Punch is easier to prepare than individual cocktails -- especially when entertaining a crowd.

1 cup water
1/2 cup honey, preferably orange-blossom
Zest of 2 lemons, cut into long strips
1/4 cup fresh lemon juice (from 2 lemons)
4 whole star anise
4 cinnamon sticks
12 whole cloves
2 bottles dry white wine, such as Sauvignon Blanc
1 cup orange Muscat, such as Essencia
1 Golden Delicious apple, cored, halved, and thinly sliced
1 Bartlett pear, cored, halved, and thinly sliced
2 lemons, preferably Meyer, thinly sliced crosswise
12 kumquats, thinly sliced crosswise

Steps:

  • Bring water, honey, lemon zest and juice, star anise, cinnamon sticks, and cloves to a simmer in a large saucepan over medium heat. Reduce heat to low, and cook for 15 minutes.
  • To serve cold: Mix spice mixture, wines, and fruit in a large pitcher. Cover, and refrigerate overnight. Transfer to a large punch bowl, and serve with ice. To serve hot: Heat spice mixture and wines in a large pot over low heat until heated through. Add fruit, and divide among mugs.

1 orange, thinly sliced

Steps:

  • Combine wine, juice, brandy and sugar in a medium saucepan over low heat and heat until the sugar has melted. Add the orange and lemon slices and let simmer for 5 minutes. Serve in heat resistant glasses.

1 cup pomegranate juice
1/4 cup brandy
1/4 cup pure cane sugar
4 cinnamon sticks
3 star anise pods

1 2-inch strip orange zest
1 Gala apple, thinly sliced
1 Bartlett pear, thinly sliced
1/4 cup pomegranate seeds

Steps:

  • Combine the wine, pomegranate juice, brandy, sugar, cinnamon sticks, star anise, cloves and orange zest in a large saucepan and bring to a simmer over low heat. Remove from the heat and let the flavors meld for 30 minutes.
  • When ready to serve, return the mixture to low heat, bring to a simmer, then add the apple, pear and pomegranate seeds. Serve in heatproof glass mugs.

1 medium lemon, seeded and sliced
1 medium lime, seeded and sliced
2/3 cup brandy
1/2 cup sugar
2 cinnamon sticks (3 inches)
2 bottles (750 milliliters each) white wine
1 bottle (1 liter) club soda, chilled

Steps:

  • Combine first 7 ingredients in a large pitcher. Refrigerate, covered, stirring occasionally, about 4 hours. Discard cinnamon sticks. Refrigerate, covered, 2 hours longer. Just before serving, stir in chilled club soda. Serve over ice with fruit slices in each glass.

  • Juice the second orange.
  • Combine orange and lemon slices and orange juice with the wine, sugar and liquor.
