Mahogany Broiled Chicken with Smoky Lime Sweet Potatoes and Cilantro Chimichurri image

Provided by Food Network

Categories     main-dish

Time 50m

Yield 4

Number Of Ingredients 18

1 cup chopped cilantro leaves
6 tablespoons extra-virgin olive oil
3 large cloves garlic, minced
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
5 tablespoons dark brown sugar
3 tablespoons Dijon mustard
2 tablespoons bottled hoisin sauce
2 teaspoons balsamic vinegar
1/2 cup plus 1 1/2 teaspoons lime juice, divided
1 1/2 pounds boneless skinless chicken breast halves, cut in 1-inch cubes
2 large sweet potatoes, peeled and cut in 1/2-inch pieces
2 tablespoons unsalted butter
1 teaspoon chopped canned chipotle pepper
1 teaspoon adobo sauce (from canned chipotle)
3/4 teaspoon ground cumin
1/2 teaspoon lime zest
Cilantro sprigs, for garnish

Steps:

  • In a small bowl, mix together chopped cilantro, olive oil, minced garlic, 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper; set aside.
  • In medium bowl, mix together brown sugar, mustard, hoisin sauce and vinegar. Reserve 2/3 of this mixture. To remainder, add 1/2 cup lime juice and stir in chicken; cover and refrigerate.
  • Place sweet potatoes in a heavy saucepan and cover with boiling water. Cook, covered, over medium-high heat until tender, about 15 minutes. Reserve 1/4 cup cooking liquid, then drain potatoes in colander. Return potatoes to reserved cooking water and add butter, chipotle pepper, adobo sauce, remaining 1 1/2 teaspoons lime juice, cumin, lime zest, remaining 1/4 teaspoon salt and remaining 1/8 teaspoon pepper. Mash potatoes.
  • Preheat the broiler. Thread chicken on 8 bamboo skewers that have been soaked in water for 30 minutes. Broil about 6 inches from heat, basting with reserved mahogany sauce until done, about 8 minutes. To serve, divide potatoes among 4 plates; top each with 2 skewers of chicken and drizzle with cilantro chimichurri sauce. Garnish with cilantro sprigs.

MAHOGANY CHICKEN

Mahogany Chicken image

Found this on delish.com. My new favorite roast chicken recipe. It is so delicious and browns up nice and crispy skin at the end of roasting time. So Good! Cooking time is not exact, I use a meat thermometer, and I would let it go to 165 degrees, not 180 as it says in the directions.

Provided by CookingLaura

Categories     Whole Chicken

Time 1h25m

Yield 4 serving(s)

Number Of Ingredients 7

1 (3 1/2 lb) chicken
3/4 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
2 tablespoons dark brown sugar
2 tablespoons balsamic vinegar
2 tablespoons dry vermouth (I use chicken stock)
2 teaspoons oregano or 2 teaspoons rosemary, for garnish

Steps:

  • Preheat oven to 375 degrees F. Remove giblets and neck from chicken; refrigerate for use another day. Rinse chicken and drain well.
  • With chicken breast-side up, lift wings up toward neck, then fold them under back of chicken so they stay in place. With string, tie legs together.
  • Place chicken, breast-side up, on rack in small roasting pan; rub with salt and pepper. Insert meat thermometer into thickest part of thigh, next to body, being careful that pointed end of thermometer does not touch bone.
  • Roast chicken 45 minutes. Meanwhile, prepare glaze: In small bowl, stir brown sugar, balsamic vinegar, and vermouth until sugar dissolves.
  • After chicken has roasted 45 minutes, brush with some glaze. Turn oven control to 400 degrees F and roast chicken 30 minutes longer, brushing with glaze twice more during roasting, until chicken is a deep brown color, thermometer reaches 180 degrees F, and juices run clear when thickest part of thigh is pierced with tip of knife. Place chicken on warm large platter; let stand 15 minutes for easier carving.
  • Meanwhile, add 1/4 cup water to roasting pan; over medium heat, heat to boiling, stirring to loosen brown bits. Remove pan from heat; skim and discard fat. Serve chicken with pan juices. Garnish with fresh herbs.

MAHOGANY CHICKEN

Quick and easy chicken with Asian flavors. My husband saw it in Cook's Country and asked me to try it--we all loved it! To use as a make-ahead meal, portion out the chicken and place in a zip-loc bag. Measure sauce ingredients in a second bag.

