1/3 cup unsulfured molasses (not blackstrap)
2 tablespoons vegetable oil
1/2 teaspoon ground cinnamon
1/2 teaspoon coarse salt
3 cups rolled oats (not quick-cooking)
1 cup sweetened shredded coconut
1 cup pecans, roughly chopped

Steps:

  • Preheat oven to 325 degrees. In a large bowl, whisk together molasses, oil, cinnamon, and salt. Add oats, coconut, and pecans; stir gently with a rubber spatula until oats are completely coated. Transfer to a rimmed baking sheet and spread in an even layer. Bake, stirring occasionally, until oats are lightly browned, 25 to 30 minutes (watch carefully, as mixture burns easily). Let cool completely on sheet on a wire rack, 30 minutes.

Maple-glazed pecans, coconut oil and a hint of spice bring big flavor to this crunchy, cluster-packed granola, adapted from the restaurant Jon & Vinny's in Los Angeles. If you don't have flaky sea salt, kosher salt is fine; just use slightly less (about 3/4 teaspoon, give or take).

1 1/2 cups/160 grams raw pecans, broken into rough halves and quarters
1/2 cup plus 2 tablespoons/145 milliliters maple syrup
3 2/3 cups/340 grams old-fashioned rolled oats
3/4 cup/100 grams raw pepitas (pumpkin seeds)
3/4 cup/100 grams raw sunflower seeds
1/4 cup/55 grams sugar
1 teaspoon flaky sea salt
1/4 teaspoon ground cinnamon
1/8 teaspoon grated nutmeg
1/8 teaspoon ground ginger
1/2 cup/120 milliliters unrefined coconut oil, melted (or use sunflower oil, or a combination)

Steps:

  • Heat oven to 375 degrees (or 350 degrees if you are using convection). Line rimmed baking sheet with parchment paper.
  • In a small mixing bowl, toss pecans with 1/4 cup maple syrup. Set aside.
  • In a separate medium-size bowl, combine oats, pepitas, sunflower seeds, sugar, salt, cinnamon, nutmeg, ginger and oil with the remaining 1/4 cup plus 2 tablespoons maple syrup. Spread oat mixture on the prepared baking sheet. Bake for 7 to 10 minutes or until the edges are just starting to turn golden. Remove pan from oven and use a fork to gently rake the edges in toward the center and the center out toward the edges. Return to oven and bake for 7 to 10 more minutes or until edges are golden, then repeat raking process.
  • Sprinkle the maple-coated pecans over the top of the granola and bake for a final 7 to 10 minutes, or until the granola is evenly golden. Remove pan from oven, rake once more, and let cool completely. Store airtight at room temperature for up to 2 weeks.

  • Preheat oven to 300 degrees. In a large bowl, combine oats, pecans, butter, honey, and salt; mix well to coat. Transfer to a parchment-lined rimmed baking sheet and spread in an even layer. Bake until oats are lightly golden, 30 minutes, stirring halfway through. Let cool completely on sheet.

This is really quick and easy to make, and I posted variations as well -- Maple Pecan and Honey Almond. Very healthy, and it smells wonderful straight out of the oven! We eat it mixed with vanilla yogurt, or just as a snack.

1/4 cup brown sugar
1/4 cup canola oil
1/2 cup blackstrap molasses
4 cups rolled oats
1/2 cup walnuts, chopped
1/4 cup sunflower seeds
2 tablespoons flax seeds

Steps:

  • Put brown sugar, oil and molasses in large bowl, microwave for 30 seconds, then mix well with a wooden spoon.
  • Pour oats, nuts, and seeds on top of the mixture and mix everything well.
  • Line a large baking pan with aluminum foil and spray the foil lightly with spray oil. Spread the mixture evenly onto this pan.
  • Bake in preheated 350 oven for 20 - 30 minutes. Stir well after the first 10 minutes and then at 5 minute intervals until everything is lightly browned.
  • Let cool (watch out -- the nuts are HOT when they first come out of the oven) and store in airtight bags or containers.

¾ cup minced raisins
⅔ cup minced dried cranberries

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix oats, pecans, and almonds together in a bowl. Whisk oil, maple syrup, and water together in a measuring cup and pour over oat mixture; stir until evenly coated. Spread oat mixture onto 2 baking sheets.

1 1/2 cups lightly salted dry-roasted peanuts (about 7 ounces)
1/2 cup sweetened flaked coconut
1/2 cup mild-flavored (light) molasses
1/2 cup (packed) golden brown sugar
1/4 cup water
3 tablespoons vegetable oil
1 cup golden raisins

Steps:

  • Position rack in center of oven and preheat to 325°F. Spray large roasting pan with nonstick vegetable oil spray. Mix oats, peanuts and coconut in prepared roasting pan. Combine molasses, brown sugar, 1/4 cup water and oil in heavy small saucepan. Bring to boil, stirring occasionally. Pour hot molasses mixture over oat mixture; toss to coat well.
  • Bake granola 20 minutes. Stir raisins into granola. Bake until granola is deep golden, stirring frequently, about 15 minutes longer. Transfer pan to rack. Using metal spatula, scrape bottom of pan to loosen granola. Cool completely in pan, occasionally scraping bottom of pan with spatula to prevent granola from sticking.
  • (Can be made 1 week ahead. Store in airtight container at room temperature.)
