Green Beans with Almonds and Bacon image

1 to 1-1/2 pounds green beans
1 tablespoon olive oil
1 tablespoon butter
1/3 cup sliced almonds
1/2 lemon (juiced)
1/2 teaspoon salt (or to taste)
2 to 3 slices bacon (cooked and crumbled)

Steps:

  • Rinse and drain the green beans and snap off one end, removing the tough string if it is present (some will have them, some won't).
  • Bring a large pot of water to a boil. Add green beans and allow to cook for 3 to 4 minutes, just till slightly softened. Remove from heat and transfer to a colander to drain. Rinse with very cold water to stop the cooking process and lock in the bright green color. Drain well.
  • In a 12-inch skillet, melt the butter with olive oil over medium heat. Add the almonds and cook for about 2 to 3 minutes or until lightly golden brown, stirring often. Return green beans to pan with the almonds and cook stirring just until green beans are warmed through. Add lemon juice and season with salt. Transfer the beans to a serving platter, scraping out all the buttery almonds. Garnish with crumbled bacon.

  • Add onion and almonds to bacon drippings in skillet; cook over medium-high heat 3 to 4 minutes, stirring frequently, until onion is tender and almonds are lightly browned. Remove from skillet.
  • In same skillet, melt butter over medium-high heat. Add cooked peas, bacon, onion, almonds, salt and pepper; toss.

1 pound green beans, trimmed
1 tablespoon butter
1/2 lemon, juiced
Salt and pepper

Steps:

  • In a medium pan, toast almonds over medium heat. Remove from pan and add 1/2 inch water. Bring water to a boil, add beans and cover pan. Reduce heat. Cook beans 4 or 5 minutes until just tender yet still green. Drain beans and return pan to stovetop. Melt butter over moderate heat. Add lemon juice to butter (juice lemon half right side up to keep seeds with lemon, rather than in your beans). Add beans to lemon butter and coat evenly. Season with salt and pepper, to taste. Transfer green beans to dinner plates or serving plate and top with almonds.

450 -500 g / 1 lb green beans, tails cut off
1 tablespoon butter or ghee (olive oil is also fine)
120 g / about 4 ounces bacon rashers, diced into cubes
200 g / 7 oz crimini or Swiss brown mushrooms, sliced
4-5 sage leaves, chopped (about 5 g, you could use dried herbs)
1/3 cup almonds, chopped
1/3 cup dried cranberries, chopped
3 cloves garlic, finely chopped
1 tablespoon Balsamic vinegar
1-2 tablespoons olive oil
Juice of 1/2 orange
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut the tail ends off the green beans, wash and set aside.
  • Preheat a large, deep frying pan to medium-high heat and melt the butter (or another cooking fat of choice). Add the bacon and cook for 1 minute until it starts to brown slightly. Add the mushrooms, stir and cook for 1-2 minutes. Add a splash of olive oil as the cooking fat starts to absorb into the mushrooms. Cook for 2 more minutes or until the mushrooms start to brown up a little.
  • Add chopped bacon, cranberries, garlic and sage and cook, stirring a few times, for 3-4 minutes until everything starts to brown slightly. Finish by adding a tablespoon of Balsamic vinegar, stir through and transfer to a bowl.
  • Return the empty frying pan on the stove over medium-high heat. Add a tablespoon of olive oil and green beans; spread them around evenly. Cover with a lid and cook for 2 minutes. Uncover, stir and pop the lid back on for another 1-2 minutes. This method allows you to steam the green beans as well as browning them slightly on the bottom.
  • Uncover again and now season with salt and pepper and add the orange juice. Stir and cover with a lid again for 2 more minutes. The green beans will continue to saute and steam with the orange juice reducing slightly.
  • Finish the dish by removing the lid and stirring in the pre-cooked bacon and mushroom mixture. Season with another pinch of salt and pepper (taste to see if you need more). Serve with fried shallots and toasted almonds on top. You can serve as is as well.

1 ¼ pounds fresh Green Beans (, rinsed and ends trimmed)
1 large Shallot (, peeled and diced)
¼ cup Sliced Almonds
Kosher Salt and freshly ground Black Pepper to taste

Steps:

  • In a large skillet over medium-high heat, cook the bacon until done but not crisp. Remove the bacon to drain on paper towels. Reserve 2 teaspoons of the bacon fat in the pan and discard the rest. Chop or break bacon into small pieces.
  • While the bacon is cooking, steam the prepared green beans using a steamer or steamer basket, until almost fully cooked 3-4 minutes (taste to test). Note: they will complete cooking when sautéed and to retain firmness they should not steam until fully done. Remove beans from the steamer.
  • Over medium-high heat add the diced shallots to the skillet with the bacon fat and sauté for 2-3 minutes.
  • Add the green beans and sauté to coat and heat through. Toss in bacon and sliced almonds; remove from heat and serve immediately.

2 cloves garlic, minced
1 large onion, chopped
1 cup chicken broth, plus more if needed
1/2 cup chopped red bell pepper
1/2 to 1 teaspoon kosher salt (can substitute regular table salt, use 1/4 to 1/2 teaspoon)
Ground black pepper

Steps:

  • Snap the stem ends of the green beans, or cut them off in a big bunch with a knife if you'd prefer.
  • Melt the bacon grease in a skillet over medium-low heat. Add the garlic and onions and cook for a minute. Then add the green beans and cook until the beans turn bright green, about a minute. Add the chicken broth, chopped red pepper, salt and pepper to taste. Turn the heat to low and cover the skillet with a lid, leaving the lid cracked to allow steam to escape. Cook until the liquid evaporates and the beans are fairly soft, yet still a bit crisp, 20 to 30 minutes. 1/4 cup tomato paste
1/4 cup dark brown sugar

2 teaspoons kosher salt

Steps:

  • Heat oven to 250 degrees F.
  • Soak beans in a plastic container overnight in just enough cold water to submerge them completely.
  • Place a cast iron Dutch oven over medium heat and stir in the bacon, onion, and jalapenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes. Stir in the tomato paste, dark brown sugar, and molasses.
  • Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups of liquid. Add the liquid to the Dutch oven and bring to a boil over high heat. Add in cayenne, black pepper and salt. Give them a stir and cover with the lid. Place the Dutch oven in the oven for 6 to 8 hours, or until the beans are tender.
