When you need a stick-to-the-ribs dish for hearty appetites, this flavorful dish will fill the bill!

2 pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes
4 cups water
1 1/2 cups milk
6 tablespoons butter or margarine
1 container (18 or 20 ounces) refrigerated original barbecue sauce with shredded beef
1 1/2 cups shredded Cheddar cheese (6 ounces)
1 cup (from 2.8-ounce can) French-fried onions

Steps:

  • Heat oven to 350°F. Spray rectangular baking dish, 11x7x1 1/2 inches, with cooking spray.
  • Make potatoes as directed on pouch, using water, milk and butter. Spread half of the potatoes over bottom of baking dish. Layer with beef, 1 cup of the cheese and remaining potatoes.
  • Cover with aluminum foil and bake about 30 minutes or until hot. Sprinkle with remaining 1/2 cup cheese. Sprinkle onions around edges of baking dish. Bake uncovered 3 to 4 minutes longer or until cheese is melted and onions are brown.

Amazing potatoes that are easy and don't require a lot of ingredients. Using I Can't Believe It's Not Butter!® Light not only makes the potatoes really soft and yummy it also cuts the calories and fat in half.

12 small red potatoes, quartered
salt and ground black pepper to taste
1 pinch garlic powder, or to taste
1 pinch dried oregano, or to taste
½ cup light butter-flavored spread (such as I Can't Believe It's Not Butter ® Light)

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Spray four sheets of aluminum foil with cooking spray.
  • Divide potatoes evenly among the sheets of aluminum foil; season with salt, pepper, garlic powder, and oregano. Place 2 tablespoons of the butter flavored spread over each mound of potatoes. Create packets by folding and sealing the aluminum foil. Place the foil packets on a baking sheet.
  • Bake in the preheated oven until potatoes are tender and easily pierced with a fork, 55 minutes to 1 hour. Drain melted butter-flavored spread before serving.

1 (5 1/3 medium) lb potatoes, cut into 1/2-inch cubes
1 lb lean ground beef
1 small green bell pepper, coarsely chopped
1 cup prepared hickory flavored barbecue sauce

Steps:

  • Cut 4 sheets, 12 inches square, of heavy duty aluminum foil.
  • Heat oven to 450 degrees.
  • In bowl, mix all ingredients; divide equally among foil sheets (about 1 1/2 cups each), placing mixture on right halves of foil squares.
  • To seal each pouch, fold left side of foil over mixture.
  • Fold in right edge 1/2 inch; fold again.
  • Fold top and bottom edges the same way, leaving room for heat to circulate inside pouch.
  • Place on baking sheet and bake in center of oven 35 minutes.
  • To open pouches, with scissors, cut a cross in the top of each, then pull back points, being careful as steam is released.

1 tablespoon vegetable oil
1 1/2 tablespoons mccormick grill mates barbecue seasoning

Steps:

  • Preheat oven to 400°F Line baking pan with foil; coat with nonstick cooking spray.
  • Toss potatoes with oil in large bowl. Add Barbecue Seasoning; toss until evenly coated. Place potatoes in single layer on the prepared baking pan.
  • Bake 40 minutes or until potatoes are tender and browned, stirring halfway through cook time.

1/3 cup oil
1 tablespoon chili powder
2 1/2 teaspoons onion powder
3 teaspoons garlic powder

1 teaspoon paprika
2 teaspoons salt (or to taste)
1/4 teaspoon cayenne pepper (or to taste)
black pepper (optional)

Steps:

  • Set oven to 400 degrees F.
  • Mix together all spices with the oil in a large bowl.
  • Cut the potatoes in quarters, then place in the bowl; toss to coat with oil/spice mixture.

I got a free sample of these potatoes in the mail from Betty Crocker and was looking for a way to use them other than just as mashed potatoes. This would be a great way to use left over "real" mashed potatoes (use about 5-6 cups prepared) and homemade shredded barbecue. Instead of beef, barbecued pork or chicken could also be used.

1 (6 5/8 ounce) box instant roasted garlic mashed potatoes
2 cups water
1/4 cup butter or 1/4 cup margarine
1 1/3 cups milk
1 (18 ounce) container shredded beef with barbecue sauce
6 ounces cheddar cheese, shredded
1 (2 7/8 ounce) can French-fried onions

Steps:

  • Heat oven to 350°F.
  • Grease an 11x7-inch baking dish or spray with cooking spray.
  • Bring water and butter to a boil in a 3-quart saucepan. Remove from heat and add milk and stir in both pouches of seasoned potato flakes just until well blended. Let set for one minute or until liquid is fully absorbed then stir vigorously with a fork until smooth.
  • Spread half of the potatoes over bottom of baking dish. Layer with beef, 1 cup of the cheese and remaining potatoes.
  • Cover with aluminum foil and bake about 30 minutes or until hot.
  • Sprinkle with remaining 1/2 cup cheese. Sprinkle onions over cheese.

  • Preheat the oven to 400 degrees. Wash the potatoes well and then dry them off with a clean dish towel. Prick the potatoes several times on all sides with a fork. Rub about a half teaspoon of vegetable oil over the surface of each potato and then sprinkle lightly with salt. Place the potatoes on a baking sheet covered with foil and bake for one hour or until the potatoes are tender all the way through (test the tenderness by squeezing the potato with an oven mitt or clean dish towel to protect you from the heat).
  • While the potatoes are baking, thaw and reheat your shredded beef. Mix 1/4 cup of your favorite BBQ sauce in with the shredded beef. Thinly slice the green onion.
  • Once the potatoes are finished cooking, slice each one lengthwise from end to end. Use a dish towel or oven mitt to protect your hands and push each end of the potato in toward the center to make it pop open. Pile half of the BBQ beef into each potato and top with about 2 tablespoons of shredded cheese. Return the potatoes to the still warm oven for a few minutes, or until the cheese is melted.
  • Once the cheese is melted, drizzle about one tablespoon of BBQ sauce over top of each potato and then sprinkle with green onions. Place of dollop of sour cream on top of each and enjoy!
