1 whole cucumber, washed, topped and tailed
500ml (2 cups) plain yogurt
1 garlic clove, peeled and crushed
5ml (1 tsp) ground cumin
30ml (2 tbsp) fresh mint leaves, finely chopped
Salt and cayenne pepper, to taste

Steps:

  • Grate the cucumber then drain the excess water created in the process.
  • Place the grated cucumber in a large bowl then stir in the yogurt, garlic and cumin.
  • Season with salt and pepper and top with mint leaves.
  • Serve as a starter with pappadums or as a side dish to an Indian meal.

1 large unpeeled English hothouse cucumber, halved, seeded, coarsely grated
2 cups plain whole-milk yogurt
1/4 cup (packed) chopped fresh mint
1 teaspoon ground cumin
1/4 teaspoon plus pinch of cayenne pepper

Steps:

  • Wrap grated cucumber in kitchen towel and squeeze dry. Whisk yogurt, mint, cumin, and 1/4 teaspoon cayenne pepper in medium bowl to blend. Add cucumbers and toss to coat. Season raita to taste with salt and pepper. Cover and refrigerate at least 2 hours. (Can be prepared 1 day ahead. Keep refrigerated.) Sprinkle raita with pinch of cayenne pepper and serve.

One 16-ounce container Greek yogurt
1/2 English cucumber, diced
1/4 cup chopped fresh mint, plus more for garnish
1 teaspoon honey
1/4 teaspoon ground cumin
Zest and juice of half a lemon
Kosher salt and freshly cracked black pepper

Steps:

  • Transfer the yogurt to a large glass mixing bowl. Whisk until smooth, about a minute. Fold in the cucumbers, mint, honey and cumin. Stir until completely incorporated. Finish with the lemon juice and salt and pepper to taste. Cover with plastic and chill until ready for use. Serve garnished with the lemon zest and mint. Can be made ahead of time and refrigerated in an airtight container for up to 3 days.

1/8 teaspoon cayenne
Juice of 1 lemon
Salt and freshly ground black pepper

1/4 cup chopped fresh mint
Pita wedges, for serving

Steps:

  • Slice the cucumber in half. Use a spoon to scrape out the seeds, then grate it onto paper towels. Squeeze the cucumber in the paper towels to remove the excess moisture, then set aside.
  • In a bowl, stir together the yogurt, cumin, coriander, cayenne, lemon juice, salt and pepper. Add the cucumber and stir to combine, then stir in the mint. Taste and adjust the seasoning as you desire.
  • Cover and refrigerate for a couple of hours to allow the flavors to combine. Serve as a dip with pita wedges.

Steps:

  • Peel cucumber and cut lengthways in half. Slice each half finely.
  • Heat a small pan over a low heat and toast cumin seeds until they darken a little and smell fragrant. Allow them to cool, then crush with a rolling pin or pestle and mortar.
  • Beat the yoghurt until smooth, then stir in the cumin and salt.

1 medium cucumber
1 teaspoon cumin seeds
2 cups plain, whole-milk yogurt
1 clove garlic, peeled and minced
2 tablespoons fresh coriander or mint leaves, chopped
cayenne or paprika to garnish

Steps:

  • Peel cucumber. Cut lengthwise into 1/4-inch strips, then into thin slices crosswise. Blot off moisture with paper towels. Toast cumin seeds for a few seconds in a small, heavy frying pan over high heat. In a bowl, stir yogurt until it is smooth. Mix it with the cumin, garlic and coriander or mint leaves. Combine mixture with cucumber slivers, sprinkle with cayenne or paprika, and chill before serving.

85g brown basmati rice
1 tsp ground turmeric
2 tsp ground coriander
seeds from 6 cardamom pods
1 tbsp finely chopped fresh ginger
2 bay leaves
1 red chilli , deseeded and finely chopped
2 tsp reduced-salt vegetable bouillon (wheat free if you're gluten free)
25g creamed coconut , chopped
400g can chickpeas (no need to drain)
200g cauliflower florets , broken into bite-sized pieces
1 red pepper , cut into chunks
1 red onion , cut into thin wedges
1 tbsp rapeseed oil
½ tsp cumin seeds
150ml pot live natural bio yogurt
¼ cucumber , coarsely grated
½ small pack mint , leaves chopped, a few left whole

Steps:

  • Heat oven to 220C/200C fan/gas 7. Put the rice in a sauté pan with the turmeric, coriander, cardamom, ginger, bay leaves and chilli. Pour in 300ml water and add the bouillon and creamed coconut. Bring to the boil, cover the pan and leave to simmer for 15 mins. Add the chickpeas with their liquid (and a little more water if necessary), then cook, covered, for 10 mins more.
  • Meanwhile, toss the cauliflower, red pepper and onion in the oil with the cumin seeds. Spread out on a baking sheet and roast for 20 mins until the vegetables are tender and a little charred around the edges.
  • While the cauliflower and rice cook, make the raita by mixing together the yogurt, cucumber and chopped mint.
  • When the cauliflower and rice are tender (the stock should be absorbed by now), toss the two together, scatter with the mint leaves and serve with the raita on the side.
