Full of fall squash, veggies and hints of chipotle powder and cinnamon, this vegan Butternut Squash & Black Bean Chili makes a really wonderful warm autumn chili!

Number Of Ingredients 19

1 tablespoon olive oil or 1/4 cup water, for water saute
1 medium onion (any color), diced
3 cloves garlic, minced (or 1 teaspoon garlic powder)
1 heaping Tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon chipotle powder, or to taste
1/4 - 1/2 teaspoon cinnamon, start small
1 small (1 1/2 - 2lb.) butternut squash (about 4 - 5 cups), peeled, seeded & diced
2 red bell peppers, cored, seeded and diced
2 cans (15 oz) black beans, drained and rinsed, or 3 cups home cooked black beans
1 can (15 oz) fire roasted diced tomatoes + juice
2 cups water or vegetable broth
2 - 3 teaspoons cocoa powder or 1 oz of dark chocolate, optional
himalayan salt, to taste
avocado
cilantro
diced onions
lime wedges
vegan sour cream

Steps:

  • Stovetop: In a large 5 - 6 quart pot, heat oil/water over medium high heat, saute the onion for 5 - 7 minutes. Add the spices, saute for 1 minute more. Add the butternut squash, bell peppers, beans, tomatoes and vegetable broth and optional cocoa, bring to a boil, reduce heat, cover, and simmer for about 45 minutes. Will be done when the butternut squash is tender. Taste for flavor. Chili will thick upon cooling.
  • Slow Cooker: Place ingredients into your slow-cooker, finishing with the vegetable broth and give a good stir. Cover and cook on low for 6 - 8 hours, or on high for 3 - 4 hours. Taste, and season with additional salt and pepper or seasonings as needed.
  • Serve with garnish of choice. Pairs great with my favorite vegan cornbread or jalapeno cornbread muffins!
  • Serves 4 - 6
  • Keep leftovers stored in the refrigerator, covered, for up to 5 days. For longer storage, store in the freezer in freezer safe containers for up to 2 - 3 months.

Butternut Squash and Black Bean Enchiladas image

1/2 medium butternut squash, peeled, seeded and cut into 2 1/2-by-1/2-inch sticks
1/4 cup vegetable oil
3/4 teaspoon chili powder, plus more for sprinkling
3/4 teaspoon ground cumin
1 teaspoon kosher salt
Freshly ground black pepper
1 large onion, diced
One 15-ounce can black beans, drained and rinsed
Three 15-ounce cans green enchilada sauce
16 corn tortillas
3 cups grated Monterey Jack or pepper jack cheese (about 12 ounces)
Chopped fresh cilantro, for topping

Steps:

  • Preheat the oven to 350 degrees F.
  • Toss the squash, 2 tablespoons vegetable oil, 1/2 teaspoon each of chili powder and cumin, the salt and several grinds of pepper on a rimmed baking sheet. Roast, tossing once, until browned and tender, but not falling apart, 25 to 30 minutes.
  • Meanwhile, heat the remaining 2 tablespoons vegetable oil in a large skillet over a medium heat. Add the onion and cook, stirring, until lightly browned and tender, about 10 minutes. Stir in the black beans and the remaining 1/4 teaspoon each of cumin and chili powder. Cook until the beans are heated through and well combined, about 2 minutes. Remove from the skillet and set aside on a plate. Pour the enchilada sauce into the skillet, then reduce the heat to low and warm through.
  • One at a time, hold the tortillas over a stovetop burner set on a medium heat to brown slightly, about 30 seconds per side. Set aside.
  • Pour 2 cups of the enchilada sauce into a 9-by-13-inch baking dish. To assemble the enchiladas, dip a tortilla into the remaining sauce, then lay on a plate. Sprinkle some cheese down the middle, followed by some of the bean mixture and finally some of the roasted squash. Roll it up tightly, then place seam-side down in the baking dish. Repeat with the rest of the tortillas. If you have any extra pieces of squash or the bean mixture, tuck them in between the enchiladas. Be sure to save a little cheese for the topping!
  • Pour the rest of the sauce over the enchiladas, then top with the remaining cheese. Add a final sprinkling of chili powder, then bake until hot and bubbly, 20 to 30 minutes. Let sit for 15 to 20 minutes before serving. Top with the cilantro.

Steps:

  • Heat dressing in Dutch oven or large deep skillet on medium heat. Add squash, yellow onions and garlic; cook and stir 7 min. or until squash is slightly softened.
  • Add seasonings; cook and stir 30 sec. Stir in tomatoes and beans; bring to boil. Cover; simmer on medium-low heat 35 min. or until squash is tender, stirring occasionally.
  • Stir in green onions and cilantro. Top with cheese.

