BARBECUE BEEF AND POTATO BAKE
When you need a stick-to-the-ribs dish for hearty appetites, this flavorful dish will fill the bill!

Steps:
- Heat oven to 350°F. Spray rectangular baking dish, 11x7x1 1/2 inches, with cooking spray.
- Make potatoes as directed on pouch, using water, milk and butter. Spread half of the potatoes over bottom of baking dish. Layer with beef, 1 cup of the cheese and remaining potatoes.
- Cover with aluminum foil and bake about 30 minutes or until hot. Sprinkle with remaining 1/2 cup cheese. Sprinkle onions around edges of baking dish. Bake uncovered 3 to 4 minutes longer or until cheese is melted and onions are brown.

BARBECUE POTATOES (OVEN OR GRILL)
These potatoes have a ton of flavor, you can even make these on an outdoor grill in a large heavy foil pan covered with a sheet of foil or wrap the potatoes in a sheet of heavy foil, have done that many times in the summer season--- all seasonings may be adjusted to taste.

Steps:
- Set oven to 400 degrees F.
- Mix together all spices with the oil in a large bowl.
- Cut the potatoes in quarters, then place in the bowl; toss to coat with oil/spice mixture.
- Place the potatoes on a lightly greased baking sheet, sprinkle with more salt and pepper if desired.
- Bake for about 40-45 minutes,or until potatoes are fork-tender tossing occasionally.
- Delicious!

- Cook potatoes with 1 teaspoons salt in boiling water to cover, 30-40 minutes or until tender. Cool slightly; peel and slice. Set aside.
- Stir together remaining 1/2 teaspoons salt, soup, milk, barbecue sauce, and onion salt until blended.
- Layer half each of potato slices, barbecue sauce mixture, and cheese in a sprayed 2-quart baking dish. Repeat layers; sprinkle with paprika.
- Bake at 350°F for 45 minutes, or until golden.

- In 10-inch nonstick skillet, cook beef and 1/4 cup of the green onions over medium-high heat, stirring occasionally, until beef is brown; drain well. Stir in barbecue sauce and frozen vegetables. Heat to boiling; reduce heat to low to keep warm.
- Meanwhile, cook 1 potatoes as directed on pouch using water, milk and butter. Stir in remaining green onions; let stand 5 minutes.
- Spoon potatoes onto center of beef mixture, leaving 2 1/2- to 3-inch rim around edge of skillet; sprinkle cheese over potatoes and beef mixture. Cover and let stand about 5 minutes or until cheese is melted. Coarsely crush chips; sprinkle around edge of skillet.

Steps:
- Heat oil in non-stick skillet.
- Add onion, garlic, peppers and green onions, and cook until onion is starting to brown.
- Add ground beef and cook, stirring occasionally until cooked through.
- Add tomatoes and season with salt and pepper.
- Add barbecue sauce and cook until all is well-coated. Remove from heat.
- Preheat oven to 350ºF.
- Spray a large baking pan with cooking spray.
- Arrange alternate layers of potatoes, beef mixture, and cheese, ending with potatoes. (reserve 1/4 cup cheese).
- Cover with foil and bake 40 minutes.
- Uncover and top with remaining cheese.
- Bake, uncovered, until potatoes are cooked through, about 15 minutes more.
- Serve immediately.

- Slice potatoes ¼ inch thick.
- Cut onions in half, then in ¼ inch thick slices.
- Cut squash or zucchini in ¼ inch thick slices.
- Cut pepper in half, remove seeds, and then cut in ¼ inch thick slices.
- Lay two large pieces of aluminum foil on table, set one potato on each.

- Heat a Dutch oven pan over medium-high heat. Season the meat with salt and pepper. Add one tablespoon of oil to the pan and half of the meat, being careful not to crowd the pan. Cook to brown on all sides, about 6-8 minutes. Transfer the meat to a plate. Add another tablespoon of oil and the remaining half of the meat. Cook to brown on all sides and then transfer the meat to the plate.
- Add the remaining tablespoon of oil and the onions. Cook until slightly softened, about 5 minutes. Stir in the garlic and cook for one minute. Sprinkle the flour over the onions and garlic and stir to combine. Cook for 1-2 minutes.
- Add in the beef broth, Worcestershire sauce, and balsamic vinegar, stirring to scrape up any brown bits on the bottom of the pan. Stir in the barbecue sauce. Add the meat back to the pan along with any juices. Add the fresh herbs and stir.

BBQ BEEF STUFFED POTATOES - BUDGET BYTES

- Preheat the oven to 400 degrees. Wash the potatoes well and then dry them off with a clean dish towel. Prick the potatoes several times on all sides with a fork. Rub about a half teaspoon of vegetable oil over the surface of each potato and then sprinkle lightly with salt. Place the potatoes on a baking sheet covered with foil and bake for one hour or until the potatoes are tender all the way through (test the tenderness by squeezing the potato with an oven mitt or clean dish towel to protect you from the heat).

- Once the cheese is melted, drizzle about one tablespoon of BBQ sauce over top of each potato and then sprinkle with green onions. Place of dollop of sour cream on top of each and enjoy!
