Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl stir together the peanut butter, the butter or margarine, the brown sugar, the syrup and the vanilla until smooth.
- Add all the other ingredients. Stir well.
- Press the mixture into 13 x 9 inch greased pan. Bake for 20-25 minutes. Let cool on wire rack before cutting into bars.

- Preheat oven to 350 degrees F. Lightly spray an 11 by 7-inch or 9 by 9-inch baking pan with cooking spray; set aside.
- In a mixing bowl, stir together baking mix and oats until well blended. Add remaining ingredients and stir until well combined.
- Press dough into prepared baking pan. Use oven mitts to place pan in oven. Bake for 20 to 25 minutes.

- Set oven to 350 degrees.
- Set oven rack to second-lowest position.
- Grease a 13 x 9-inch baking dish.
- In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).
- Add in the peanut butter and beat until combined.
- Add in eggs and beat until combined.
- In a bowl combine the flour with baking soda and oats; add to the creamed mixture and mix on low speed until combined.
- Mix in chocolate chips.
- Transfer and spread into prepared baking dish.
- Bake for 22-25 minutes or until JUST set (do not overbake).
- Cool then cut into squares.

- Preheat oven to 350 degrees Fahrenheit. Lightly grease a 9x13-inch baking dish with nonstick cooking spray; set aside.
- In a medium bowl, mix together the flour, oats, baking soda and salt.

NO-BAKE OATMEAL PEANUT BUTTER BARS

- In a medium bowl, add coconut oil (if it's still in its solid form, make sure to microwave it for a few seconds), butter, and peanut butter and using your electric mixer, mix until you reach a creamy consistency (even if you're using chunky peanut butter). You'll find that your mixture will glisten and shine.
- Add brown sugar and mix until well combined. Next, add graham cracker crumbs and quick oats and fold in with all other ingredients.
- Line both square pans with parchment paper and pour in your mixture. Make sure to spread it evenly so that both pans have layers of the mixture at about 1/2 of an inch thick.
- Melt chocolate chips in either a double boiler or in in the microwave. Drizzle the melted chocolate onto the layer of your peanut butter mixture and then sprinkle coconut flakes on top.
- Cover each pan with plastic wrap and chill in the refrigerator for at least 1.5 - 2 hours. Slice into 12 bars, about 2" x 3" each (6 bars per pan) and enjoy!
- **Alternative: You can chill the peanut butter layer for an hour, and then spread your melted chocolate over on top. Once the chocolate is evenly spread, sprinkle on your coconut flakes and chill in the refrigerator for another hour. It's all in personal preferences for the esthetics! - In a large bowl, stir together oats, chia seeds and cacao nibs. Set aside.
- Add dates and water to the bowl of a food processor and process a few times until dates begin to break down a bit and form a paste. Next add in maple syrup, vanilla and peanut butter; process again until it begins to look like a wet cookie dough and ingredients are well combined.
- Add wet ingredients to dry ingredients and mix with a wooden spoon. I like to use my hands because it's much easier to get everything mixed well. I know it's a little messy, so my advice is to coat your hands with a small amount of coconut oil so that the dough doesn't stick.

It's like having unbaked cookies for breakfast, without the butter and extra sugar. When I haven't had chocolate chips, I've used other chocolate. (Dove Promises are really good. I've also used Godiva cocoa.) I recommend using a large microwaveable dish (I use a 4-cup Pyrex); I discovered the hard way what a mess this can be in too small a bowl. OATMEAL, APPLE AND PEANUT BUTTER BARS
I have had this recipe for years and recently started making it after not finding any other oatmeal bars that were a nice combination of good nutrition and good flavor. Not overly sweet and fattening like a cookie, but not so ultra healthy they aren't appealing to kids. You can adapt the recipe, adding any dried fruit you like, use part whole wheat, add some ground flax, my 3 year old likes adding some mini chocolate chips on top. Can't argue with that! Great for breakfast or a afternoon snack.