I found this recipe in a Chatelaine magazine and had to post it immediately after I ate it. This is excellent. The spices are incredible together. I used butternut squash and had to add a little water as it was drying out while simmering.

1 (28 ounce) can diced tomatoes
1 (15 ounce) can tomato sauce
1 tablespoon chili powder
1 teaspoon cinnamon
1 teaspoon dried oregano leaves
1/2 teaspoon cayenne pepper
1/2 teaspoon allspice
3 garlic cloves
4 cups squash, coarsely chopped
2 yellow peppers or 2 green peppers, chopped
1 (19 ounce) can black beans, rinsed and drained
1 cup frozen corn or 1 cup frozen peas
1 cup fresh cilantro, chopped
low-fat sour cream (optional)

Steps:

  • In a large, wide saucepan, stir diced tomatoes with tomato sauce, spices and garlic.
  • Bring to a boil over high heat, then stir in squash. Reduce heat and simmer, uncovered and stirring occasionally, until squash is tender, about 30 minutes.
  • Stir in peppers, beans and frozen corn.
  • Boil, then reduce heat and simmer, stirring often, until peppers are soft, 10 to 15 min more.
  • Stir in cilantro and spoon into bowls. Top with low-fat sour cream.

2 onions, chopped
8 garlic cloves, chopped
2 1/2 chili powder
1 tablespoon ground coriander
2 14.5-ounce cans fire-roasted tomatoes
1 pound dried black beans, rinsed
2 chipotle chiles from canned chipotle chiles in adobo, minced
2 teaspoons dried oregano (preferably Mexican)
Coarse kosher salt
1 2 1/4-pound butternut squash, peeled, seeded, cut into 1/2-inch cubes (about 3 cups)
1/2 cup quick-cooking bulgur
Sour cream
Coarsely grated hot pepper
Monterey jack cheese
Diced red onion chopped
Fresh cilantro
Pickled jalapeño rings
Ingredient info: Chipotle chiles in adobo can be found at some super markets and at Latin markets. Look for bulgur at super markets and natural foods stores.

Steps:

  • Heat oil in heavy large pot over medium-high heat. Add onions and cook until soft and beginning to brown, stirring often, about 8 minutes. Add garlic; stir 1 minute. Sprinkle chili powder and coriander over; stir 1 minute. Stir in tomatoes with juice, beans, chipotles, and oregano. Add 10 cups water. Bring to boil, reduce heat to low, cover with lid slightly ajar, and simmer until beans are tender, stirring occasionally, about 2 hours (time will vary depending on freshness of beans). Season to taste with coarse salt and freshly ground black pepper. DO AHEAD: Chili can be made up to 2 days ahead. Cool slightly. Refrigerate uncovered until cold, then cover and keep chilled. 1 large yellow onion, chopped
2 cups butternut squash, cubes cut into 1/2-inch squares
3 garlic cloves, minced
1 poblano pepper, membranes and seeds removed, cut into 1/2-inch pieces
1 jalapeno pepper, seeded, finely chopped
2 teaspoons ground cumin
2 teaspoons chili powder
1 teaspoon ground coriander
28 ounces can Italian plum tomatoes
1 1/2 cups chicken stock
2 tablespoons tomato paste
1 tablespoon sriracha asian garlic sauce, plus extra for serving
1 bay leaf
2 cups canned black beans, drained
2 teaspoons salt
1 teaspoon fresh ground black pepper
1/4 cup chopped cilantro leaf, plus extra for garnish
chopped fresh avocado (to garnish)

Steps:

  • Heat olive oil in a stockpot or deep skillet over medium heat. Add sausages and brown on all sides. Transfer to a plate lined with a paper towel. When cool enough to handle, cut in 1/4-inch slices.
  • Add onion to pot and saute until softened, 3-4 minutes. Add squash, garlic and peppers. Saute 3 minutes. Add dry spices and cook, stirring, 1 minute. Add tomatoes, chicken stock, tomato paste, Sriracha and bay leaf. Simmer until squash is tender, about 20 minutes. Stir in black beans, sausage, salt and pepper. Simmer 10 more minutes. Taste to adjust seasoning.
  • Before serving, add cilantro. Serve in bowls garnished with additional cilantro, chopped avocado and a drizzle of sriracha.
  • (Chili may be made up to 24 hours in advance. Cool, cover and refrigerate. Re-warm over medium heat to serve.).
