Steps:
- Preheat oven to 325 degrees F. Line a large baking sheet with parchment paper or a silpat.
- Pull out 2 medium bowls, one for dry ingredients, one for wet.
- In one bowl, whisk together the oats, flour, baking powder, cinnamon, and salt.
- Melt the butter in the other bowl. You don't have to melt it all the way, if there are a couple lumps it's okay. Let cool slightly.
- Whisk in the vanilla, then the egg. Whisk in the honey.
- Add the wet ingredients to the dry ingredients and use a wooden spoon to stir until it has just come together (don't overdo it).
- Save out about half of the chocolate chips. Use a sharp knife to roughly chop the remaining chocolate, then fold it into the dough.
- Refrigerate the dough for about 30 minutes, or freeze for about 15 minutes.
- Use your hands to shape the dough into roughly 15 cookies (or 12 if you eat a lot of dough like me...)
- Place on the prepared baking sheet about 2 inches apart.
- Bake in the preheated oven for about 12-13 minutes, or until they have just started to brown on the edges.
- Once you remove them from the oven, immediately press the remaining chocolate chips into the tops of the cookies.
- Let cool on the pan for a few minutes before removing to a cooling rack.
- Drink with lots of milk!

KIDS CAN MAKE: OATMEAL COOKIE SMOOTHIE
This all-in-one milk-and-cookies smoothie makes a nice change of pace for a summer breakfast or afternoon snack. For little kids: Let them help press the buttons on the blender. (Be sure to let it run for a full minute before you add the ice so the oatmeal-and-raisin mixture gets as smooth as possible.) For big kids: Let them measure the ingredients-it's the perfect time to teach them the difference between wet and dry ingredient measuring cups.

Steps:
- Preheat the oven to 325 degrees and line your baking sheets with parchment paper.
- Add the butter and the brown sugar to the bowl of your stand mixer and beat on medium speed until the mixture is light and fluffy, around 5 minutes.
- Add the egg and vanilla and beat for another minute.
- Add the flour, sprinkle in the baking soda, baking powder, and salt. Mix until combined. Add the oats and combine.
- Fold in the dried cherries, chocolate, chopped pecans, or other mix-ins if desired.
- The mixture will be a little tacky, but you should be able to roll it into a ball in your hands without making a total mess. If it is too sticky, add 1 tablespoon of flour at a time until the mixture can be handled.
- Roll the dough into 1 to 1.5 inch balls (about 1 large tablespoon of dough), using your hands and place the balls on the prepared cookie sheet 2 inches apart. Bake for 10 to 14 minutes until the edges begin to brown and the centers are set.
- Transfer to a wire rack and let them cool completely.

OATMEAL SCHOOL COOKIES
Comes from "Laurel's Kitchen" cookbook. I've been told I should market these. It's very versatile...I add dried cranberries and different kinds of nuts as well as substituting flax seed, (which is an excellent source of omega-3 fatty acids) for some of the wheat germ. I feel pretty good about giving these to my kids and loved ones and I hope if you make them that you'll enjoy the same feedback as I do. mmm mmm

- Cream together the butter and sugar with electric beaters.
- Add the egg, vanilla, and salt and beat well.

- 1. Preheat oven to 350 degrees Fahrenheit. Line a sheet pan with parchment paper (optional, for easier clean up); set aside. Make sure your butter is at a very soft room temperature and your maple syrup isn't cold from the fridge, or it will be hard to combine them. If needed, put both in the microwave on low power in 5 second increments until butter is very soft (but not melted) and maple syrup is no longer cold.
- 2. Put butter and maple syrup into a mixing bowl, and use a wooden spoon (or an electric mixer) to fully mix them together. Add egg and vanilla, and use a whisk to fully incorporate the eggs into the butter mixture. Add all remaining ingredients to the bowl and stir to combine.
- 3. Scoop dough onto the prepared pan using a large ice cream scoop or a 1/4 cup dry measuring cup. You should get 12 evenly sized cookies this way. Bake for 10-13 minutes, or until cookies are golden on the outside and look slightly underdone in the middle still. Remove from oven and let cool on the pan. Leftovers keep well in an airtight container at room temperature for up to 5 days.

- Preheat the oven to 375°F with two racks dividing the oven into thirds. Line 2 baking sheets with parchment paper.
- In a large mixing bowl place the butter, granulated sugar, brown sugar, and vanilla. Break the egg into a small bowl and add it into the large bowl. This way, any stray bits of shell can be easily removed from the small bowl, avoiding "crunchy" cookies. With the mixer on medium speed, beat until the mixture is smooth and well blended.
- With the mixer off, add the flour, cinnamon, baking powder, baking soda, and salt. With the mixer on medium speed, beat until all the ingredients are well combined. Turn the mixer off.
- Drain the raisins and pat them dry on a paper towel. Add the oats, the raisins, and the sunflower seeds to the dough. Beat just until all the ingredients are combined.
