUTS

- Stir chopped walnuts in small nonstick skillet over medium heat until lightly toasted, about 3 minutes. Drizzle honey over and stir until honey thickens and coats nuts, about 2 minutes. Remove skillet from heat. Stir to loosen nuts from skillet and cool.
- Bring 3 cups water to boil in heavy medium saucepan. Add oats and salt and stir over medium heat until oats are softened and very thick, about 5 minutes. Stir in apple juice, chopped apple, brown sugar, raisins and cinnamon. Reduce heat to low, cover and cook until apples are tender, about 5 minutes.
- Divide cereal among 4 bowls. Top with vanilla yogurt and honey-toasted walnuts and serve.

My kids refused to eat my favorite kind of oatmeal. Who doesn't like oatmeal? Eventually, I figured out that they did not like the texture of quick cooking oats found in those convenient packets. - Combine all ingredients in a large microwave safe glass bowl. Cover and place in microwave for 5 minutes and 30 seconds. Remove (be careful! it will be hot!), stir, and allow to cool.

- Preheat oven to 350 degrees. Butter an 8-inch square baking pan. Line bottom with parchment paper, leaving an overhang on two sides; butter paper.

APPLE-OATMEAL COOKIES
My family went through an oatmeal phase one brutal winter when we all wanted a nice hot bowl of oatmeal for breakfast every day. Except for Buddy Jr., who hated oatmeal. Lisa tried everything, but nothing worked, till she tried Granny Smith apples, with a little help from brown sugar and cinnamon. That combination led to these cookies, which are packed with flavor and texture, and just as welcome on a cold, wet day as those bowls of oatmeal were.

- Position a rack in the center of the oven and preheat the oven to 350 degrees F.
- Heat a small, heavy saucepan over medium-high heat. Add 2 teaspoons of the butter, and let melt. Add the apple, 1 teaspoon of the brown sugar, the cinnamon, and a scant pinch of salt, and stir well to combine. Cook, stirring occasionally, until the apples are slightly softened, about 3 minutes.
- In the bowl of a stand mixer, cream the remaining butter and brown sugar on medium-high speed until the mixture appears light and fluffy. Add the egg and vanilla and beat until incorporated.
- Combine the flour, baking soda, and 1/4 teaspoon salt in a separate bowl. With the mixer on low, beat in the dry ingredients, including the oats, then fold in the apples by hand.
- Line 2 baking sheets with parchment paper. Scoop out 2 tablespoons of dough at a time and arrange them at least 2 inches apart on the prepared cookie sheet. Bake, rotating the sheets top to bottom halfway through baking, until the cookies appear set, 15 to 17 minutes. Remove and let cool for a few minutes on the sheet, then transfer to a baking rack to cool completely.
- To make the optional glaze: Put the confectioners' sugar, the vanilla extract, and 1 tablespoon water in a medium mixing bowl and whisk until the mixture is smooth. Drizzle the glaze over the cookies using a spoon.

We are not ones to cook a big breakfast in our house, so what we usually have is something very easy or a smoothie. This is a very easy, filling, and healthy breakfast. My husband especially loves this one because it is so hearty. Be sure not to substitute for any other kind of oatmeal. ONLY STEEL CUT OATMEAL will do.

- 1. Spray the inside of your crockpot with cooking spray.
- 2. Stir together chopped apples, brown sugar, and cinnamon in a medium sized bowl. When apples are evenly coated, put the mixture into the crock pot.
- 3. Add water, milk, butter, vanilla, oats and the raisins (optional). If I am using walnuts or pecans, I add them at this time. If using almonds, wait until you are almost ready to serve. (All nuts are optional.) Stir well.
- 4. Put the lid on your crockpot and cook on low for 8 hours or overnight. If using almonds, I add them as soon as I get up and then let cook while I get the coffee made.
- 5. You may sprinkle the top of the oatmeal with more nuts and brown sugar before serving. This is delish. Hope you enjoy!
