1 pound ground beef
1/2 cup chopped onion
3 cans (14-1/2 ounces each) beef broth
1 package (16 ounces) frozen mixed vegetables
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes, undrained
1 can (6 ounces) tomato paste
3 teaspoons Italian seasoning
1 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
1/4 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large saucepan, cook beef and onion over medium heat until meat is no longer pink; drain. , Stir in the remaining ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Drain pasta and add to the pan; heat through.

3 tablespoons olive oil
1 leek, sliced
2 carrots, chopped
1 zucchini, thinly sliced
4 ounces green beans, cut into 1 inch pieces
2 stalks celery, thinly sliced
1 ½ quarts vegetable stock
1 pound chopped tomatoes
1 tablespoon chopped fresh thyme
1 (15 ounce) can cannellini beans, with liquid
¼ cup elbow macaroni
salt and ground black pepper to taste

Steps:

  • Heat olive oil in a large saucepan, over medium heat. Add leek, carrots, zucchini, green beans and celery. Cover, and reduce heat to low. Cook for 15 minutes, shaking the pan occasionally.
  • Stir in the stock, tomatoes and thyme. Bring to a boil, then replace the lid, and reduce heat to low; simmer gently for 30 minutes.
  • Stir in the cannellini beans with liquid and pasta. Simmer for an additional 10 minutes, or until pasta is al dente. Season with salt and pepper to taste before serving.

This is a variation on a recipe I found in Quick Cooking magazine, March/April 1998 issue. I've subsituted spaghetti sauce for the original italian seasoned diced tomatoes and sometimes use italian sausage instead of ground beef. Both versions are tasty.

Steps:

  • Brown the ground beef or sausage; drain well. Place in a large dutch oven.

Steps:

  • HEAT oil in large saucepan or Dutch oven over medium heat. Add celery, onion and garlic. Cook and stir until crisp-tender.
  • ADD cabbage and carrots. Cook and stir until crisp-tender. Stir in tomatoes with juice, tomato juice and broth. Bring to a boil. Reduce heat to low.
  • MIX in the three kinds of beans, parsley, oregano and basil. Simmer 30 minutes or until vegetables are tender and flavors have blended.
  • STIR in cooked pasta and Parmesan cheese just before serving. Season with salt and pepper to taste. Serve with grated Parmesan cheese on the side.

1 cup canned cannellini beans, drained and rinsed
1 package (10 ounces) frozen chopped spinach, thawed

Steps:

  • First, peel and thinly slice the carrots. Peel the potatoes and cut them into a 1/2-inch dice. In a large saucepan place the broth, carrots, and potatoes. Bring to a boil over medium heat, and then reduce heat to low, cover, and simmer until the potatoes are tender, about 10 minutes. Then add the beans, spinach, and pasta to the soup. 3/4 cup sugar
1 tablespoon cornstarch, plus
2 teaspoons cornstarch
1/2 teaspoon grated fresh lemon rind
1/3 cup water
1/3 cup fresh lemon juice
2 drops yellow food coloring (optional)
1/2 cup thawed whipped topping
2 tablespoons sweetened flaked coconut, toasted
2 cups sweetened flaked coconut
1/2 cup sugar
1/4 cup all-purpose flour, plus
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
2 egg whites
cooking spray

Steps:

  • Place egg in small bowl and set aside.
  • Combine sugar, cornstarch and lemon rind in a saucepan; stir well.
  • Slowly add water& lemon juice stirring with a whisk until blended.
  • Bring to a boil over medium heat and stirring constantly cook one minute.
  • Stir one quarter of hot lemon mixture into the beaten egg, add this to remaining lemon mixture, stir constantly.
  • Cook over medium heat 1 minute or until thickened, stirring constantly.
  • Pour mixture into a bowl; stir in coloring, if desired.
  • Place plastic wrap on surface and chill.
  • Spoon 1 tablespoon plus 1 teaspoon lemon filling into each Macaroon Tart Shell.
  • Top with 2 teaspoons whipped topping and sprinkle with 1/2 teaspoon toasted coconut.
  • MACAROON TART SHELLS:.
  • Combine all ingredients (except spray) in a bowl; stir well.
  • Divide evenly among 12 muffin cups coated with cooking spray.
  • Press mixture into bottom and up sides of cups.
  • Bake at 400°F for 15 minutes or until edges are browned.
  • Cool 2 minutes on a wire rack.
  • Remove from pan and cool completely on wire rack.

2 tablespoons sweet butter
2 tablespoons cooking oil
1/2 cup cajun spices, blackening
12 jumbo shrimp
1 1/2 cups coarse ground grits
1/2 cup heavy cream
1/2 cup whole milk
1/2 cup water
1/2 cup butter
4 ounces cream cheese
salt and pepper
1 cup sweet white corn (cooked)
1 cup heavy cream
1 ounce white wine (Chablis works well)
6 ounces sweet butter, cold and cut into 1-inch cubes
salt and pepper

Steps:

  • Shrimp: In a large saute pan, heat butter and oil over mediumhigh heat. Liberally coat shrimp with blackening spice. When pan is hot, add shrimp carefully. Saute until cooked through, about 4 minutes.
  • Grits: Bring water, milk, heavy cream and butter to boil and lower heat to medium-low. Slowly sprinkle in the grits, while stirring with a rubber spatula or wooden spoon. Stir continuously so grits do not stick to bottom of pot. Continue stirring until all liquid is absorbed, about 10 to 15 minutes. (If still dry and not soft, add milk.) To finish, stir in cream cheese and salt and pepper to taste.
  • Corn Sauce: Bring corn, cream and wine to a boil in a saucepan and simmer for 3 minutes. Remove from heat. Carefully pour into a heat-proof blender and pure' for a minute or until liquefied. With the blender still running, add the cold butter cubes 1 by 1 until totally incorporated. Strain well and add salt and pepper to taste.
  • To serve, plate grits in center of plate and fan out shrimp. Sauce the plate with the corn sauce. Serves 2 as a main dish, 4 as a starter.
