These easy, spicy chicken wings are an excellent alternative to regular hot wings! I learned this recipe from my mother, who is from Taiwan, and it was always a childhood favorite! Almost all seasonings can be adjusted according to taste. (The Vietnamese chili garlic sauce can be found at any oriental grocery or even most regular groceries).

1 pound chicken wings
2 tablespoons white sugar
½ cup soy sauce
¼ cup rice wine
3 tablespoons chili garlic sauce
1 tablespoon sesame oil
2 cloves garlic, minced
¼ cup water

Steps:

  • Rinse and pat dry the chicken wings. Whisk together the sugar, soy sauce, rice wine, chili garlic sauce, sesame oil, and garlic in a large bowl, then add the chicken wings and toss to evenly coat.
  • Heat a lightly oiled skillet over medium heat. Stir in the chicken wings, sauce, and water. Cover and cook until the chicken wings are no longer pink at the bone, turning the chicken wings occasionally, about 15 minutes. Remove lid and continue cooking until the sauce has thickened, 5 to 10 minutes.

As much as I love the classic, tangy wings, I have to say these are right up there with them. These couldn't get much easier either. All I do is rub the wings all over with a hot Chinese five spice rub and bake them in a really hot oven.

40 chicken wing pieces or 20 whole chicken wings
2 tablespoons Chinese five- spice powder
3 teaspoons cayenne pepper
Kosher salt and freshly ground black pepper
Creamy Cilantro Dipping Sauce, recipe follows
1/3 cup chopped fresh cilantro leaves
1/4 cup light sour cream
1/4 cup mayonnaise
1/4 cup yogurt
1/2 lemon, juiced
Kosher salt and freshly ground black pepper

Steps:

  • Preheat your oven to 500 degrees F.
  • If you have whole chicken wings, cut off wingtips and cut the wings in half at the joint. Discard wingtips or freeze to make stock at a later time.
  • Place the wings in a large bowl. Sprinkle five-spice powder and cayenne on the wings, add a few pinches of salt and about 15 grinds of black pepper. Rub the mixture into all the wings until no more loose rub remains. Wash your hands.
  • Line the wing pieces up on a baking sheet so the side of the wing that has the most skin is facing up. Roast until cooked through, browned and crispy, about 25 minutes. Serve hot with Creamy Cilantro Dipping Sauce.
  • Combine ingredients in mixing bowl. Whisk ingredients to incorporate them fully and season with salt and pepper, to taste.

Here is a remarkably sophisticated though dead simple take on classic dude food: chicken wings that work just as well in front of a football game on the television as at a Chinese New Year party. They are sweet, spicy, sticky, fragrant and full-flavored, and they have a fine, shiny lacquered coat. Top with a scallion and cucumber relish spiked with roasted peanuts, sesame oil and hot red peppers. A bed of sliced juicy navel oranges can serve as a foil to the spicy heat.

3 pounds meaty chicken wings, tips removed
Salt
3 tablespoons soy sauce
3 tablespoons rice wine or sherry
3 tablespoons brown sugar
1 tablespoon grated ginger
6 garlic cloves, minced
1/2 teaspoon five-spice powder
1/4 teaspoon cayenne pepper
1/2 teaspoon grated orange zest
1 small cucumber, diced (about 1 cup)
6 scallions, slivered
2 or 3 small hot red chiles, very thinly sliced (or hot green chiles), optional
2 tablespoons crushed roasted peanuts
1 teaspoon sesame oil
1 handful cilantro leaves
2 navel oranges, sliced

Steps:

  • Rinse the wings, pat dry, season lightly with salt and put them in a large bowl. In a separate bowl, whisk together the soy sauce, rice wine, brown sugar, ginger, garlic, five-spice powder, cayenne and orange zest, then pour over the wings and massage well. Let marinate for 1 hour at room temperature or refrigerate (overnight is fine) and bring to room temperature.
  • Preheat the oven to 375 degrees. Arrange the wings in one layer in a low-sided baking dish or roasting pan (or use 2 pans) and place on middle shelf. Every 8 to 10 minutes, brush the wings with the marinade from the pan, adding 3 or 4 tablespoons water to dissolve the juices as necessary. Continue until well browned, glazed and cooked through, about 40 to 45 minutes. The wings may be cooked ahead and reheated if desired.
  • Pile the wings on a warm platter. Quickly assemble the garnish. In a small bowl combine the cucumber, scallions, chiles, crushed peanuts and sesame oil. Season with salt, toss lightly and scatter over the wings. Sprinkle with the cilantro. Surround with orange slices and serve.

