1 deep dish pie shell
1 1/2 teaspoons olive oil, divided
1 shallot, chopped
5 eggs
1/2 cup 1% milk
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
1/2 cup old cheddar cheese, shredded
3 nuggets frozen spinach, thawed, prepared according to package directions and well drained
1 tablespoon fresh basil, chopped
1 cup cherry tomatoes or 1 cup grape tomatoes, pricked with a toothpick
1/3 cup feta cheese, crumbled

Steps:

  • Preheat oven to 450°F
  • Place pie shell on parchment paper-lined baking sheet.
  • Heat 1/2 teaspoons oil in a small skillet on medium-high heat. Add shallot and cook until translucent. Cool and distribute evenly over pie shell.
  • In a bowl, whisk together eggs, milk and half the salt and pepper until combined. Stir in the cheddar cheese, spinach, and basil, and pour into the pie shell.
  • Bake for 10 minutes. Meanwhile, in a small bowl, toss tomatoes with remaining oil, salt and pepper.
  • Remove quiche from oven and reduce heat to 375°F Place tomatoes on baking tray with quiche and return to oven. Bake for 30 minutes until quiche is golden brown and firm to the touch.
  • Let rest 5 minutes before cutting into 8 slices and top each with a few roasted tomatoes and crumbled feta.

15 ounces (400 g) cherry tomatoes
3 tbsp extra virgin olive oil
4 ounces (120 g) feta (in a block not crumbled)
fresh ground pepper
1 tsp dry oregano
1 small hot pepper
2 tbsp fresh chopped mint or basil
4 oz (about 1 cup) dry penne pasta or similar type (optional)

Steps:

  • Preheat the oven at 350 F (180 C)
  • In medium sized baking dish spread the tomatoes.
  • Drizzle 2 tablespoons over the tomatoes and toss.
  • Place the feta in the center of the baking dish, sprinkle with oregano, black pepper and place the hot pepper on top of the feta. Drizzle with 1 tablespoon olive oil.
  • Bake for 35 minutes. If adding pasta, start boiling it now and set aside.
  • Remove from oven and smash the feta -tomato a bit before serving.
  • Sprinkle with chopped mint before serving

1/3 cup chopped marinated roasted tomatoes
1 garlic clove, thinly sliced
1/4 cup olive oil

Pinch of red pepper flakes
1/4 teaspoon kosher salt
1/4 teaspoon black pepper
Chopped fresh parsley and oregano leaves
Toasted baguette slices or crackers for serving

Steps:

  • Preheat the oven to 375 degrees F. Arrange a top rack in the oven 4-6 inches from the broiler.
  • Place the feta in a small baking dish. The cheese should have some space around it for the olives and tomatoes.
  • In a medium bowl, combine the olives, tomatoes and garlic. Then spoon them around the feta.
  • Whisk together the olive oil, oregano, red pepper flakes, salt and pepper in a small bowl. Pour the olive oil over everything in the baking dish.
  • Bake the feta for 15-18 minutes, until it just starts browning at the edges. Turn on the broiler, and brown the top of the cheese, about 2-3 minutes.
  • Sprinkle with chopped parsley and oregano leaves before serving warm with toasted baguette slices or crackers.

1 tomato

1/2 hot chili pepper
1 tbsp extra virgin olive oil

Steps:

  • To prepare this delicious Greek baked feta recipe, start by preparing the vegetables. Slice the onion and pepper into rings or half rings and chop the tomato into small cubes. (Use the ripest tomato you can find.)
  • Place the block of feta on some aluminum foil and top with the tomato, onion and pepper. Drizzle with extra virgin olive oil and sprinkle with oregano. Wrap the feta cheese with the aluminum foil and place on a baking tray. (Make sure that the aluminium foil isn't torn, to keep the juices inside).
  • Bake in preheated oven at 180C until the vegetables have softened, for about 20 minutes.

A wonderfully simple Greek appetizer of baked feta cheese with tomatoes, peppers, olives, oregano and paprika. This tastes a bit like a warm Greek salad and is wonderful smooshed onto bread with or without a glass of ouzo or wine!

3.5 ounces feta cheese ((Try to buy an entire thick slice - I prefer Greek))
9 ounces cherry tomatoes (cut in half)
½ red pepper (sliced into smallish strips)
½ green pepper (sliced into smallish strips (or just use 1 green or red pepper))
¼ medium onion ((¼ to ½) sliced thinly)
15 Kalamata olives (stoned and chopped in half (or leave whole but buy stoned olives))
½ tablespoon dried oregano
¼ cup extra virgin olive oil (plus a little extra)
1 teaspoon paprika
black pepper to taste

Steps:

  • Pre-heat the oven to 190C/375F. Put the tomato halves, pepper pieces, onion and olives into a small to medium baking dish (around 8 inch x 8 inch or similar).
  • Sprinkle over the oregano and pour over the olive oil. Mix well.
  • Clear a gap in the middle of the vegetables. Nestle the block of feta in it.
  • Sprinkle the whole dish with the paprika and some black pepper (to taste). Drizzle the top of the cheese with a little more olive oil.
  • Bake for 30 minutes until the vegetables are starting to bubble and brown and the feta is soft.
  • Serve immediately with fresh toasted bread (everyone serves themselves onto individual plates).