Provided by SharleneW

Categories     Chicken Thigh & Leg

Time 45m

Yield 6 serving(s)

Number Of Ingredients 10

1 1/2 lbs chicken breasts (original recipe called for bone-in thighs with skin)
pepper
2 teaspoons vegetable oil
1/2 cup soy sauce
1/4 cup sugar
2 tablespoons sweet sherry or 2 tablespoons white wine
2 teaspoons grated fresh ginger
1 medium garlic clove, minced
1/2 teaspoon cornstarch
2 scallions, sliced thin on diagonal

Steps:

  • Dry chicken thoroughly with paper towels and season with pepper. Heat oil in large nontstick skillet over medium-high heat until shimmering. Cook chicken, skin side down (thighs will fit into pan snugly), until skin is deep brown and crisp, (15 to 20 minutes). Chicken should be moderately brown after 10 minutes. If too browned, reduce heat; if pale, increse heat. Turn chicken over, reduce heat to medium, and cook until second side is brown and meat is thoroughly cooked, about 10 minutes.
  • Meanwhile, whisk soy sauce, sugar, mirin, ginger, garlic, and cornstarch together in small bow.
  • Transfer chicken to plate and pour off fat. Add soy mixture to skillet and return to medium heat. Return chicken to skillet, turn to coat with sauce, and simmer, skin side up, until sauce is thick and glossy, about 2 minutes.
  • Transfer chicken to serving platter and sprinkle with scallions. Pour remaining sauce into small bowl and pass separately.

ROSEMARY CHICKEN WITH SWEET POTATOES

Rosemary Chicken with Sweet Potatoes image

Chicken and sweet potatoes unite with the delicious taste of rosemary in this easy, one-skillet meal. Because we use parcooked and unseasoned sweet potatoes, the cooking time is much shorter--making this recipe perfect for weeknight cooking.

Provided by EatingWell Test Kitchen

Categories     Healthy Rosemary Recipes

Time 35m

Number Of Ingredients 8

4 teaspoons canola or olive oil
3 cloves garlic, minced
¾ teaspoon kosher salt
½ teaspoon snipped fresh rosemary
½ teaspoon freshly ground black pepper
1 20-ounce package refrigerated diced sweet potatoes, such as Simply Potatoes®
2 (8 ounce) skinless, boneless chicken breast halves, halved crosswise
1 lemon, thinly sliced

Steps:

  • In a 12-inch nonstick skillet heat 3 teaspoons of the oil over medium. Stir in garlic, 1/2 teaspoon of the salt, 1/4 teaspoon of the rosemary and 1/4 teaspoon of the pepper. Add potatoes; toss to coat. Cook, covered, 5 minutes (do not stir).
  • Push potatoes to one side of skillet. Add the remaining 1 teaspoon oil to other side of skillet. Arrange chicken in skillet alongside potatoes. Cook, uncovered, 8 minutes.
  • Stir potatoes and turn chicken. Sprinkle chicken with the remaining 1/4 teaspoon salt, rosemary, and pepper. Top with lemon slices. Cook, covered, 8 to 10 minutes more or until chicken is done (165 degrees F) and potatoes are brown. (If needed, remove potatoes as they are done and continue cooking chicken until done.) If desired, sprinkle with additional rosemary.

SLOW-COOKER HONEY-ORANGE CHICKEN DRUMSTICKS

Slow-Cooker Honey-Orange Chicken Drumsticks image

This slow-cooker chicken recipe makes a perfect alternative to standard tomato-based barbecued chicken. Both kids and adults will devour these drumsticks, doused in a honey-sweetened sauce spiked with orange, ginger and garlic.

Provided by Carolyn Malcoun

Categories     Healthy Super Bowl Slow-Cooker & Crockpot Recipes

Time 2h

Number Of Ingredients 11

⅓ cup honey
2 teaspoons orange zest
2 tablespoons orange juice
3 tablespoons reduced-sodium soy sauce or tamari

12 medium chicken drumsticks (3-3 1/2 pounds), skin removed (see Tip)
2 tablespoons chopped fresh cilantro
2 teaspoons toasted sesame seeds

Steps:

  • Combine honey, orange zest, orange juice, soy sauce (or tamari), garlic, ginger, vinegar and crushed red pepper in a small bowl.
  • Coat a 5- to 6-quart slow cooker with cooking spray. Add drumsticks, pour in the sauce and mix to coat. Cover and cook until an instant-read thermometer registers 165 degrees F when inserted into the thickest part of the meat without touching bone, 2 to 3 hours on High or 4 hours on Low.
  • Transfer the drumsticks to a bowl. Very carefully pour the liquid from the slow cooker into a medium skillet. Bring to a boil over high heat. Boil until reduced and syrupy, 10 to 15 minutes. Pour the sauce over the drumsticks and stir to coat. Serve sprinkled with cilantro and sesame seeds.

