ORANGE AND POPPY SEED CAKE
Easy one layer Orange and Poppy Seed Cake made from scratch.

- Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8-inch round cake pan with baking or parchment paper.
- In a large mixing bowl, add flour, baking powder, salt, sugar, poppy seeds and orange zest. Stir briefly to combine.
- In a separate bowl, add orange juice, oil, eggs and vanilla. Whisk briefly just to break up the egg yolks.
- Add wet ingredients to dry ingredients, along with the yogurt and milk, and gently mix until combined - but be careful not to over mix. Spoon batter into prepared tin.
- Bake cake for approximately 35-40 minutes or until a skewer inserted into the middle comes out clean. Transfer cake to a wire rack to cool completely.
- To make the cream cheese frosting, add butter and cream cheese to a large mixing bowl. Beat with an electric mixer for 2-3 minutes until smooth and creamy. Add sugar, 1 cup at a time, and continue to beat until smooth.
- Add orange juice and mix until frosting is creamy. Taste and add extra orange juice if needed. Generously frost the top of the cake. Scatter over fresh orange zest.
ORANGE YOGURT CAKE
This light and moist orange yogurt cake is perfect for breakfast or dessert. Serve it up with fresh fruit and whipped cream or ice cream.

- Preheat your oven to 350 degrees
- Prepare a springform pan by buttering the sides of the pan and using a parchment circle on the bottom (butter the parchment as well)
- Mix together the flour, sea salt, baking powder and baking soda in mixing bowl
- In a mixing bowl add the sugar, Greek yogurt, eggs, olive oil, orange juice, orange zest and vanilla. Make sure the ingredients are well blended and creamy.
- Add in the dry ingredients mixing just enough until well blended with no visible lumps
- Pour the batter into your prepared springform pan and place in your preheated oven on the middle rack.
- Bake for 50-60 minutes. The cake should have a rich golden brown color, if it looks as though the cake is getting too brown you can cover it with foil.
- The cake is done when a toothpick comes out clean from the center.
- Allow to cool for 10 minutes on a wire rack, then remove the outside of the springform pan, allowing to cool for 15 more minutes.
- Remove the bottom and parchment and serve warm with homemade whipped cream and fresh berries.

GREEK YOGURT & OLIVE OIL ORANGE POPPY SEED POUND CAKE

- Preheat the oven to 350 degrees (F).
- Generously grease a 8½ by 4¼ by 2½-inch loaf pan and line with parchment paper. Set aside.
- In a medium-sized mixing bowl, whisk together the flour, poppy seeds, baking powder, and salt.
- Pour the sugar into a separate medium-sized mixing bowl and grate all the zest from the orange over top the bowl so it falls on the sugar. Rub the zest into the sugar until the sugar is bright orange and fragrant. Slice the orange in half and squeeze its liquid into a glass measuring cup. Set aside.
- In a large bowl whisk together the yogurt, eggs and vanilla. Add 1/2 of the orange juice, and stir to combine. Stir in sugar.
- Gently whisk the dry ingredients into the wet ones, stirring just until incorporated. Switch to a rubber spatula and fold in the oil, stirring until you're sure it's all incorporated.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake the cake for 50 to 55 minutes, or until the top is golden and a cake tester comes out of the middle clean.
- *While the cake is baking, make your glaze! Simply whisk together the remaining orange juice and the powdered sugar till smooth.
- Let the cake cool in the pan for 10 minutes, then remove from the pan using the sides of the parchment paper. Place cake on a large sheet of parchment paper, then pour glaze over the top, letting it run down the sides.
- Let the cake cool to room temperature or serve warm (with ice cream?).
LEMON POPPY SEED POUNDCAKE
This lemon poppy seed poundcake is summery and quick to make, and perfect for a picnic. One tip: cut up the poundcake before the picnic but leave it in the baking pan. It makes it easier to transport, and the pan protects it, too. Then serve it on its own, with ripe berries, and let the ants enjoy the crumbs.

- Heat oven to 350 degrees. Butter and flour an 8-inch loaf pan.
- In a bowl, combine lemon zest and sugar and rub with your fingers until it looks like wet sand. Whisk in buttermilk, 3 tablespoons lemon juice and eggs. In a separate bowl, whisk together flour, baking powder, baking soda and salt. Whisk dry ingredients into the batter, then whisk in oil and poppy seeds.
- Pour batter into prepared pan. Bake until a toothpick inserted in the center emerges clean, about 1 hour. Let cool in pan until warm to the touch, then turn out onto a baking rack set over a rimmed baking sheet. Turn cake right side up.
- Whisk together remaining 4 teaspoons lemon juice and the confectioners' sugar. Use a pastry brush to spread glaze evenly over top and sides of cake. Cool completely before slicing.

- Preheat the oven to 350 degrees F. Generously butter a 8 1/2 by 4 1/4 by 2 1/2-inch loaf pan. (Ina suggests lining the bottom of the pan with parchment paper cut to fit. I didn’t do this but the cake did stick to the bottom a little bit.)
- Pour the sugar into a medium-sized mixing bowl. Grate all the zest from the orange (should yield about 2 teaspoons zest). Rub the zest into the sugar until the sugar is orange and fragrant.
- Slice the orange in half for juicing. In a liquid measuring cup, measure out 3/4 cup yogurt and squeeze in about 1/4 cup orange juice to yield 1 cup total liquid. Whisk the yogurt and orange juice, eggs and vanilla into the sugar mixture.