½ red onion (sliced)
½ green bell pepper (sliced into rounds)
1/2 cup cherry tomatoes (about 3 ounces, halved)
2 tsp dried oregano
½ tsp red pepper flakes (optional)
3 to 4 fresh thyme sprigs (optional)
Extra Virgin Olive Oil
8 oz Block of quality feta cheese (do not crumble)
Fresh mint leaves for garnish ((optional) )
Crusty bread or pita chips to serve

Steps:

  • Heat the oven to 400 degrees F and adjust a rack in the middle.
  • Arrange the onions, bell peppers, and cherry tomatoes at the bottom of a ramekin or oven-safe dish. Sprinkle with 1 tsp oregano, pinch red pepper flakes, and add some of the fresh thyme. Drizzle a bit of extra virgin olive oil.
  • Add the feta on top of the arranged veggies. Season the feta block with the remaining dried oregano, pinch of red pepper flakes and whatever remains of the fresh thyme. Drizzle a generous amount of extra virgin olive oil on the feta and make sure to brush the sides with some of the oil.
  • Place the baking dish on the middle rack of the oven and bake for 20 to 30 minutes (and if you like, you can stick it under the broiler very briefly to add color).
  • Serve with pita chips or toasted Italian bread.

2 tablespoons extra-virgin olive oil (more for drizzling)
1 teaspoon cumin seeds
1 bunch lacinato kale (stems removed and torn into bite sized pieces)
2 cups tomato sauce ( or Marinara Sauce)
1 1/2 cups cooked chickpeas (drained and rinsed)
1 tablespoon fresh lemon juice (plus wedges for serving)
1 12-ounce block of feta, cut into 1/2-inch planks
freshly ground black pepper
pinch of red pepper flakes
warm pita or baguette (for serving)

Steps:

  • Preheat the oven to 350°F.
  • Heat a 10 or 12-inch oven-safe skillet over medium heat and add the oil. Add the cumin seeds and let them sizzle gently for a minute or two. Add the kale in batches, letting each handful shrink and wilt before adding the next.
  • When the last of the kale has wilted, add the tomato sauce, chickpeas, lemon juice, and 1/2 cup water. Stir and let it come to a simmer.
  • Nestle the feta slices into the sauce and sprinkle with freshly ground black pepper. Slide the skillet into the oven and bake until the feta has softened, about 15 minutes. Drizzle with olive oil and a pinch of red pepper flakes and serve with warm pita and lemon wedges.

1 red sweet bell pepper
10 ml olive oil
20 g unsalted butter
400 g feta cheese
2 large onions
3 tomatoes
3 garlic cloves
50 g fresh parmesan cheese
paprika

Steps:

  • Preheat the oven to 220°C/425°F/Gas Mark 7
  • You will need two individual serving dishes that can go into the oven.
  • De-seed and cut the bell pepper length ways into 3 cm strips.
  • Brush the pepper slices in a little oil and place on a preheated non stick baking tray and roast for about 20 minutes. Remove from the oven.
  • Char the skin of the pepper slightly with a cooks blow torch if you think the skin isn't looking nice and roasted. Put the peppers to one side.
  • Now, in a saucepan, melt the butter and the olive oil.
  • Slice the onion thinly and finely chop the garlic. Add the onion and garlic to the saucepan. Over a low heat, cook until soft but not coloured.
  • Cut the feta cheese into 2cm cubes.
  • Using individual serving dishes, layer the onions, with the thinly sliced tomatoes and the roasted red pepper slices.
  • Top with the cubed feta cheese. Finish by sprinkling with the grated parmesan cheese. Sprinkle a pinch of paprika on top of each dish.
  • Cover with aluminium foil (trying not to touch the cheese) and bake in the oven for about 15 minutes. Uncover and bake for another 5 to 10 minutes, or until the feta starts to get a nice colour.
  • Take care not to cook too much as it looks better if the feta stays in cubes.
  • Serve with nice fresh crusty bread.

8 ripe pearl tomatoes, or, 1 large vine-ripened tomato
4 TBSP. extra virgin olive oil
--- sea salt & crushed red pepper flakes
½ medium green bell pepper (or 2 sweet banana peppers)
2 thick slices of Greek Feta (about 6 oz.)
1 tsp. dried Greek oregano
4 slices of hearty multigrain bread, grilled

Steps:

  • Preheat the oven to 425˚F.
  • Slice the pearl tomatoes horizontally (each one in four pieces) and place on paper towels to drain. (If you are using one large tomato, cut the end pieces and slice the rest in six slices). After 3-4 minutes, turn them over and place on new paper towels. Cut the pepper into four rings and set aside.
  • Oil well a small, shallow ceramic baking dish (or four individual ceramic ramekins) and place half of the tomato slices at the bottom. Sprinkle with some sea salt and crushed pepper flakes. Top with half the bell pepper slices.
  • Arrange the two Feta pieces on top of the tomato/pepper layer, place the remaining tomato slices on top of each piece of cheese, and place the rest of the bell pepper rings on the tomato. Drizzle liberally with the extra virgin olive oil, sprinkle with oregano and some more pepper flakes, and transfer to the middle of the oven.
  • Bake for about 25 minutes, or until the feta turns a light-golden color and the oil is sizzling. If you want to deepen the color, you can place the dish under the broiler for 1-2 minutes at the end of the cooking time.
  • Brush some olive oil on the slices of good, multigrain bread, and grill on both sides. Serve the baked feta immediately with some warm grilled bread.
