SHRIMP FRA DIAVOLO WITH LINGUINE



Shrimp Fra Diavolo with Linguine image

A spicy red sauce makes this classic Italian-American shrimp and pasta dish irresistible (go for big shrimp!)

1 pound dried linguine
Kosher salt (to taste)
4 tablespoons olive oil (, divided)
Freshly ground pepper (to taste)
2 pounds extra-large shrimp (12/25 count) (, peeled and deveined)
1 large onion (, halved and thinly sliced)
4 teaspoons minced garlic
½ teaspoon dried oregano
¼ teaspoon red pepper flakes (, or to taste)
1 cup dry white wine
1 can (28 ounces) diced tomatoes
½ cup sliced or torn fresh basil leaves (, divided)
Freshly grated Parmesan (to serve (optional))

Steps:

  • Heat 1 tablespoon of the oil in a very large skillet over medium-high heat. Add half the shrimp , season with salt and pepper, and sear for 1 minute on each side, just so the shrimp start to turn a brighter pink on the outside. Remove with tongs to a plate. Repeat with another tablespoon of oil and the remaining shrimp, seasoning them as well, then add the second batch of seared shrimp to the plate.
  • Return the pan to medium heat. Add the remaining 2 tablespoons oil and when the oil is hot, add the onions and saute for about 5 minutes until they become tender. Add the garlic, oregano and red pepper flakes, and saute for one more minute until you can smell the garlic. Pour in the wine and cook until the wine has reduced by about half, about 3 minutes.
  • Stir in the tomatoes and bring to a simmer. Stir occasionally for 20 minutes, until the flavors meld and the sauce has thickened a bit.
  • While the sauce simmers, bring a large pot of salted water to a boil. Cook the pasta according to package directions.
  • Just before the pasta is done, add the partially cooked shrimp and half of the basil to the tomato sauce and stir until the shrimp is hot and cooked through, about 2 minutes.
  • Drain the pasta, reserving ½ cup of the pasta cooking water, and return to the pot. Pour over the sauce with the shrimp, add the ½ cup pasta water, and toss to combine. Transfer to a shallow serving bowl, and top with the remaining basil. Sprinkle with some Parmesan or serve the shrimp dish with the Parmesan passed on the side for those who want it.

1 onion
1 bell pepper
2 stalk(s) celery
1 bunch green onions
1 can(s) rotel tomatoes & green chiles (10 oz.)
1 can(s) tomato sauce (12 oz.)
2 can(s) cream of mushroom soup (10 oz.)
1 can(s) sliced mushrooms (8 oz.)
1 lb shrimp, peeled
To taste creole seasoning

Steps:

  • 1. Melt butter in a large saucepan.
  • 2. Add onions, bell pepper, celery, and green onions and saute until tender.
  • 3. Add remaining ingredients.
  • 4. Cook over low heat for about an hour.
  • 5. Serve over cooked pasta or rice.

Shrimp and scallop pasta in Cajun cream sauce is a house favorite! Giant shrimp or king prawns, scallops and Andouille sausage (or use chicken or turkey Andouille sausage) sautéed with peppers and onions in a lighter spicy Cajun cream sauce tossed with gluten-free fusilli pasta noodles.

½ lb. jumbo shrimp
½ lb. scallops
2 Andouille sausage links (turkey or chicken Andouille sausage for a healthier version, cooked)
12 oz. TresOmega gluten-free fusilli pasta noodles
½ red bell pepper (cut into slices)
½ green bell pepper (cut into slices)
½ cup white onion (diced)
2 teaspoons minced garlic
8 oz. whipped cream cheese
½ cup half and half
½ cup grated Parmesan cheese
1 cup white wine
1 vegetable bouillon (no salt added)
2 Tablespoons tomato paste
1-2 Tablespoons Cajun seasoning
1 ½ teaspoons Himalayan salt
¼ teaspoon freshly ground black pepper
1 Tablespoon parsley (chopped)
1-2 Tablespoon olive oil

Steps:

  • Cook the vegetables: In a medium skillet heat 1 tablespoon of olive oil and add the onions, red bell pepper slices and green bell pepper slices. Heat on medium-high until the onions become translucent about 10 minutes continuously mixing. Set aside until ready to use.
  • Prepare the meat: In a skillet add olive oil then the shrimp and scallops. Cover and heat for 5 minutes on medium heat or until the shrimp starts to turn pink and the scallops are no longer translucent. Make sure not to over-cook them. Remove from the pan and set aside to cool. Meanwhile slice the sausage. When the shrimp and scallops are cool enough to handle remove the legs, shells and tails of the shrimp then cut each shrimp into thirds. Cut the scallops in half or thirds as well so you have the seafood in large chunks. Set the meat aside until ready to use.
  • Make the Cajun cream sauce: In a saucepan or skillet add the garlic and heat on low-medium about 1 minute then add the cream cheese, half and half, Parmesan cheese, white wine, vegetable bouillon, tomato paste, 1-2 Tablespoon Cajun seasoning (for a super spicy dish use up to 2 tablespoons and for a more mild dish use 1 tablespoon), salt and pepper. Mix it continuously to melt the cheeses and combine the flavors. Cover and heat on low for about 15-30 minutes while you make the pasta.
  • Make the pasta according to the package directions. Reserve ¼ cup of the water then drain the noodles. In a large bowl mix together the noodles, sausage, shrimp, scallops, cooked onions and peppers and desired amount of the sauce. If the sauce is too thick add a little of the reserve water from the noodles. Toss to combine the ingredients well and garnish with freshly chopped parsley.

This is a simple recipe with a flavorful outcome. I took some ingredients from a couple of different pasta and shrimp recipes I've tried in the past and came up with this one.

1 lb shrimp, peeled and deveined
12 ounces spaghetti
3 garlic cloves, minced
3 green onions, chopped
1 lemon, juice and zest of
2 teaspoons red pepper flakes or 1 -2 jalapeno pepper, finely diced
2 tomatoes, chopped
1 teaspoon salt
1 teaspoon dried basil
1 teaspoon dried oregano
1/4 cup dry white wine
salt and fresh black pepper
1/2 cup parmesan cheese, grated

Steps:

  • Boil the pasta in salted water according to package directions.
  • Drain well reserving about 1 cup of pasta water.
  • When pasta is almost done cooking, sprinkle about one tablespoon of olive oil in a cold nonstick.
  • Turn heat on to medium high let pan warm for a minute or two. You want the pan to just be warm when you hold your hand over the surface.
  • Add the shrimp, garlic, onion, lemon zest, and pepper flakes (or jalapeno) and cook stirring constantly for 2-3 minutes. Shrimp will just start to turn opaque but not yet pink.
  • Add tomatoes, salt, basil, oregano, lemon juice, and white wine. Stir and cook for another 2-3 minutes or until shrimp turn pink.
  • Add in the 1 cup reserved pasta water.
  • Taste sauce and adjust seasonings to your taste.
  • Spoon over drained pasta and garnish with fresh black pepper and grated parmesan cheese.

This is a basic at our house, and we have it two or three times a month. I love the french dressing flavor instead of blah macaroni.

2 cups salad macaroni, uncooked
1/4 cup French dressing
1/4 cup sliced green onion
4 ounces cheddar cheese, cubed
1/4 cup diced sweet pickle
1 tablespoon prepared mustard
1 cup mayonnaise
salt and pepper or seasoning salt
1 can shrimp, drained and rinsed

Steps:

  • Boil macaroni until tender.
  • Drain and rinse with cold water to keep it from sticking together.
  • Add dressing and chill for at least one hour, or overnight.
  • Combine mustard, mayonnaise and seasonings.
  • Add together with remainder of ingredients to the macaroni and mix well.
  • Better if mixed an hour ahead of eating, so the flavors can blend together.

1 cup uncooked elbow macaroni
1 tablespoon finely diced onion

¼ teaspoon hot pepper sauce

1 cup cherry tomatoes
2 tsp lemon olive oil (or extra virgin olive oil)
1 tsp salt
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp black pepper
4 cup low sodium vegetable broth
1/4 cup prepared pesto
1/3 cup heavy cream
3 cups fresh baby spinach
1 lb large raw frozen shrimp (21-25 per pound (thawed))
1 tsp salt
1/2 tsp black pepper
1 tsp smoked paprika
1 tsp chili powder
2 tbsp extra virgin olive oil
3 cloves minced garlic

Steps:

  • Preheat oven to 400 degrees F.
  • In a large bowl add thawed shrimp. Add olive oil, salt, pepper, paprika, chili powder, and garlic. Toss until all the shrimp is coated.
  • In a large sheet pan add shrimp in a single layer. Bake for 10-13 minutes or until cooked through (pink and opaque). Set aside.
  • Pour the pasta shells (or pasta of your choice) into a deep (4.5 qt) pot.
  • Add the cherry tomatoes, salt, pepper, oregano and thyme. Pour the broth over these ingredients and bring the liquid up to a boil over medium high heat.
  • Cook the pasta for 9-11 minutes, or until the texture of the shells reaches al dente.
  • Next, turn off the heat and add a heaping spoonful of pesto, heavy cream and spinach. Mix everything together while the pot is still hot - this will allow the spinach to naturally wilt without getting too soggy.
  • Serve immediately in your favorite pasta bowl. Top with shrimp.