Number Of Ingredients 21

5 tablespoons dark brown sugar
3 tablespoons Dijon mustard
2 tablespoons hoisin sauce
2 teaspoons balsamic vinegar
1/2 cup fresh lime juice
1 1/2 lbs boneless skinless chicken breasts (cut in 1-inch cubes)
1 cup fresh cilantro (chopped)
6 tablespoons olive oil
3 large garlic cloves (minced)
1/4 teaspoon salt
1/8 teaspoon pepper
smoky lime sweet potato
2 large sweet potatoes (peeled)
2 tablespoons butter
1 1/2 teaspoons lime juice ((I used 1 Tablespoon)
1 teaspoon chipotle chile in adobo (chopped)
1 teaspoon adobo sauce (from can)
3/4 teaspoon ground cumin
1/2 teaspoon ground lemon zest
1/4 teaspoon salt

  • Mahogany Marinade: Mix sugar, mustard, hoisin sauce, vinegar, and lime juice in a medium bowl. Remove 6 tablespoons for later use. Place cubed chicken in a Ziploc bag and add the remaining marinade; refrigerate for 20-30 minutes. (If making Smoky Lime Sweet Potatoes, start potatoes at this point; chicken will be ready to skewer and cook when potatoes are completed.).
  • Thread chicken on skewers; discard marinade. Grill skewers, basting with reserved marinade near end of cooking time.
  • Chimichurri Sauce: Combine cilantro and garlic in food processor. Pulse until chopped. Add oil in a thin stream with food processor running. Pulse in salt and pepper. Set aside.
  • To serve: Remove chicken from skewers; drizzle with Chimichurri Sauce. Sweet potatoes can also be drizzled with sauce.
  • Potatoes:.
  • Cut sweet potatoes into 1/2 inch chunks. Put in a medium saucepan; add water to cover. Bring to a boil, reduce heat, cover and cook 15 minutes or until tender. Reserve 1/4 cup cooking water. Drain potatoes, return to pan, and mash with reserved water. (I only used 2 tablespoons of reserved water.).
  • Add remaining ingredients and mash into sweet potatoes.

EASY MAHOGANY CHICKEN WINGS

Easy Mahogany Chicken Wings image

These wings are a Big Hit, Everyone gobbles them up. They are so easy to make and are perfect for BBQ's and Potlucks. They are called mahogany chicken wings, because after cooking, they turn a deep mahogany color from the caramelized marinade coating. Don't shy away from the spices, they add flavor and not too much heat. Enjoy!

Provided by Stars-n-Atoms

Categories     Chicken

Time 1h50m

Yield 30 wings, 10-12 serving(s)

Number Of Ingredients 13

30 chicken wings
1 1/2 cups soy sauce
1/2 cup water
1/2 cup Chinese white rice vinegar
1/4 cup hoisin sauce
1 tablespoon sesame oil
1/2 cup pineapple juice (1 small can)
1/4 cup jalapeno jelly
1 cup brown sugar
2 tablespoons red chili-garlic sauce
2 tablespoons crushed red pepper flakes
2 tablespoons crushed garlic
1 tablespoon powdered ginger

Steps:

  • Prep chicken wings. Rinse in cold water, pat dry with paper towel, and trim tips. If you desire split wings into drum and wing, to extend portions.
  • Mix all ingredients, except the chicken, together to prepare marinade.
  • Add chicken to marinade and stir until evenly coated.
  • Let chicken marinade in mixture at least one hour but for best flavor marinade over night or up to 48 hours. Place in refrigerator while marinading.
  • Place chicken in roasting pan spooning a little of the marinade over the wings, there should only be about 1/8 of an inch of liquid in the bottom of the pan. Not too much liquid or the wings will fall apart.
  • Cook in 375°F oven for 1 hour.
  • flip wings and cook an additional 30 minutes.
  • Let cool a bit before eating.
  • *You can do this recipe in advance and when done cooking put in a crock pot to be re-heated later. Great for BBQ's and Pot-Lucks.