10 whole chicken wings ((rinsed and pat dry with paper towel))
½ teaspoon paprika
1½ tablespoons dried red chili flakes
1 teaspoon ground white pepper
1 teaspoon freshly ground Sichuan peppercorns
1½ teaspoons ground cumin
1¼ teaspoons salt
¼ teaspoon sugar
1 tablespoon Shaoxing wine
1 small egg white ((beaten))
1 tablespoon cornstarch
2 tablespoons flour
4 to 6 cups oil ((for frying))

Steps:

  • Put your chicken wings in a large bowl. In a small bowl, combine the paprika, 1 1/2 tablespoons of dried red chili flakes, white pepper, ground Sichuan peppercorns, cumin, salt, and sugar and mix thoroughly.
  • To the chicken wings, add half of the spice mixture and the Shaoxing wine, and mix thoroughly with your hands until the chicken wings are evenly coated. Cover, and let the wings marinate in the refrigerator overnight (a full 24 hours is even better).
  • After the wings have finished marinating, take them out of the refrigerator, and let them come up to room temperature. There may be some liquid at the bottom of the bowl, which is fine. Add the beaten egg white, cornstarch, and flour to the wings, and mix well with a spatula. The wings should be very lightly coated with a thin batter.
  • In a deep pot, heat your frying oil to 325F. There should be enough oil so that the wings can be submerged. Fry the wings in small batches for 5 minutes each, and transfer to a sheet pan lined with paper towels.
  • After all of the wings are fried, return them to the oil in batches fry a second time for 2 minutes each batch--until they turn golden brown and crispy. Transfer the wings to a stainless steel bowl and sprinkle in the remaining spice mixture. Toss the wings until they are well coated!
  • If you like, per standard practice with fried food, feel free to add more salt to taste before serving!

2 -2 1/2 lbs chicken wings
1/2 cup soy sauce
1/4 cup hoisin sauce
1/4 cup white vinegar
1/4 cup honey
1/4 cup pineapple juice
2 garlic cloves, pressed
1/4 teaspoon red pepper flakes (use more for spicier wings)
3 tablespoons peanut oil or 3 tablespoons vegetable oil
sesame seeds (optional)
chopped fresh cilantro (to garnish) (optional)

Steps:

  • Wash the chicken wings in cold water and pat them dry. With a sharp knife, trim off each wing tip right at the joint.
  • Combine all the marinade ingredients in a nonreactive container and mix well. Add the wings, cover, and refrigerate for 4-6 hours, or overnight if desired.
  • Preheat the grill for 10-15 minutes, with all the burners on high.
  • While the grill is preheating, drain the marinade from its container into a nonreactive saucepan. Bring the liquid to a boil for a minute or two, remove pan from heat, and reserve for basting.
  • Once the grill is hot, turn one burner off and turn the other(s) to medium. Place the wings over the burner that is off. Close the grill's lid and cook the chicken for 30-35 minutes, or until the skin is crispy and brown. Turn the wings once during the cooking process, basting with the boiled marinade.
  • Transfer the wings to a serving platter, and garnish with sesame seeds and cilantro, if desired.

2 tablespoons chinese rice wine or 2 tablespoons dry sherry
1 tablespoon soy sauce
1 pinch white pepper
1/2 cup low sodium chicken broth
2 tablespoons dark soy sauce
1 tablespoon chinese rice wine or 1 tablespoon dry sherry
1 1/2 tablespoons brown sugar, packed
1 tablespoon cooking oil
3 small dried red chilies, whole
6 slices ginger, each the size of a quarter, lightly crushed
2 green onions, halved
1 cinnamon stick
1/2 teaspoon szechuan peppercorns, toasted
1 1/2 teaspoons cornstarch, dissolved in 1 tbs water

Steps:

  • Remove tips from chicken wings (can save them to make chicken stock). Cut wings apart at joint.
  • Combine the 2 tbs rice wine, 1 tbs soy sauce, and white pepper in a bowl or ziplock bag. Mix well then add chicken wings to coat. Let marinate for at least 15 minutes.
  • Meanwhile, combine broth, dark soy sauce, remaining rice wine, and brown sugar in a small bowl to make sauce.
  • Place wok over high heat until hot. Add oil and chilies, swirling to coat sides of wok. Add chicken and cook until browned on all sides, about 3-4 minutes. Add ginger, green onions, cinnamon stick, and peppercorns. Stir-fry for 1 minute. Add the sauce, bring to a boil then reduce heat to a simmer. Cook until wings are tender when pierced, about 12 minutes.
  • Remove and discard chilies, ginger, green onions and cinnamon stick. Add cornstarch solution. Cook, stirring, until sauce boils and thickens and wings are glazed.
  • Serve hot.

