NACHO SOUP
This soup is filled with everything that our favorite nachos have: LOTs of cheese, chicken, beans and corn. Fire-roasted tomatoes gives the broth a slightly charred and smoky flavor.

Steps:
- In a large pot or Dutch oven over medium heat, heat oil. Add onion and cook until tender and golden, 6 minutes, then add garlic, cumin, chili powder, and cayenne and stir until fragrant, 1 minute.
- Add fire-roasted tomatoes, corn, black beans, and chicken and stir until combined, then pour over chicken broth.
- Bring to a simmer and let cook, 15 minutes, then stir in heavy cream and cheese until melty.
- Garnish with sour cream, tortilla chips, cilantro, and tomatoes and serve.
SLOW COOKER NACHO SOUP RECIPE BY TASTY

Steps:
- Place chicken, onion, garlic and spices into a 6-quart slow cooker.
- Using a set of tongs or a large spoon, mix the ingredients together. Once mixed, pour in chicken broth.
- Set slow cooker to HIGH, cover and cook for 3 hours.
- After 3 hours remove and shred the chicken into bite-sized pieces.
- Return shredded chicken to the slow cooker and add tomatoes, beans, heavy cream and cheese.
- Cover and set slow cooker to the LOW setting. Let soup cook for an additional 45 minutes.
- Ladle soup into bowl and top with favorite nacho toppings. Serve with tortilla chips.

- In a large bowl, combine the first 7 ingredients; mix well. Crush chips; set aside 1 cup for topping. Add remaining chips to chicken mixture. Spoon into a greased 13x9-in. baking dish; sprinkle with reserved chips. Bake, uncovered, at 350° until cheese is melted and edges are bubbly, 30 minutes. - Combine the tomato paste, tomatoes, potato, zucchini, onion, jalapeno, garlic, oregano, cumin, cilantro and hominy in a 6-quart slow cooker. Add the crushed torilla chips, the chicken broth and 1/2 teaspoon salt. Cover and cook on low, 7 1/2 hours. Add the chicken and cook 30 minutes longer.
- Combine the cheese and milk in a medium microwave-safe bowl; microwave, whisking occasionally, until melted and smooth, 2 to 3 minutes. Serve soup topped with tortilla chips, the cheese sauce, and sliced jalapeno.

- In a Dutch oven or large heavy stockpot, heat olive oil over medium high heat until shimmering. Add onion, cooking 2 minutes or until translucent. Add garlic and stir 1 minute more. Add cumin, oregano, and chili powder, stirring 1 minute until mixture is well combined and fragrant. Add cans of fire-roasted tomatoes with all its juices, frozen corn, black beans, and the shredded chicken with all its juices. Stir to combine well. Add chicken broth and bring to a simmer. Simmer 10-15 minutes or until warmed through. Add kosher salt and freshly ground black pepper to taste, if needed.
- Divide soup into individual serving bowls. Sprinkle shredded cheese on top and garnish as desired (nacho chips are a favorite.)
