- Trim Brussels sprout stems; using a paring knife, cut an "X" in the bottom of each. In a large saucepan, bring 1/2 in. of water to a boil. Add sprouts; cook, covered, 8-10 minutes or until crisp-tender. Drain., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon; drain on paper towels., Cook and stir onion in bacon drippings until tender. Stir in remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, until liquid is almost evaporated. Add Brussels sprouts; stir in bacon.

BRAISED PICNIC HAM WITH BRUSSELS SPROUTS

- Trim any visible fat from the top of the ham, but do not remove the rind. Place the ham in a large cast-iron Dutch oven and cover it with cold water. Bring the water to a boil, reduce the heat to low, and boil the ham gently for 25 minutes.
- Remove the ham from the water, discard the water, and place the ham back in the Dutch oven with the oil and onions. Brown the mixture over medium to high heat for about 5 to 8 minutes. Then add the cider, bring it to a boil, cover, reduce the heat, and boil gently for 1 hour.
- Add the brussels sprouts, soy sauce and pepper flakes to the pan, cover, and cook over low heat for another 30 minutes. Uncover, and if there is more than 1 1/2 cups of liquid left in the pan, boil the liquid until it is reduced to this amount.
- Serve slices of the meat with a few spoonfuls of the surrounding juice and some of the brussels sprouts.

BRAISED CHILE-MARMALADE DUCK LEGS WITH BRUSSELS SPROUTS
Simmer duck legs in a chile-infused, maramalade-based braise until tender, then reduce the sauce to a sticky-rich lacquer to glaze over the crisp skin.

- Place duck legs on a rimmed baking sheet; season all over with 2 tsp. salt. Chill, uncovered, at least 8 hours and up to 2 days.
- Place rack in middle of oven; preheat to 325°F. Heat oil in a large ovenproof high-sided skillet over medium. Arrange duck legs in pan, skin side down, and cook until light golden brown, about 5 minutes. Turn over and cook until browned on the other side, about 5 minutes. Remove pan from heat and transfer duck legs to a 2-qt. baking dish (any size or shape will work as long as the legs don't overlap more than slightly). Tuck orange wedges around duck. Pour duck fat from pan into a heatproof container and set aside. Reserve skillet.
- Set reserved skillet over medium heat and pour in wine, scraping up any browned bits from bottom with a wooden spoon. Add marmalade and stir until melted and combined. Add chiles, stock, 1 Tbsp. rosemary, and 1½ tsp. salt. Cook just until mixture begins to steam, about 2 minutes. Remove from heat. Pour half of marmalade mixture (about 1½ cups) over duck legs, then pour the rest into a heatproof measuring glass and set aside. Reserve skillet. Cover baking dish with foil or an ovenproof lid and bake 1 hour 15 minutes.
- Meanwhile, combine brussels sprouts, 2 Tbsp. reserved duck fat (if you don't have enough, make up the difference with oil), remaining 1 Tbsp. rosemary, remaining ½ tsp. salt, and 1 Tbsp. water in reserved skillet. Toss sprouts to coat.
- When duck had cooked 1 hour 15 minutes, slide brussels sprouts onto rack alongside duck and uncover baking dish. Roast brussels sprouts and duck legs 30 minutes.
- Increase oven temperature to 425°F and shake skillet with brussels sprouts to turn them. Continue to roast until duck skin is deep golden brown and meat is very tender and brussels sprouts are charred in spots and tender, about 15 minutes longer.
- Transfer duck legs to a platter. Using a slotted spoon, transfer brussels sprouts and oranges (they're delicious and we highly recommend eating them, peel and all, but you can discard if you prefer) to platter, arranging around duck legs.
- Combine braising liquid from duck and remaining reserved marmalade mixture in skillet and bring to a boil over high heat (be careful; the handle will be hot!), whisking occasionally, until sauce is glossy and reduced to about 1¼ cups, about 10 minutes.
- Spoon some sauce over duck and brussels sprouts. Pour remaining sauce into a small bowl and serve alongside.
MAHI MAHI WITH BRAISED BRUSSELS SPROUTS
Makes for a beautiful (and healthy) presentation served on a platter...family-style. Recipe from "For Cod & Country" by Chef Barton Seaver who is a sustainable seafood advocate. Now a few words from Chef Barton: "I often pair the acidic bite of feta cheese with fish. In this recipe the cheese is mellowed out a bit by sweet butter and the meaty taste of the sprouts. This butter would also go great with shrimp and salmon."

- Preheat the oven to 300°F.
- For the brussels sprouts, melt 2 tablespoons of the butter over high heat in a large saute pan. Add the onion and garlic and cook for 1 minute. Add the brussels sprouts and toss to combine. Continue to cook over high heat until the sprouts begin to brown, about 5 minutes. Add the water and season generously with salt. Cover the pan and reduce the heat to medium.
- Gently sear the mahi mahi fillets, skin side down, in a small, dry ovenproof saute pan over medium heat until they just begin to color, about 5 minutes. Transfer the pan to the oven and bake until the fish is an even color throughout, about 8 minutes.
- For the flavored butter, mix the feta cheese with the remaining 4 tablespoons butter and the parsley. Mash with a fork to combine, breaking up the feta as much as possible. Set aside.
- When the mahi mahi is done, uncover the sprouts and turn the heat up to high. When the liquid remaining in the pan has reduced enough to just barely coat the sprouts, remove from the heat and toss with freshly ground black pepper.
- Arrange the fillets and brussels sprouts on a platter and put a dollop of the feta butter on each of the mahi mahi fillets. Serve family style.

- put a large pot of water to boil the chestnuts.
- cut a x in the shell of the chestnuts(but not the meat of the chestnuts or course).
- boil the chestnuts for 5 minuites.scoop them out of the water with a strainer or a slotted spoon.
- whil the chestnuts are still hot carefully pull off the outer shells.peel off as much of the shell as you can.if some of the nuts will not give up on there shells reheat then try again.
- trim the bottoms of the brussels sprouts.pull away any loose or damaged leaves.
- put 2 quarts of water and the salt in a large saucepan & bring to a boil.
- add the brussels sprouts & boil for 4-5 minuites or until they can be peirced with a fork.
- drain the sprouts & rinse in cold water to halt the cooking proccess.
- put the peeled chestnuts in a large saute pan with the broth and simmer for 5 minuites.don't let the broth boil too hard,this can cause the chestnuts to fall apart.
- when the chestnuts are tender,add the brussels sprouts & cook uncovered fore another 5 minuites.
- serve warm.

- Place in a saucepan and cover with water,bring to a boil.
- Cook for 8-10 minutes or until crisp tender.