3 pounds chicken wings (12 to 14)
1 onion
a 1 1/2-inch piece peeled fresh gingerroot
2 tablespoons soy sauce (preferably Kikkoman)
1‚ tablespoons medium-dry Sherry
1 tablespoon Chinese five-spice powder
1 tablespoon sugar
2 tablespoons plus 1 teaspoon coarse salt
2 teaspoons freshly ground black pepper, or to taste
1/2 cup cornstarch
6 cups vegetable oil

Steps:

  • Cut off wing tips, reserving for another use, and halve wings at joint. Coarsely chop onion and finely chop gingerroot. In a large sealable plastic bag combine onion, gingerroot, soy sauce, Sherry, five-spice powder, sugar, and 1 teaspoon salt. Add wings and seal bag, pressing out excess air. Turn bag until wings are completely coated. Marinate chicken wings in bag in a large bowl, chilled, turning bag once, 2 hours.
  • Preheat oven to 350°F.
  • Transfer wings and marinade to a roasting pan or large shallow baking pan and bake, covered with foil, in middle of oven 1 hour. Cool wings until they can be handled and drain in a colander, discarding marinade. Wings may be prepared up to this point 1 day ahead and chilled, covered.
  • Reduce temperature to 250°F.
  • In a small serving bowl combine remaining 2 tablespoons salt and pepper. Put cornstarch in a small bowl and dredge each wing, knocking off excess cornstarch and transferring to a shallow pan. In a 5- to 6-quart heavy kettle heat oil until a deep-fat thermometer registers 370°F. Working in batches of 6 or 7, fry wings in oil until golden brown, about 3 minutes, and with a slotted spoon transfer to paper towels to drain. Keep wings warm on a baking sheet in oven. Fry remaining wings in same manner, returning oil to 370°F. between batches.
  • Serve wings with salt and pepper mixture.

1/2 cup canola oil
2 tablespoons reduced-sodium soy sauce
4 teaspoons Chinese five-spice powder
4 teaspoons minced fresh gingerroot
2 teaspoons salt
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Sesame seeds and sliced green onions, optional

Steps:

  • Using a sharp knife, cut through the two wing joints; discard wing tips. In a small bowl, whisk honey, oil, soy sauce, five-spice powder, ginger, salt, garlic powder and cayenne until blended. Pour 1 cup into a large resealable plastic bag. Place chicken wings in bag; seal bag and turn to coat. Refrigerate 4 hours. Cover and refrigerate remaining marinade., Preheat oven to 400°. 800g chicken wings
1 tbsp baking powder
1½ tsp Sichuan peppercorns
1½ tsp chilli flakes
3 tbsp Shaoxing wine
1½ tbsp garlic and ginger paste
3 tbsp dark soy sauce
3 tbsp light soy sauce
1½ tsp sesame oil
3 tbsp palm sugar
chopped peanuts

Steps:

  • Heat oven to 160C/140C fan/gas 3. Toss the chicken in 1 tsp salt and the baking powder - this is the secret to getting crispy skin! Put the wings on a wire rack set over an oven tray. Bake for 30 mins, turning halfway, then turn the heat up to 220C/200C fan/gas 7 and cook for 20 mins more.
  • Meanwhile, toast the peppercorns and chilli flakes until fragrant, about 2 mins, then grind using a pestle and mortar. Tip into a saucepan, then add the rest of the ingredients apart from the chopped peanuts and chilli flakes. Whisk to combine, then cook over a medium heat for 8-10 mins until thickened and bubbling. Set aside.
  • Take the chicken off the rack and tip onto the tray, then coat in the glaze. Return to the oven for 5 mins until bubbling and sticky. Serve the chicken scattered with the peanuts and chilli flakes.
