Provided by Susie Weinrich

Categories     Side Dish

Time 1h20m

Number Of Ingredients 12

12 cups Stale White Bread - cut into 1 inch cubes ((approx 1 lb 4 oz loaf of bread - see notes below for details))
3/4 cup plus 2 tbsp butter (divided )
1 large yellow or white onion, chopped
2 cup celery, chopped (stalks and leaves!)
1 1/2 tsp kosher salt
1 tsp black pepper
1 tsp poultry seasoning
1/2 tsp marjoram
3 tbsp (heaping) fresh sage, chopped
1/3 cup fresh parsley, chopped (Curly or Italian will work)
2 eggs
1 cup chicken broth or stock

Steps:

  • Cut the bread into 1 inch cubes.
  • Make the bread stale by one of the two options:A. Overnight - Lay the bread cubes on a sheet pan on the counter overnight to dry out.B. Quick Method - Preheat the oven to 250°, lay the bread cubes on a sheet pan and pop in the oven for 30 minutes, tossing every 5-10 minutes.
  • Preheat the oven to 350° and prep a 9x9 baking dish by generously greasing with butter or oil. (if you are doubling the recipe use a 9x13 or 10x15 baking dish)
  • In a large saute pan over medium heat melt 3/4 cup butter. Add the onions and celery and saute until they are completely softened, this will take about 20 minutes.
  • Off the heat add the salt, pepper, poultry seasoning, marjoram, fresh sage and parsley to the onions.
  • In a small bowl whisk together the eggs and broth.
  • Add the bread cubes to a large bowl, pour the onions/herb mixture over the bread and stir to combine. Pour the egg mixture over the bread cubes and stir until the liquid is absorbed.
  • Pour the stuffing mixture into the buttered baking dish. Cube the remaining 2 tbsp of butter and dot the top of the stuffing.
  • Cover the dish with foil and bake for 30 minutes. remove the foil and bake for another 15 minutes. For an extra crispy top turn the broiler on for a minute or two!
  • Serve right away!

MOM'S STOVETOP TURKEY STUFFING

Mom's Stovetop Turkey Stuffing image

Here's an easy Thanksgiving turkey stuffing recipe made with French bread cubes toasted in butter and tons of tasty add-ins, plus savory turkey giblets. No stuffing is better than Mom's!

Provided by Elise Bauer

Categories     Side Dish     Make-ahead     Dressing     Stuffing     Thanksgiving     Turkey

Time 3h

Yield 10

Number Of Ingredients 12

Neck and giblets from 1 turkey to make a light stock (or 2 to 3 cups of chicken stock)
1 cup walnuts
1 loaf day old French or Italian bread, cut into 3/4-inch cubes (about 10 to 12 cups)
2 cups chopped onion
2 cups chopped celery
6 tablespoons unsalted butter
1 green apple, peeled, cored, chopped
3/4 cup currants or raisins
5 chopped green pimento olives, pimento removed (can use up to 10 olives)
1/4 cup chopped fresh parsley
1 teaspoon poultry seasoning or ground sage, to taste
Salt and freshly ground pepper, to taste

Steps:

  • Cook on low heat: Cover and turn heat to low. Cook for an hour or until the apples are cooked through. Check every 15 or 20 minutes or so and add water or stock as needed while cooking to keep the stuffing moist and keep it from sticking to the bottom of the pan. You'll likely need to add at least one more cup of stock or water, if not two. The stuffing should not be crispy or crunchy, but softened, as it would be if it had been cooked entirely inside the turkey.

MOM'S AWESOME STUFFING

Mom's Awesome Stuffing image

This is my mom's recipe. I was raised on stuffing (my parents are from up north but now live in the south), not dressing so if I want stuffing when I have a turkey I either have to go to my mom's house or I have to make it myself. My mom is not a recipe kind of person but I helped her make it (so I could learn) and wrote it down as we went. These are all appoximations since I tend to vary the amounts as I cook it just like she does in her cooking. One thing is for sure, it's delicious!!! Oh yeah, it makes enough for an army... I am not sure about the cooking time, it could be more, depending if you cook it in a turkey or less if not, for the most part everything is cooked except the vegetables. ENJOY!

Time 2h10m

Yield 15-20 serving(s)

Number Of Ingredients 12

2 lbs hot pork sausage
1 stalk celery
2 -3 portabella mushrooms (cutup, 10 pieces)
3 large onions
1 zucchini
2 yellow squash
5 -7 slices whole wheat bread (cut into small cubes)
1 (16 ounce) package pepperidge farm herb seasoned stuffing mix
poultry seasoning (lots of it!)
sage (lots!)
cranberries (if you desire)
apple (Granny Smith is good but your choice)

Steps:

  • Brown sausage and drain partially. (Keep some grease for stuffing).
  • Cook Pepperidge Farm stuffing according to directions on package.
  • Mix sausage, part of grease, cooked stuffing and all other ingredients, cooking on low on stovetop, continue to cook a while and taste, cook and taste.
  • When it taste to your liking, you can either put it in the oven for 350 degrees for an hour or hour and a half or the best way is to stuff the turkey loosely with it. Don't forget to sew the turkey. If you do stuff the turkey, you will most likely have extra stuffing so you will have to bake some of it in a oven safe dish like I was talking about before.
  • If you cook it in a dish in the stove, make sure you stir it every 20-30 minutes.

AWESOME SAUSAGE, APPLE AND CRANBERRY STUFFING

Awesome Sausage, Apple and Cranberry Stuffing image

This Thanksgiving stuffing is fantastic! It is very flavorful and fresh-tasting. This recipe will stuff a 10-pound turkey (which serves six) plus extra. I replaced the usual pork sausage with much healthier turkey sausage. Other dried fruits may also be used in place of cranberries.
