APPLE SNACK CAKE
These Apple Snack Cakes will make a great addition to your treats list! They're easy to make and are great for when apple season comes around.

Steps:
- Preheat oven to 350 degrees. Prepare a 9x9 baking pan with non-stick spray or line with foil for easy removal (spray the foil with non-stick spray).
- Sift together the flour, baking powder, salt and ¼ tsp cinnamon in a medium bowl. Set aside.
- In a large bowl, mix together the melted butter, brown sugar and the ¼ cup granulated sugar.
- Add in the egg and vanilla, and then mix until combined.
- Slowly mix in the flour mixture until all combined. Fold in the apples.
- Spread the mixture into your prepared pan.
- In a small bowl, mix together the cinnamon topping.
- Sprinkle over the top of the batter.

- In a large bowl, cream butter and sugar until light and fluffy. Add egg. Combine the flour, baking soda and cinnamon; gradually beat into the creamed mixture. Fold in apples and pecans., Transfer to a greased 9-in. square baking pan. Bake at 350° for 32-38 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

APPLE SNACK CAKE
This apple snack cake is easy to make, moist, light and so delicious. It will go in no time!

Steps:
- Preheat oven to 350F/175C. Line a 9x9in (23x23cm) cake pan with parchment.
- Cream together the butter and sugar until well combined (you can use either a stand or hand mixer). Add the eggs one at a time along with the vanilla and mix in well.
- In a separate bowl, mix together the flour, baking powder, baking soda, salt, cinnamon, ginger and cloves. Add this to the butter mixture - I suggest folding in with a spatula rather than beating (you can add part at a time, if easier). The mixture will be relatively stiff.
- Add the diced apples and dates, mix them through then tip into the lined prepared pan. Smooth the top then bake for approximately 35 minutes until a medium brown color and a skewer inserted in the middle comes out clean.
- You can enjoy the cake warm or cool, but if you want to add frosting it will need to be cooled first.
- If adding frosting, sift the confectioner's sugar then stir in the maple syrup. Mix until smooth. Drizzle or spread over the cake once it has cooled then cut and serve. It will keep approx 3-4 days at cool room temp in a sealed box.

- Preheat oven to 350 degrees.
- Spray a 8" round baking pan with cooking spray.
- Chop up your apples.
- Beat the eggs in a small bowl until fluffy.
- Combine sugar, flour, baking powder and cinnamon in a bowl. Whisk together.
- Combine wet and dry ingredients together.
- Sprinkle 1/2 apples in bottom of pan.
- Pour over batter. It will be thick and you'll have to work it around the pan with a spatula.
- Sprinkle remaining apples on top and sort of press them down into batter.
- Bake for approximately 25 minutes or until golden.

MAPLE APPLE CAKE
Steps:
- For the apples: Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-inch springform pan and sprinkle with some maple sugar to coat the butter.
- Heat a 12-inch cast-iron skillet over medium heat and add the 2 tablespoons butter. Add the apples and maple sugar and stir to combine. Saute until caramelized, but not cooked through, about 5 minutes. Remove from the heat and set aside.
- For the crumble: Mix the cornmeal, flour, oats, light brown sugar, maple sugar, cinnamon and salt in a bowl. Add the diced butter and use a fork to mash the ingredients together until they become coarse crumbs.
- For the cake: To the bowl of a stand mixer fitted with a paddle attachment, add the butter, maple sugar and syrup and whip until light and fluffy. Add the eggs and creme fraiche, mixing on low speed. Add the flour, baking soda, allspice, cinnamon, cloves, nutmeg and salt and stir to combine. Stir in the vanilla extract. Add the batter to the prepared springform pan, topping with the sauteed apples. Gently nestle the apples into the cake batter.
- Put the crumble topping over the apple mixture. Put the springform pan on a baking sheet and bake until cooked through, about 1 hour. Allow to cool slightly, about 15 minutes, before removing from the pan. Slice into wedges and serve.
FRESH APPLE SPICE CAKE
Steps:
- Preheat the oven to 350 degrees F. Grease and flour a 9-by-13-by-2-inch baking pan.
- Place the pecans on a sheet pan and toast them for 5 to 10 minutes, until lightly toasted. Set aside. Combine the rum and raisins in a small bowl, cover with plastic wrap, and microwave for 60 seconds. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the granulated sugar, brown sugar, eggs, vegetable oil, vanilla, and orange zest on medium speed for 3 minutes. Sift the flour, baking powder, salt, cinnamon, nutmeg, ginger, and cloves into a medium bowl. With the mixer on low, slowly add the flour mixture to the wet mixture, just until combined. Drain the raisins, discarding the liquid. With a rubber spatula, fold the raisins, pecans, and apples into the batter. Spread into the prepared pan and smooth the top.
- Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean. Set aside to cool, cut into squares, and serve warm or at room temperature with a scoop of vanilla ice cream and a drizzle of warm caramel sauce.
