GREEN BEANS IN CIDER
I prepared this for Thanksgiving dinner in place of the traditional but heavy green bean casserole. It has a delicious, faintly sweet flavor.

Steps:
- Combine green beans and cider in a microwave-safe bowl; cover with plastic wrap. Cook in microwave on high for 5 minutes; stir beans. Return to oven and cook until tender, 5 more minutes. Remove beans with a slotted spoon and transfer to a serving bowl; reserve cider.
- Heat olive oil in a small skillet over medium heat; cook and stir bacon bits and onion in the hot oil until onion is tender, 5 to 10 minutes. Pour cider from green beans into the skillet; simmer until liquid is reduced, 5 minutes.
- Spoon bacon mixture over green beans. Season with salt and black pepper.

BEEF CHILI WITH BACON & BLACK BEANS
I found this recipe in the March, 2003 issue of Cook's Illustrated Magazine. We just love this chili and hope that you will, too! It is best served with the optional condiments, the more variety, the better! The flavor is better if you make it a day or two before and then reheated, which means it makes great leftovers, too ;) Freezes well up to one month.

Steps:
- Fry bacon in large heavy-bottomed nonreactive Dutch oven over medium heat, stirring frequently, until browned, about 8 minutes.
- Pour off all but 2 tablespoons fat, leaving bacon in pot.
- Add onions, bell pepper, garlic, chili powder, cumin, coriander, pepper flakes, oregano, and cayenne; cook, stirring occasionally, until vegetables are softened and beginning to brown, about 10 minutes.
- Increase heat to medium-high and add half the beef; cook, breaking up pieces with wooden spoon, until no longer pink and just beginning to brown, 3 to 4 minutes.
- Add remaining beef and cook, breaking up pieces with wooden spoon, until no longer pink, 3 to 4 minutes.
- Add beans, tomatoes, tomato puree, and 1/2 teaspoon salt; bring to boil, then reduce heat to low and simmer, covered, stirring occasionally, for 1 hour.
- Remove cover and continue to simmer 1 hour longer, stirring occasionally (if chili begins to stick to bottom of pot, stir in 1/2 cup water and continue to simmer), until beef is tender and chili is dark, rich, and slightly thickened.
- Adjust seasoning with additional salt.
- Serve with lime wedges and condiments if desired.

- Place bacon in a large pot over medium-high heat; cook until starting to brown, about 5 minutes. Add onion; reduce heat to medium and cook, covered, stirring occasionally, until translucent, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute.
- Increase heat to medium-high and add ground beef to the pot; cook and stir until no longer pink, about 5 minutes. Stir in chili powder, smoked paprika, salt, and cayenne pepper; cook for 1 minute.
- Pour diced tomatoes, apple cider, tomato sauce, and Worcestershire sauce into the pot. Bring to a boil; reduce heat to medium-low and simmer, covered, until flavors combine, about 30 minutes.
- Stir pinto beans into the pot. Simmer, uncovered, until beans are heated through, about 10 minutes.

- 1. Brown beef on olive oil in saute pan.
- 2. Remove beef with slotted spoon into big pot. Leave drippings in saute pan; add bacon grease.
- 3. Add onions to saute pan.
- 4. Top onions with brown sugar (more for carmelization of onions, rather than flavor). Sautee until onions are translucent and soft.
- 5. Pour onions into pot, drippings and all.
- 6. Deglaze saute pan with 1/4 cup beer, scraping up brown bits from bottom. Pour that into the pot.
- 7. Into the pot, add broth, all tomatoes (add them whole), bell peppers, tomato paste, and all spices. Give it a really good stir, cover and simmer on very low heat, for about an hour.
- 8. While waiting, dice mushrooms into itty bitty pieces, and shuck that ear of corn.
- 9. After an hour, give your chili a few good stirs, and use back of big spoon or spatula, to push down on the tomatoes, breaking them up. Add mushrooms and corn. Cover and let simmer on very low heat for another hour.
- 10. After that hour, now add beans and beer. Stir, cover and let simmer on very low heat for 30 minutes.
- 11. Turn off heat, uncover and stir, break up some more tomatoes, and then cover it back up and let it sit, covered, for at least 30 minutes before serving. Top with shredded cheese and scallions when serving.
SLOW-COOKER BACON CHILI

- Spray 5-quart slow cooker with cooking spray.
- In 12-inch skillet, cook bacon 12 to 14 minutes over medium heat, stirring occasionally, until crispy. Drain on paper towels. Reserve 1/4 cup; cover and refrigerate until ready to serve. Add remaining bacon to slow cooker.
- Reserve 1 tablespoon drippings in skillet. Add beef, bell pepper, onion and garlic. Increase heat to medium-high. Cook 6 to 9 minutes, stirring occasionally, until beef is thoroughly cooked; drain.
- Add beef mixture to slow cooker; stir in remaining chili ingredients. Cover; cook on High heat setting 3 to 4 hours or on Low heat setting 6 to 8 hours. Serve with reserved bacon and Toppings.

- Optional toppings: sour cream, shredded cheddar cheese, chopped onion, chopped cilantro. In a large saucepan, cook bacon over medium-low heat, stirring frequently, until crisp. Remove to paper towels with slotted spoon. Pour off all but about 1 tablespoon of the drippings. In drippings, brown ground beef with onion and green pepper; drain. Add reserved bacon and remaining ingredients except optional toppings; mix well. Bring to a boil. Reduce heat, cover and simmer 20 minutes. Ladle into bowls, top as desired, and serve with additional picante sauce.
